Claims (15)
- 固形化されたナッツミルクと、乳酸連鎖球菌(Lactococcus lactis)ラクティス(lactis)亜種と、乳酸連鎖球菌(Lactococcus lactis)クレモリス(cremoris)亜種とを含む、リコッタチーズ代替品。
- トランスグルタミナーゼをさらに含む、請求項1に記載のリコッタチーズ代替品。
- 前記ナッツミルクが、アーモンドミルクとマカダミアナッツミルクとの混合物を含む、請求項1または2に記載のリコッタチーズ代替品。
- 1または複数の、非動物供給源から単離および精製されたタンパク質を含むコアセルベートを含む、乳成分非含有チーズ代替品。
- 前記1または複数の単離および精製されたタンパク質が、植物タンパク質であり、好ましくは前記1または複数の単離および精製された植物タンパク質が、種子貯蔵タンパク質、ルピナスタンパク質、マメ科植物タンパク質(例えばエンドウマメビシリンまたはエンドウマメレグミン)、ヒヨコマメタンパク質、およびレンズマメタンパク質からなる群から選択される、請求項4に記載の乳成分非含有チーズ代替品。
- 前記植物タンパク質が、

からなる群から選択される、請求項5に記載の乳成分非含有チーズ代替品。 - 前記植物タンパク質が、リボソームタンパク質、アクチン、ヘキソキナーゼ、乳酸デヒドロゲナーゼ、フルクトース二リン酸アルドラーゼ、ホスホフルクトキナーゼ、トリオースリン酸イソメラーゼ、ホスホグリセリン酸キナーゼ、ホスホグリセリン酸ムターゼ、エノラーゼ、ピルビン酸キナーゼ、プロテアーゼ、リパーゼ、アミラーゼ、糖タンパク質、レクチン、ムチン、グリセルアルデヒド−3−リン酸デヒドロゲナーゼ、ピルビン酸デカルボキシラーゼ、アクチン、翻訳伸長因子、ヒストン、リブロース−1,5−ビスリン酸カルボキシラーゼ/オキシゲナーゼ(ルビスコ)、リブロース−1,5−ビスリン酸カルボキシラーゼ/オキシゲナーゼアクチバーゼ(ルビスコアクチバーゼ)、コラーゲン、カフィリン、アベニン、デヒドリン、ヒドロフィリン、および天然でフォールディングされていないタンパク質からなる群から選択される、請求項5に記載の乳成分非含有チーズ代替品。

好ましくはリパーゼ、プロテアーゼ、およびアミラーゼからなる群から選択される1または複数の精製された酵素;
好ましくはクエン酸ナトリウム、ピロリン酸三ナトリウム、ヘキサメタリン酸ナトリウム、リン酸二ナトリウム、およびこれらの任意の組合せからなる群から選択される溶融塩;
好ましくはFe 2+ 、Mg 2+ 、Cu 2+ 、およびCa 2+ からなる群から選択される二価カチオン;
好ましくはメチオニン、ロイシン、イソロイシン、バリン、プロリン、およびアラニンからなる群から選択される単離されたアミノ酸;または
食物生成物、酵母エキス、味噌、糖蜜、ヌクレオ塩基、有機酸、ビタミン、果実抽出物、ココナッツミルク、および麦芽抽出物からなる群から選択される他の添加剤
をさらに含む、前記乳成分非含有チーズ代替品。 - (a)好ましくは、トウモロコシ油、オリーブ油、ダイズ油、ラッカセイ油、クルミ油、アーモンド油、ゴマ油、綿実油、キャノーラ油、サフラワー油、ヒマワリ油、フラックスシード油、パーム油、パームカーネル油、パームフルーツ油、ココナッツ油、ババス油、シアバター、マンゴーバター、ココアバター、コムギ胚芽油、およびヌカ油からなる群から選択される1もしくは複数の植物由来の脂質、
(b)藻類、真菌、もしくは細菌に由来する、1もしくは複数の油、または
(c)1もしくは複数の遊離脂肪酸
を含む、請求項4から9のいずれか一項に記載の乳成分非含有チーズ代替品。 - 架橋酵素をさらに含む、請求項4から10のいずれか一項に記載の乳成分非含有チーズ代替品であって、前記架橋酵素が、好ましくは、トランスグルタミナーゼまたはリシルオキシダーゼである前記乳成分非含有チーズ代替品。
- 前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、1)クリーミー、ミルキー、バタリー、フルーティー、チージー、遊離脂肪酸、サルファリー、ファティー、サワー、フローラル、またはマッシュルームのフレーバーノートまたはアロマノートの増大;2)ナッティー、プランティー、ビーニー、ソイ、グリーン、ベジタブル、ダーティー、またはサワーなフレーバーノートまたはアロマノートの低減;3)クリーミーテクスチャーの改良;4)溶融特徴の改善;および5)伸張能の増大
のうちの1または複数を示す、請求項4から11のいずれか一項に記載の乳成分非含有チーズ代替品。 - (a)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、アセトイン、ジアセチル、2,3−ヘキサンジオン、もしくは5−ヒドロキシ−4−オクタノンのうちの1もしくは複数の増大、またはベンズアルデヒド、1−ヘキサノール、1−ヘキサナール、フラン、ベンズアルデヒド、もしくは2−メチル−2−プロパノール、ピラジン、もしくはヘプタナールのうちの1もしくは複数の減少を示す、
(b)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、メチオナールおよび/またはジメチルトリスルフィドの増大を示す、
(c)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、ブタン酸、プロパン酸、ヘキサン酸、オクタン酸、またはデカン酸のうちの1または複数の増大を示す、
(d)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、2−ヘプタノン、2−ウンデカノン、2−ノナノン、2−ブタノン、2−メチルプロパン酸、2−メチルブタン酸、または3−メチルブタン酸のうちの1または複数の増大を示す、
(e)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、ブタン酸エチルまたはヘキサン酸メチルのうちの1または複数の増大を示す、
(f)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、(i)オクタン酸エチルおよび/もしくは2−エチル−1−ヘキサノールの増大、または(ii)2−メチルブタナールおよび/もしくは3−メチルブタナールの増大を示す、
(g)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸もしくは他の添加剤、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、酢酸の増大を示す、
(h)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸、酵母エキス、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、ガンマ−オクタラクトン、デルタ−オクタラクトン、ガンマ−ノナラクトン、ブチロラクトン、またはメチルイソブチルケトンのうちの1または複数の増大を示す、または
(i)前記1もしくは複数の微生物、糖、二価カチオン、単離された酵素、単離されたアミノ酸、酵母エキス、植物由来の脂質、またはこれらの組合せを欠く、対応するチーズ代替品と比べて、ノナノールまたは1−オクテン−3−オールのうちの1または複数の増大を示す、
請求項8から12のいずれか一項に記載の乳成分非含有チーズ代替品。 - コアセルベートを含む乳成分非含有チーズ代替品を作製する方法であって、
a)1または複数の、非動物供給源から単離および精製されたタンパク質の溶液を、3.5〜5.5の間のpHへと酸性化させるステップであり、前記溶液が、100mM以下の塩を含むステップと、
b)前記コアセルベートを、前記溶液から単離するステップと、
c)前記コアセルベートを、任意選択で高圧加工にかけるステップと
を含む方法。 - 前記単離および精製されたタンパク質が、植物タンパク質であり、好ましくは前記植物タンパク質が、種子貯蔵タンパク質、ヒヨコマメタンパク質、レンズマメタンパク質、マメ科植物タンパク質(例えばエンドウマメビシリンまたはエンドウマメレグミン)、またはルピナスタンパク質である、請求項14に記載の方法。
