[0003] 茶叶具有悠久的历史文化底蕴,中国茶文化源远流长。随着我国经济的飞速发展,人民生活水平的提高,人们在注重茶叶香气、滋味、色泽的同时,也更加关注茶叶的外形。优雅的外形衬托出茶叶的优异品质,也使饮茶者在观赏过程中得到美的享受。本公司开发的松针状的润思仙针茶,保留了传统祁红茶细嫩纤秀的特点,在此基础上通过独特工艺,使茶条挺直秀美,金毫显露。加上改传统干燥方法烘干为炒干,茶叶色泽乌润光亮,香气高透持久。
发明内容
[0004] 本发明的目的是提供一种祁红茶的生产工艺,提高祁红茶的品质。
[0005] 为达到上述目的,本发明采用的技术方案如下:
一种祁红茶的生产工艺,包括以下步骤:
(1)鲜叶采摘
茶叶鲜叶采摘标准:一芽一叶或一芽二叶初展,然后将茶叶鲜叶进行分级处理,去除肥茶杂质;
(2)萎凋
将采摘分级后的茶叶鲜叶先后进行自然萎凋和冷冻凋萎,自然凋萎时间为5-6h,萎凋温度为28-30°C,萎凋相对湿度控制在70-80%,冷冻萎凋为在-20- — 15°C环境条件下冷冻
2-3h后,再进行2-3h融冻;反复二次;
(3)揉捻
在揉捻前将组合酶溶液均匀地喷雾加入萎凋叶中,然后进行揉捻,揉捻2-3次,每次揉捻后都要进行解块筛分,筛网配3孔、4孔,叶温不超过30°C,要求条索紧,成条率90%以上;
(4)发酵
将揉捻后的茶叶进行发酵,发酵时添加1-2%的微生物多酚氧化酶,保温保湿,发酵叶温为30-40°C,摊叶厚度为10-20 cm,发酵时间从揉捻算起,春茶为3_5小时,夏秋茶为2 —3小时,对光透视,叶色呈黄红色或新铜色,青气消失,发出浓厚的花香或水果香时为发酵适度; (5)整形干燥
将发酵叶整形干燥,锅温80-90°C时,锅面涂抹少许乌柏油,投入发酵叶,先采用抖散翻炒手势,当水分散发部分后,锅温降至50-60°C时,开始做形,双掌合搓,边理条,边搓条,再抓条,用力由轻到重,当发酵叶达五、六成干时,提高锅温至70-80°C,用手满握茶叶,在锅内反复拉条、磨擦,将条索拉直、搓紧、搓圆,当茶叶达到细紧、浑圆、光滑,干度达九成以上时起锅,历时30-40分钟成祁红毛茶。

将步骤(4)所得的祁红毛茶通过圆筛、抖筛、飘筛,分清大小、长短、粗细、轻重,去头脚茶,剔除杂质,分级归堆,再用50-60°C的烘温烘至足干,摊凉、包装,得成品。
[0007] 所述的组合酶溶液为含有0. 5-1%木瓜蛋白酶、0. 5-1%纤维素酶、1-2%单宁酶、
3-4%果胶酶的水溶液。
[0008] 所述的祁红茶的形状为松针状。
[0009] 本发明的有益效果如下:
(1)本发明中凋萎采用了先自然凋萎后冷冻凋萎,增加了细胞膜透性,促进多酚类物质的酶促氧化,尤其在揉捻后,冷冻凋萎工艺的PPO活性迅速上升,有利于多酚类物质迅速氧化,从而缩短了发酵时间,并减少了茶黄素的消耗,提高了红茶品质,凋萎过程中向凋萎叶喷洒组合酶酶液,可增加红茶水浸出物、茶色素、氨基酸等品质成分含量,外形色泽明显改盡.

(2)本发明发酵时添加微生物多酚氧化酶,明显提高红茶中的TF和TR,茶汤的色泽和香气也显著改善;
(3)本发明是采用茶叶干燥工序中加入茶叶整形过程,利用茶叶发酵叶叶质较软,在干燥过程中可塑性强的特点,通过做形,将茶叶制成直条松针形,提高了茶叶产品的外形美感;
(4)本发明方法生产出的祁红茶由于不采用常见的烘干方法而采用炒制方法,产品色泽乌润光亮,香气高透,感官质量好。
具体实施方式

一种祁红茶的生产工艺,包括以下步骤:
(1)鲜叶采摘
茶叶鲜叶采摘标准:一芽一叶或一芽二叶初展,然后将茶叶鲜叶进行分级处理,去除肥茶杂质;
(2)萎凋
将采摘分级后的茶叶鲜叶先后进行自然萎凋和冷冻凋萎,自然凋萎时间为5h,萎凋温度为28°C,萎凋相对湿度控制在80%,冷冻萎凋为在_18°C环境条件下冷冻2h后,再进行3h融冻;反复二次;
(3)揉捻
在揉捻前将组合酶溶液均匀地喷雾加入萎凋叶中,然后进行揉捻,揉捻3次,每次揉捻后都要进行解块筛分,筛网配3孔、4孔,叶温不超过30°C,要求条索紧,成条率90%以上;(4)发酵
将揉捻后的茶叶进行发酵,发酵时添加1. 5%的微生物多酚氧化酶,保温保湿,发酵叶温为35°C,摊叶厚度为12 cm,发酵时间从揉捻算起,春茶为4小时,夏秋茶为3小时,对光透视,叶色呈黄红色或新铜色,青气消失,发出浓厚的花香或水果香时为发酵适度;
(5)整形干燥
将发酵叶整形干燥,锅温85°C时,锅面涂抹少许乌柏油,投入发酵叶,先采用抖散翻炒手势,当水分散发部分后,锅温降至50°C时,开始做形,双掌合搓,边理条,边搓条,再抓条,用力由轻到重,当发酵叶达五、六成干时,提高锅温至70°C,用手满握茶叶,在锅内反复拉条、磨擦,将条索拉直、搓紧、搓圆,当茶叶达到细紧、浑圆、光滑,干度达九成以上时起锅,历时35分钟成祁红毛茶。

3.根据权利要求I所述的祁红茶的生产工艺,其特征在于,所述的祁红茶的形状为松针状。
