Description
[分野]
本発明は、風味(flavor)及び芳香(aroma)のような品質(qualities)を高めた飲料及び飲料の製造方法に関する。
多くの飲料は、より簡単な形態(more convenient form)で再現(duplicate)することが困難な特有の味覚(taste)及び芳香を有している。このような飲料の一例は、コーヒーである。レギュラーコーヒー(regular coffee)では、予めコーヒーポットの中で水を沸騰させておく。そして、粉砕した焙煎コーヒー豆を、沸騰した水(一般的な量は、沸騰した水100mlあたり粉砕した焙煎コーヒー豆10gである。)に直接接触させて沸騰した水で煮沸して抽出(extraction)を行うか、またはパーコレータ(percolator)等を使用して同様に抽出する。得られたエキス(extract)には、カフェイン(caffeine)、タンニン酸(tannic acid)、単糖類(saccharides)、油脂(fats)、プロテイン(proteins)及び種々の芳香成分が含まれている。また得られたエキスは、コーヒーに特有の香り(fragrance)並びに苦味(bitter taste)、渋味(astringent taste)及び酸味(acid taste)を含む特有の複雑な風味を有している。
可溶性コーヒー製品に関する本発明のいくつかの実施の形態は、ドライコーヒー抽出成分(dry coffee extract component)と、微粉砕コーヒー成分(pulverized coffee component)とを有し、微粉砕コーヒー成分は抽出されたものではなく、コーヒーエキス(the dry coffee extract)を乾燥してなるドライコーヒー抽出成分に、微粉砕コーヒー成分が添加される。
以下の説明は、当業者が本発明の一以上の実施の形態を実施し、かつ使用できるようにするものである。本明細書に記載する本質的な特徴は、ここに開示した内容の精神及び範囲から逸脱することなく、以下に記載する以外の実施の形態及び用途にも適用することができる。従って本発明は、以下に示す特定の実施態様に限定することを意図しておらず、本明細書に開示または示唆される本質および特徴に合致する最も広い範囲を包含するものである。
Claims (7)
- ドライコーヒー抽出成分と、
直径で350ミクロン以下の平均粒径、または直径で350ミクロン以下の粒径中央値を有する微粉砕コーヒー成分とを有し、
前記微粉砕コーヒー成分は、抽出されたものではなく、
乾燥する前のコーヒーエキスに微粉砕コーヒー成分を添加した後乾燥し、次いで該乾燥物に、さらに微粉砕コーヒー成分を添加したものである、可溶性コーヒー製品。 - ドライコーヒー抽出成分と、
分離コーヒー芳香成分と、
直径で350ミクロン以下の平均粒径、または直径で350ミクロン以下の粒径中央値を有する微粉砕コーヒー成分とを有し、
前記微粉砕コーヒー成分は、抽出されたものではなく、
乾燥する前のコーヒーエキスに微粉砕コーヒー成分を添加した後乾燥し、次いで該乾燥物に、さらに微粉砕コーヒーを添加したものであり、
前記分離コーヒー芳香成分は、前記コーヒーエキスに添加されているものである、可溶性コーヒー製品。 - 前記ドライコーヒー抽出成分は、可溶性コーヒー製品の70%乃至90%を構成しており、前記微粉砕コーヒー成分は、可溶性コーヒー製品の10%乃至30%を構成している請求項1または2に記載の可溶性コーヒー製品。
- 前記ドライコーヒー抽出成分は、可溶性コーヒー製品の70%乃至99.9%を構成しており、前記微粉砕コーヒー成分は、可溶性コーヒー製品の0.1%乃至30%を構成している請求項1または2に記載の可溶性コーヒー製品。
- コーヒーオイル、非コーヒーオイル、非コーヒー芳香及びコーヒー芳香からなる群から選択された添加物をさらに有している請求項1または2に記載の可溶性コーヒー製品。
- コーヒー成分、栄養補給剤、風味成分、ハーブ成分からなる群から選択された少なくとも一つをさらに有している請求項1または2に記載の可溶性コーヒー製品。
- コーヒーエキス、濃縮コーヒー、ドライコーヒー、コーヒーオイル、コーヒー芳香、蒸留物、風味粉末、風味オイル、スパイス、粉砕ココア豆または微粉砕ココア豆、粉砕バニラ豆または微粉砕バニラ豆、ビタミン、酸化防止剤、栄養補助食品、食物繊維、オメガ3オイル、オメガ6オイル、オメガ9オイル、フラボノイド、リコピン、セレン、βカロチン、リスベラトロール、野菜エキス、未焙煎コーヒーのドライエキス、未焙煎コーヒーのウェットエキス及びハーブエキスからなる群から選択された少なくとも一つをさらに有している請求項1または2に記載の可溶性コーヒー製品。
