Abstract
Procedimiento para producir leche UHT, en donde dicho procedimiento comprende mezclar una lípido aciltransferasa y leche o una fracción de la misma a una temperatura y durante un tiempo de incubación que es eficaz para garantizar que hay al menos un 5% de actividad transferasa medida por la cantidad molar de éster de colesterol que se forma por la acción de la aciltransferasa a partir de los fosfolípidos o de los triacilglicéridos de la leche al colesterol, respecto a la cantidad de colesterol originalmente disponible, calculado con la ecuación siguiente: Actividad transferasa >= [éster de colesterol (t) en mol/L - éster de colesterol (0) en mol/L] x 100 / colesterol (0) en mol/L donde: Éster de colesterol (t) >= la cantidad de éster de colesterol a tiempo t Éster de colesterol (0) >= la cantidad de éster de colesterol a tiempo 0 Colesterol (0) >= la cantidad de colesterol en la leche a tiempo 0, y tratar la leche tratada con la enzima mediante tratamiento a ultraalta temperatura para producir leche UHT.

El conjunto de aminoácidos 3 es idéntico al conjunto 2, pero se refiere a la secuencia codificante de Aeromonas salmonicida (SEQ ID No. 4), es decir, a los números de los restos de aminoácido se les ha añadido 18 en el conjunto 5 3 para reflejar la diferencia entre la numeración de aminoácidos de la proteína madura (SEQ ID No. 34) en comparación con la proteína que incluye una secuencia señal (SEQ ID No. 3).
Las proteínas maduras de Aeromonas salmonicida GDSX (SEQ ID No. 4) y Aeromonas hydrophila GDSX (SEQ IDNo. 34) difieren en cinco aminoácidos. Éstos son Thr3Ser, Gln182Lys, Glu309Ala, Ser310Asn y Gly318-, en donde el resto de A. salmonicida se recoge primero y el resto de A. hydrophila aparece detrás. La proteína de A. hydrophila
10 tiene sólo 317 aminoácidos de longitud y carece del resto en la posición 318. El GDSX de Aeromonas salmonicida tiene una actividad considerablemente mayor sobre los lípidos polares, tales como sustratos galactolipídicos, que sobre la proteína de Aeromonas hydrophila. Se llevó a cabo un escaneo de sitio para las cinco posiciones de aminoácido.

La reducción del contenido de PE de la leche en respuesta al tratamiento enzimático con KLM3 y así pues la formación de PE parcialmente hidrolizada (Lyso-PE) corresponde a una mayor estabilidad de la emulsión y a una menor tendencia a formar nata con el tiempo. Además, la reducción de PE de la leche corresponde a la formación de ésteres de colesterol y a una reducción del colesterol libre como se muestra en la figura 77, y a una mejor estabilidad de la emulsión.
Prueba del triángulo
Las diferencias organolépticas entre el control y la leche UHT o pasteurizada tratada con la enzima se evaluaron mediante la prueba del triángulo. Los resultados de las pruebas se recogen en la tabla que viene a continuación:
