本明細書において「ソリュブルコーヒー」とは、飲用時に水、牛乳等の液体で還元した後、即座に飲用可能なインスタント製品をいい、ソリュブルコーヒー中の固形分量は通常95質量%以上、好ましくは97質量%以上である。なお、かかる固形分量の上限は特に限定されず、100質量%であってもよい。ここで、本明細書において「固形分量」とは、試料を105℃の電気恒温乾燥機で3時間乾燥して揮発物質を除いた残分の質量をいう。
本明細書において「乾燥コーヒー抽出物」とは、コーヒー抽出物を乾燥したものいう。乾燥コーヒー抽出物は、固形分量が通常95質量%以上、好ましくは97質量%以上であり、上限は特に限定されず、100質量%であってもよい。
コーヒー抽出物は、当該コーヒー抽出物100g当たり焙煎コーヒー豆を生豆換算で、好ましくは1g以上、より好ましくは2.5g以上、更に好ましくは5g以上使用しているものである。ここで、生豆換算値は、焙煎コーヒー豆1gが生コーヒー豆1.3gに相当するものとする(改訂新版・ソフトドリンクス、監修:全国清涼飲料工業会、発行:光琳、平成元年12月25日発行 421頁記載)。
抽出方法及び抽出条件は特に限定されず、公知の方法及び条件で行うことが可能であるが、多段階抽出法を採用することもできる。ここで、本明細書において「多段階抽出法」とは、1以上の焙煎コーヒー豆を、複数の独立した抽出塔それぞれに投入し、1段階目の抽出塔に抽出溶媒を供給して該抽出塔からコーヒー抽出物を排出させ、次いで、1段階目の抽出塔から排出されたコーヒー抽出物を2段階目の抽出塔に供給し該抽出塔からコーヒー抽出物を排出させるという操作を繰り返し行い、最終段階の抽出塔から排出されたコーヒー抽出物を回収する抽出法をいう。抽出は常圧下でも、加圧下でも構わない。
活性炭の使用量は、酸味の質改善の観点から、コーヒー抽出物のBrix(%)に対して、好ましくは2~50質量%、より好ましくは5~45質量%、更に好ましくは10~40質量%である。ここで、本明細書において「Brix」とは、糖用屈折計を利用して測定した値であり、20℃のショ糖水溶液の質量百分率に相当する値である。また、20℃におけるショ糖水溶液の屈折率を基準として、試料の屈折率より算出される可溶性固形分濃度を意味する。具体的には後掲の実施例に記載の方法により測定することができる。また、活性炭との接触温度は、通常0~100℃、好ましくは10~80℃、更に好ましくは12~60℃である。
また、所望の平均粒子径の焙煎コーヒー豆微粉を得るために、焙煎コーヒー豆を粉砕又は研磨後、篩分けして所望の平均粒子径を有するものを採取することもできる。なお、分級操作には、例えば、Tyler製(JIS Z 8801-1)の篩を用いることができる。
コーヒー豆の豆種及び産地としては、前述と同様のものが挙げられ、豆種、産地、焙煎度等の異なるコーヒー豆を1種又は2種以上使用することもできる。
本発明のソリュブルコーヒー中の(C)セルロースの含有量は、より一層の鼻抜けの香り増強の観点から、0.001質量%以上が好ましく、0.005質量%以上がより好ましく、0.01質量%以上が更に好ましく、0.03質量%以上がより更に好ましく、0.04質量%以上がより更に好ましく、0.05質量%以上がより更に好ましく、またすっきり感の増強、舌への残留感及び透明性の改善の観点から、0.30質量%以下が好ましく、0.27質量%以下がより好ましく、0.21質量%以下が更に好ましく、0.16質量%以下がより更に好ましく、0.14質量%以下がより更に好ましい。(C)セルロースの含有量の範囲としては、本発明のソリュブルコーヒー中に、好ましくは0.001~0.30質量%、より好ましくは0.005~0.30質量%、更に好ましくは0.01~0.27質量%、より更に好ましくは0.03~0.21質量%、より更に好ましくは0.04~0.16質量%、より更に好ましくは0.05~0.14質量%である。
(A)リンゴ酸は、単一の光学活性体でも、光学異性体の混合物であってもよく、原料に由来するものでも、新たに添加されたものでもよい。
本発明のソリュブルコーヒー中の(E)カフェインの含有量は、鼻抜けの香り増強、酸味の質改善の観点から、5質量%以下が好ましく、4質量%以下がより好ましく、3質量%以下が更に好ましく、2.5質量%以下がより更に好ましい。また、(E)カフェインの含有量は、適度な苦味付与の観点から、0.01質量%以上が好ましく、0.1質量%以上がより好ましく、0.5質量%以上が更に好ましく、1質量%以上がより更に好ましい。かかる(E)カフェインの含有量の範囲としては、ソリュブルコーヒー中に、好ましくは0.01~5質量%、より好ましくは0.1~4質量%、更に好ましくは0.5~3質量%、より更に好ましくは1~2.5質量%である。

250mL遠沈管に0.5~10gの試料を採取した後、0.05%の塩化ナトリウム水溶液を85mL加えた。混合液を沸騰水浴中で30分間加熱処理を行い、その後、すばやく冷却した。冷却液に、パンクレアチン溶液を5mL添加した後、pH6.5、40℃の環境下で16時間インキュベートした。インキュベート液を遠心分離し、固形物をろ紙(ADVANTEC101)を用いて回収した。回収した残さに5%硫酸水溶液50mLを加えて、沸騰水浴中にて、2.5時間分解するために放置した。その後、ガラスフィルター(1G3)を用いて、本液を吸引濾過した後、残さをアセトン、及びジエチルエーテルを用いて洗浄した。本洗浄済固形物に72%硫酸30mLを加え、5℃、冷蔵庫にて24時間以上放置した後、吸引濾過を行い、ろ液中のグルコース量を、フェノール硫酸法を用いて測定することにより、セルロース量を定量した。
ソリュブルコーヒー2gに85℃の純水180mLを注ぎ、攪拌した後、バイアルに分注して分析した。
分析機器はHPLCを使用した。装置の構成ユニットの型番は次の通りである。

9種のクロロゲン酸類
・モノカフェオイルキナ酸:5.3分、8.8分、11.6分の計3点
・モノフェルラキナ酸 :13.0分、19.9分、21.0分の計3点
・ジカフェオイルキナ酸 :36.6分、37.4分、44.2分の計3点。
ここで求めた9種のクロロゲン酸類の面積値から5-カフェオイルキナ酸を標準物質とし、質量%を求めた。
なお、カフェインの分析は、UV-VIS検出器設定波長:270nm 、カフェインを標準物質とした以外はクロロゲン酸類と同様に実施した。カフェインの保持時間は18.9分。
ソリュブルコーヒー2gに85℃の純水180mLを注ぎ、攪拌した後、25℃になるまで冷却した。この試料の粒度分布をレーザー回折式粒度分布測定装置(SALD-2100、島津製作所株式会社製)を用いて測定した。
焙煎コーヒー豆微粉1.0gに85℃の純粋180mLを注ぎ、攪拌した後、25℃になるまで冷却した。次いで、この試料をレーザー回折式粒度分布測定装置(SALD-2100、島津製作所株式会社製)を用いて、粒度分布を25℃にて測定し、各々の体積比から平均粒子径(d50)を算出した。
ソリュブルコーヒー3.4gを85℃の純水180mLに注ぎ、攪拌した後、25℃になるまで冷却した。次いで、この試料を、ガラスセル(光路長10mm、横35mm、縦40mm)に入れ、HAZEMETER(HM-150、株式会社村上色彩技術研究所製)を用いて、HAZE値を25℃にて測定した。
試料を、色差計((株)日本電色社製 スペクトロフォトメーター SE2000)を用いて測定した。
20℃における試料のBrixを、糖度計(Atago RX-5000、Atago社製)を用いて測定した。
ソリュブルコーヒー2gを85℃の純水180mLに注ぎ、攪拌した後、コーヒー飲料を調製した。その後、コーヒー飲料を専門パネル5名が試飲し、鼻抜けの香り、酸味の質、すっきり感、舌への残留感について下記の基準にて評価し、その後協議により最終スコアを決定した。

L26の焙煎コーヒー豆(ロブスタ種、産地:ベトナム)を粉砕し、円筒状抽出搭(内径160mm×高さ660mm)6本に、1搭当たりの充填量が4.2kgとなるように充填した。次いで、110℃の熱水を1段目の抽出搭の下部から上部へ送液した。次いで、1段目の抽出搭上部から排出されたコーヒー抽出液を、2段目の抽出搭下部から上部へ送液した。この操作を3段目以降の抽出塔についても繰り返し行い、6段目の抽出搭の上部から排出されたコーヒー抽出液を、速やかに冷却するとともに回収した。抽出は全て0.3MPaの加圧下で行った。得られた抽出液をロータリーエバポレーター(N-1100V型、東京理科器械(株)社製)を用い、0.004MPa、50℃にて減圧加熱濃縮し、Brix10%のコーヒー濃縮組成物を得た。続いて、円筒状のカラム(内径72mm×高さ100mm)に活性炭(白鷺WH2C LSS、日本エンバイロケミカルズ製)108gを加え、80℃、10分間殺菌した後に、上記Brix10%のコーヒー濃縮組成物3.6kgを、25℃、流量69.1mL/minにて送液し、更にイオン交換水を25℃、流量69.1mL/minにて送液し、カラム出口より最終的な採液量として4kgの活性炭処理液を得た。得られた処理液を、スプレードライヤーを用いて乾燥し、乾燥コーヒー抽出物を得た。
さらに、L16の焙煎コーヒー豆(アラビカ種、産地:ブラジル)をワンダーブレンダー(WB-I型、大阪ケミカル株式会社製)にて常温粉砕し、粉砕物を篩(Tyler20、60、115、170、400メッシュ)を用いて分級し、400メッシュパス品を回収して平均粒子径を19μmに調整した焙煎コーヒー豆微粉を得た。
乾燥コーヒー抽出物3.4gに対して、10質量%の焙煎コーヒー豆微粉(0.34g)を添加し、混合してソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を表1に示す。
乾燥コーヒー抽出物3.4gに対して、更に1.7mgのD,L-リンゴ酸を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を表1に示す。

L26の焙煎コーヒー豆の代わりに、L30の焙煎コーヒー豆(ロブスタ種、産地:ベトナム)を使用し、Brix10%のコーヒー濃縮組成物3.6kgに対する活性炭の使用量を72gに変更したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を表1に示す。
実施例1のコーヒー濃縮組成物に対し活性炭処理を行わずにスプレードライヤーを用いて乾燥し、乾燥コーヒー抽出物を得た。得られた乾燥コーヒー抽出物について分析及び官能評価を行った。その結果を表1に示す。
実施例1と同様の操作により活性炭処理液を得、次いでスプレードライヤーを用いて乾燥し、ソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を表1に示す。

実施例25のコーヒー濃縮組成物に対し活性炭処理を行わずにスプレードライヤーを用いて乾燥し、乾燥コーヒー抽出物を得た。得られた乾燥コーヒー抽出物について分析及び官能評価を行った。その結果を表1に示す。
焙煎コーヒー豆微粉の添加量を2質量%(0.068g)に変更したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表2に示す。
焙煎コーヒー豆微粉の添加量を5質量%(0.17g)に変更したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表2に示す。
焙煎コーヒー豆微粉の添加量を20質量%(0.68g)に変更したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表2に示す。
焙煎コーヒー豆微粉の添加量を30質量%(1.02g)に変更したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表2に示す。
焙煎コーヒー豆微粉の添加量を50質量%(1.7g)に変更したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表2に示す。
焙煎コーヒー豆微粉の添加量を2質量%(0.068g)に変更したこと以外は、実施例23と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例23の結果とともに表2に示す。
焙煎コーヒー豆微粉の添加量を20質量%(0.68g)に変更したこと以外は、実施例23と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例23の結果とともに表2に示す。
篩(Tyler20、60、115、170、400メッシュ)を用いて分級し、170メッシュを通過し、400メッシュ上に残った焙煎コーヒー豆微粉を回収して平均粒子径を65μmに調整した焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを調製した。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表3に示す。
篩(Tyler20、60、115、170メッシュ)を用いて分級し、115メッシュを通過し、170メッシュ上に残った焙煎コーヒー豆微粉を回収して平均粒子径を107μmに調整した焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表3に示す。
篩(Tyler20、60、115メッシュ)を用いて分級し、60メッシュを通過し、115メッシュ上に残った焙煎コーヒー豆微粉を回収して平均粒子径を202μmに調整した焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表3に示す。
篩(Tyler20、60メッシュ)を用いて分級し、20メッシュを通過し、60メッシュ上に残った焙煎コーヒー豆微粉を回収して平均粒子径を550μmに調整した焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表3に示す。
L16の焙煎コーヒー豆(アラビカ種、産地:ブラジル)を、液体窒素を用いて凍結粉砕し、400メッシュパス品を回収して得られた平均粒子径19μmの焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表4に示す。
L19の焙煎コーヒー豆(アラビカ種、産地:ブラジル)を、液体窒素を用いて凍結粉砕し、400メッシュパス品を回収して得られた平均粒子径19μmの焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表4に示す。
L26の焙煎コーヒー豆(アラビカ種、産地:ブラジル)を用い、液体窒素を用いて凍結粉砕し、400メッシュパス品を回収して得られた平均粒子径19μmの焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表4に示す。
L16の焙煎コーヒー豆(アラビカ種、産地:コロンビア)を用いて得られた平均粒子径19μmの焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表5に示す。
L16の焙煎コーヒー豆(ロブスタ種、産地:インドネシア)を用いて得られた平均粒子径19μmの焙煎コーヒー豆微粉を添加したこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表5に示す。
活性炭処理液を、フリーズドライヤーにより乾燥して得られた乾燥コーヒー抽出物を用いたこと以外は、実施例1と同様の操作によりソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表6に示す。
実施例1と同様の操作により活性炭処理液と、平均粒子径19μmの焙煎コーヒー豆微粉を調製し、活性炭処理液の固形分3.4gに対して、10質量%の焙煎コーヒー豆微粉(0.34g)を添加して混合し、スプレードライヤーにて乾燥しソリュブルコーヒー3.74gを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表6に示す。
ドリップ抽出器(内径73mm、容積11L)に活性炭100g(クラレコールGW)充填し、その後、85℃の温水で10分間、活性炭を殺菌した後、L26の粉砕焙煎コーヒー豆(ロブスタ種、産地:ベトナム)400gを活性炭上に投入した。次いで底湯0.250Lをはった後、焙煎コーヒー豆の上部からシャワーより85℃の温水を1.02L供給し、10分間保持を行った。保持後に85℃の温水をシャワーより供給及び引抜(流速:12.5g/10秒)を行った。採液量が2.4Lに達したときに採液を止め、本採液を抽出液とした。得られた抽出液を、スプレードライヤーを用いて乾燥し、乾燥コーヒー抽出物を得た。
さらに、L16の焙煎コーヒー豆(アラビカ種、産地:ブラジル)をワンダーブレンダー(WB-I型、大阪ケミカル株式会社製)にて常温粉砕し、粉砕物を篩(Tyler20、60、115、170、400メッシュ)を用いて分級し、400メッシュパス品を回収して平均粒子径を19μmに調整した焙煎コーヒー豆微粉を得た。
乾燥コーヒー抽出物3.4gに対して、10質量%の焙煎コーヒー豆微粉(0.34g)を添加し、混合してソリュブルコーヒーを得た。得られたソリュブルコーヒーについて分析及び官能評価を行った。その結果を実施例1の結果とともに表6に示す。
Claims (13)
- 乾燥コーヒー抽出物と、
焙煎コーヒー豆微粉
を含み、
(A)リンゴ酸と(B)酢酸との質量比[(B)/(A)]が2.9以下である、ソリュブルコーヒー。 - ソリュブルコーヒー2gを85℃の純水180mLで希釈した希釈液についてレーザー回析式粒度分布装置により測定した体積基準の粒度分布において、粒子径10μm以上の粒子の割合が95体積%以上である、請求項1記載のソリュブルコーヒー。
- 更に(C)セルロースを0.001質量%以上含有する、請求項1又は2記載のソリュブルコーヒー。
- 焙煎コーヒー豆微粉の平均粒子径が550μm以下である、請求項1~3のいずれか1項に記載のソリュブルコーヒー。
- 焙煎コーヒー豆微粉の焙煎度がL10~40である、請求項1~4のいずれか1項に記載のソリュブルコーヒー。
- (D)クロロゲン酸類の含有量が5~20質量%である、請求項1~5のいずれか1項に記載のソリュブルコーヒー。
- 焙煎コーヒー豆微粉の割合が、乾燥コーヒー抽出物に対して、0.5~150質量%である、請求項1~6のいずれか1項に記載のソリュブルコーヒー。
- ソリュブルコーヒー3.4gを85℃の純水180mLで希釈した水希釈液のHAZE値が85以下である、請求項1~7のいずれか1項に記載のソリュブルコーヒー。
- (E)カフェインを5質量%以下含有する、請求項1~8のいずれか1項に記載のソリュブルコーヒー。
- (E)カフェインを含み、該(E)カフェインと(D)クロロゲン酸類との質量比[(E)/(D)]が0.48以下である、請求項1~9のいずれか1項に記載のソリュブルコーヒー。
- 乾燥コーヒー抽出物と、焙煎コーヒー豆微粉とを配合し、(A)リンゴ酸と(B)酢酸との質量比[(B)/(A)]を2.9以下に調整する、ソリュブルコーヒーの酸味の改善方法。
- ソリュブルコーヒー2gを85℃の純水180mLで希釈した希釈液についてレーザー回析式粒度分布装置により測定した体積基準の粒度分布において、粒子径10μm以上の粒子の割合を95体積%以上に調整する、請求項11記載のソリュブルコーヒーの酸味の改善方法。
- 更に(C)セルロースの含有量を0.001質量%以上に調整する、請求項11又は12記載のソリュブルコーヒーの酸味の改善方法。
