Abstract

[0002] 红茶是世界茶叶消费的主要茶类,因其浓醇鲜爽的品质风格广受消费者的喜爱;红茶是一种珍贵的天然饮料,又有很好的美容保健功效,经科学分析和时间证明,红茶含有较高的氨基酸、维生素、矿物质、茶多酚和生物碱,有多种营养和药效成分,具有清心明目、杀菌消炎、减肥美容、延缓衰老、防癌症、消血脂、降低胆固醇、减少心血管疾病及糖尿病等功效;红茶起源于中国,中国红茶种类较多,产地较广;传统的红茶加工工艺为:萎凋、揉捻、发酵、干燥,由于很多工序还是采用人工控制,加工出来的红茶,香味不够纯正、口感不佳、质量不稳定;近年来,随着生活水平的提高,消费者对红茶香气品质的要求也越来越多样化,受国际红茶消费潮流的影响,具有花香、味道醇厚的红茶产品也受到越来越多消费者的喜爱;但,目前在红茶市场上带花香的红茶产品不多,制作工艺也各不相同,花香红茶质量参差不齐。

[0003] 本发明所要解决的问题是提供一种能加工出带有茶花清香、味道醇正的红茶的加工方法。
[0004] 为了解决上述技术问题,本发明所采用的技术方案是:其所述加工的步骤如下:
1)在入秋,选择小开面的鲜叶和在茶树上开的新鲜茶花,于每天早上6点30分到中午12点钟之间进行采摘;
2)在鲜叶和茶花采摘回来后,将鲜叶和茶花放入萎凋槽内,鲜叶和茶花摊放的厚度为10-15厘米,萎凋槽内设定温度为30°C _38°C热风进行萎凋,萎凋时间为3_4小时,每I小时翻叶一次;
3)将萎凋叶和萎凋花放入揉捻机内进行揉捻,揉捻机以50转/分速度将萎凋叶和萎凋花进行揉捻,揉捻过程是先轻柔4分钟,加压3分钟,减压3分钟,再松揉4分钟,重复进行,当茶叶局部泛红或呈淡黄绿色且茶汁外溢不成滴流时立刻终止揉捻;

6)将烘干好的叶和花放入提香机进行提香,提香时间为55分钟-60分钟,提香温度为140°C -150°C ;从提香机内取出冷却,冷却时间为30分钟;再放入提香机内提香,提香时间为50分钟,提香温度为130°C -140°C ;从提香机内再取出冷却,冷却时间为20分钟;第三次进提香机提香,提香时间为10分钟,提香温度为120°C _130°C,即完成整个茶花红茶的制作过程。

实施例1:
1)在入秋,选择小开面的鲜叶和在茶树上开的新鲜茶花,于每天早上6点30分到中午12点钟之间进行米摘;
2)在鲜叶和茶花采摘回来后,将鲜叶和茶花以6:4的比例放入萎凋槽内,鲜叶和茶花摊放的厚度为10厘米,萎凋槽内设定温度为30°C _38°C热风进行萎凋,萎凋时间为3小时,每I小时翻叶一次;
3)将萎凋叶和萎凋花放入揉捻机内进行揉捻,揉捻机以50转/分速度将萎凋叶叶和萎凋花进行揉捻,揉捻过程是先轻柔4分钟,加压3分钟,减压3分钟,再松揉4分钟,重复进行,当茶叶局部泛红或呈淡黄绿色且茶汁外溢不成滴流时立刻终止揉捻;
4)将揉捻叶和揉捻花解块后松散放入发酵室内进行发酵,发酵的温度为22°C,相对湿度为90%以上,发酵时间为3小时;当发酵叶成紫红色,立刻停止发酵;

Claims (2)
