Abstract

Se proporciona un nuevo producto de queso de origen vegetal que comprende una prolamina vegetal combinada con una grasa y un componente estructural en agua, para producir un producto de queso que comprende una red no covalente de prolamina. El producto de queso exhibe una o más características tales como: que se estira en una cantidad de aproximadamente 100 % en una dirección lineal desde una posición de reposo o de referencia sin romperse a una temperatura en el intervalo de 40-80 °C, y/o un perfil de fusión que imita el queso. También se proporciona un método para elaborar el producto de queso.
