Abstract

L'invention concerne un procédé de préparation de gamma-pyrones. On prépare des gamma-pyrones, en particulier le maltol(2méthyl-3-hydroxy-4H-pyran-4-one) et l'éthylmaltol (2-éthyl-3hydroxy-4H-pyran-4-one) en hydrolysant certains pyrannes intermédiaires préparés en faisant réagir des alcools furfuryliques, en particulier le 1-(2-furyl)-2-éthanol, en solution aqueuse avec un oxydant halogéné, par exemple, le chlore, le brome, le chlorure de brome, l'acide hypochloreux, l'acide hypobromeux et leurs mélanges. Certains intermédiaires du type 4-halo-dihydropyranne sont nouveaux ainsi que leur préparation. Le maltol et l'éthylmaltol ainsi obtenus sont utilisés en particulier pour rehausser la saveur et l'arôme de divers produits alimentaires, et comme ingrédients dans des parfums.
