Abstract

L'invention concerne la synthèse de la 2-hydroxy-3-méthylcyclopent-2-ène-1-one. La synthèse de ce composé est effectuée par modification de la condensation acyloïne d'esters d'acide 2-méthylglutarique avec introduction d'oxygène de manière bien déterminée dans le milieu réactionneL La 2-hydroxy-3-méthylcyclopent-2-ène-1-one, couramment appelée lactone d'érable, est utilisée comme arôme.
