発酵調味料組成物の原料は、牛乳由来の全乳、乳清または豆乳であり、好ましくは牛乳由来の乳清または豆乳である。
乳清または豆乳液の発酵に際しては、乳酸菌による発酵と酵母に拠る発酵との順は、適宜とし得るが、好ましい実施態様の一つにおいては、まず乳酸菌による発酵が先に行われる。嫌気性の乳酸菌による発酵と、後述するように通気しながら行う酵母による発酵とは、この順で順次行うことにより、例えば乳酸菌によりpH低下しても酵母は酸性に強いため生育することができる等、それぞれの菌に対して好適な条件を与えることができる。また、それにより、発酵工程全体が短時間で終了できる。さらに、酵母由来の香気成分を十分に活かすことができる。

得られた乳酸菌・酵母発酵物は、保存安定性を高める目的で食塩を添加してもよい。食塩の添加量は、特に限定されるものではないが、水分活性を充分に下げるため、乳酸菌・酵母発酵液に対して、例えば10%以上、好ましくは15%以上、より好ましくは18%以上となるように添加することができる。さらに、得られた乳酸菌・酵母発酵物は、乳清または豆乳由来の不溶性の固形分や乳酸菌菌体、および酵母の菌体を含んでいるので、清澄性が求められる商品に使用したい場合は、清澄化処理を行い、これらの不溶性成分や菌体の除去をおこなってもよい。清澄化の手段は、同様の目的で食品の製造分野で用いられる種々の手段を適用することができる。例えば、珪藻土やパーライトを濾過助剤としたフィルタープレス濾過、または精密濾過(MF:Micro filtration)が挙げられる。
このようにして、原料の乳清または豆乳から、乳酸菌・酵母発酵物が得られる。
乳酸菌・酵母発酵物は、乳酸菌発酵および酵母発酵を経て得られたものから乳清または豆乳由来の不溶性の固形分や乳酸菌菌体、および酵母の菌体を除いた液状のものとしては、Brixは、乳清を原料とするときは9~13%、好ましくは10~12%、豆乳を原料とする場合は、5~9%、好ましくは6~8%であり得る。
得られた乳酸菌・酵母発酵物は、発酵調味料組成物の有効成分とすることができる。発酵調味料組成物は、乳酸菌・酵母発酵物そのものでもよく、有効成分が目的の効果を発揮しうる限り、他の成分を配合することができる。他の成分は、食品として許容される種々の添加剤、であり得る。この例には、酸化防止剤(抗酸化剤)、香料、調味料、甘味料、着色料、増粘安定剤、発色剤、漂白剤、防かび剤、ガムベース、苦味料等、酵素、光沢剤、酸味料、乳化剤、強化剤、製造用剤、賦形剤、結合剤、緊張化剤(等張化剤)、緩衝剤、溶解補助剤、防腐剤、安定化剤、凝固剤等である。発酵調味料組成物中の有効成分の量は、例えば1~100%であり、10~80%とすることができ、20~60%としてもよい。

<素材感改良>
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、食品の素材感改良のために用いることができる。素材感とは、食品に含まれる具材が、具材特有の味および/または食感(テクスチャ)を鮮明に感じられることをいう。食品には、種々の具材が含まれるが、具材は、加熱調理の際に互いに調和し、こなれ、食品全体としての一体感が増す。これは、調和のとれた味やまろやかさとして好ましく感じる一方で、加熱調理された食品を冷却し、低温で保存すると、一体感やこなれ感が意図しない程度にまで増す。各素材に特有の味や食感が大きく失われ、喫食時には口の中で各素材を判別しがたくなる。本発明者らの検討によると、乳酸菌・酵母発酵物の添加により、加熱調理後、冷却され、冷蔵または冷凍で保存される食品においても、従来よりも具材の素材感を維持させることができる。したがって、本発明の一態様は、得られた乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する、食品の素材感の改良剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、食材となる畜肉または魚肉(それらを原料とする加工品を含む。魚肉は魚介類の肉を含む。これらを総称して「畜肉等」ということもある。)を軟化させるために用いることができる。したがって、本発明の一態様は、得られた乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する畜肉等の軟化剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物はさらに、豆乳(それを原料とする加工品を含む。)の青臭味を抑制するためにも用いることができる。したがって、本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する、豆乳の青臭味のマスキング剤である。本発明の青臭味マスキングの対象は、豆乳に限られず、豆乳を原料とする加工品、例えば、豆乳クリームであってもよい。
植物タンパク質、特に大豆タンパク質(それを原料とする加工品を含む。)は独特の酸化臭を有しているが、得られた乳酸菌・酵母発酵物または発酵調味料組成物は、このような植物タンパク質臭(「植物タンパク臭」ということもある。)を抑制するために用いることができる。したがって、本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する、植物タンパク質臭のマスキング剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、料理や調味液などに含まれる香辛料(それを原料とする加工品を含む。)をエンハンスするために用いることができる。すなわち、本発明の乳酸菌・酵母発酵物または発酵調味料組成物を、香辛料を含有する調味液や各種ソースに添加することにより、喫食時に香辛料の刺激をより強く感じさせ、かつ、長く保持させることができる。したがって、本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する、香辛料の刺激感(「香辛料感」ということもある。)のエンハンス剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、カカオ由来原料を含有する食品において、カカオの風味を向上させるために用いることができる。すなわち、本発明の乳酸菌・酵母発酵物または発酵調味料組成物を、カカオ由来原料を含有する食品に添加することにより、喫食時にカカオの風味をより強く感じさせることができる。したがって、本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する、カカオ由来原料を含有する食品における、カカオ風味向上剤である。カカオ風味は、チョコレートの風味(カカオ風味、ビター風味、ミルク風味)の一つとしても知られている。
得られた乳酸菌・酵母発酵物または発酵調味料組成物はさらに、牛乳(それを原料とする加工品を含む。)もしくは豆乳(それを原料とする加工品を含む。)の光劣化臭の抑制のためにも用いることができる。光劣化臭は、太陽光等による酸化により生じる臭いをいう。光劣化臭抑制は、光による酸化劣化の抑制であってもよく、また光劣化により生じた臭いのマスキングであってもよい。本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する、牛乳または豆乳の光劣化臭抑制剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、乳感を向上させるために用いることができる。すなわち、本発明の乳酸菌・酵母発酵物または発酵調味料組成物を、牛乳(それを原料とする加工品を含む。)を用いた食品に添加することにより、喫食時に乳感をより強く感じさせることができる。したがって、本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する乳感向上剤である。乳感の向上とは、ミルク特有の好ましい風味を向上させることをいう。
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、味噌の穀物風味(大豆風味、米風味、または麦風味)を向上させるために用いることができる。すなわち、本発明の乳酸菌・酵母発酵物または発酵調味料組成物を、味噌を含有する食品に添加することにより、喫食時に味噌の穀物風味をより強く感じさせることができる。したがって、本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する味噌の穀物風味向上剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物はさらに、魚肉臭抑制するためにも用いることができる。本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する魚肉臭抑制剤である。魚肉臭は、生魚の不快な臭い(生臭み)、および加熱された魚がもつ特有の臭い(魚臭)を含む。
得られた乳酸菌・酵母発酵物または発酵調味料組成物はさらに、畜肉臭を抑制するためにも用いることができる。畜肉臭は、内臓臭(もつ臭)、グラス臭、および獣臭を含む。グラス臭とは、牧草肥育している牛から得られた牛肉に特有の草の青臭い臭いをいう。本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する畜肉臭抑制剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物は、トマトまたは果実(それらを原料とする食品を含む。)の、果実感を向上させるために用いることができる。果実感の向上とは、トマト(または果実)らしい好ましい風味を向上させることをいう。本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する果実由来食品の果実感向上剤である。
得られた乳酸菌・酵母発酵物または発酵調味料組成物はさらに、納豆(それを原料とする加工品を含む。)の納豆臭を抑制するためにも用いることができる。本発明の一態様は、乳酸菌・酵母発酵物または発酵調味料組成物を有効成分として含有する納豆の納豆臭抑制剤である。
素材感が改良されているか否か、また素材感の改良の程度;畜肉等が軟化されているか否か、またその軟化の程度;豆乳の青臭味がマスキングされているか否か、またそのマスキングの程度;植物タンパク質臭がマスキングされているか否か、またそのマスキングの程度;香辛料の刺激感がエンハンスされているか否か、またそのエンハンスの程度;カカオ風味が向上されているか否か、またその向上の程度;牛乳または豆乳の光劣化臭が抑制されているか否か、またその抑制の程度;乳感が向上されているか否か、またその向上の程度;味噌の穀物風味が向上されているか否か、またその向上の程度;魚肉臭がマスキングされているか否か、またそのマスキングの程度;畜肉臭がマスキングされているか否か、またそのマスキングの程度;果実感が向上されているか否か、またその向上の程度;および納豆臭がマスキングされているか否か、またそのマスキングの程度は、当業者であれば、適切な対照食品を基準とした官能試験を企画して評価することができる。より具体的には、例えば有効成分を含まない食品等適切な対照を準備し、3~10段階程度の基準を定め、基準(産業上意義のある基準、例えば7段階目以上を合格とするように定めることができる。)に基づき、訓練されたパネラーが対象となる食品と対照とを比較することにより評価することができる。
本実施態様により得られた乳酸菌・酵母発酵物または発酵調味料組成物は、種々の食品に適用できる。適用される食品の好ましい例は、加熱調理され、冷却された後、冷蔵または冷凍される、冷蔵食品および冷凍食品、畜肉または魚肉(それらを原料とする加工品を含む。魚肉は魚介類の肉を含む。これらを総称して「畜肉等」ということもある。)、豆乳(それを原料とした加工品を含む。)、植物タンパク質(それを原料とした加工品を含む。)、ならびに香辛料(それを原料とした加工品を含む。)、カカオ由来原料を含有する食品、牛乳(それを原料とした加工品を含む。)、味噌(それを原料とした加工品を含む。)、トマト(それを原料とした加工品を含む。)、果実(それを原料とした加工品を含む。)、および納豆(それを原料とした加工品を含む。)である。
本発明の実施態様の一つは、上で説明された乳酸菌・酵母発酵物の有効量を含む加熱調理された食品を、冷蔵または冷凍して冷蔵食品または冷凍食品を得る工程を含む、冷蔵食品または冷凍食品の、製造方法である。あるいは、乳酸菌・酵母発酵物の有効量を添加する工程を含む、畜肉もしくは魚肉、豆乳、植物タンパク質、香辛料、カカオ由来原料、牛乳、味噌、トマトもしくは果実、または納豆を原料に含む食品の製造方法である。食品の製造方法における、乳酸菌・酵母発酵物の添加の段階は、作業性等を考慮し、適宜とすることができる。ここで、添加するとは、インジェクションすること、接触させることを含む。例えば畜肉等の軟化のためには、添加は、軟化剤をピックル液等の調味液に含有させ、畜肉等にインジェクションすることであってもよく、軟化剤を含有する漬け込み液に畜肉等を漬け込むことであってもよく、軟化剤を原料または中間製品に添加して混合することであってもよい。
配合表を下記に示す。
上記(1)に従い100ml三角フラスコに乳酸菌シード培地の各原料を混合・溶解後、85℃、30分の加熱殺菌を行い、36℃まで冷却した。冷却後の培地に乳酸菌ペディオコッカス・アシドラクティチYU2株をMRS寒天培地上から白金耳にて接種し、36℃、24時間静置培養して乳酸菌シード培養液70gを得た。
上記(2)に従い500mlバッフル付三角フラスコに酵母シード培地の各原料を混合・溶解後、120℃、20分間のオートクレーブ滅菌を行い、30℃まで冷却した。冷却後の培地にサッカロマイセス・セレビジエFAHP-2株をYPD寒天培地上から白金耳にて接種し、30℃、24時間振盪培養(回転速度:200rpm)して酵母シード培養液70gを得た。
上記(3)に従い3リットル小型培養槽(ABLE社製)に各原料を混合・溶解後、85℃、30分の加熱殺菌を行い、36℃まで冷却した。冷却後の液に上述の乳酸菌シード培養液70gを接種した後、50rpmで微速撹拌しつつ36℃、24時間乳酸発酵を行い乳酸菌乳清発酵液2070gを得た。
上記(4)に従い100ml三角フラスコに各原料を混合・溶解後、120℃、20分のオートクレーブ滅菌を行った。30℃まで冷却後、30℃に温度調整した3リットル小型培養槽中の乳酸菌乳清発酵液に添加し、撹拌・混合後に上述の酵母シード培養液70gを接種し30℃にて通気撹拌発酵(撹拌速度:400rpm、通気量:1.0リットル/分(0.5vvm))を20時間行って乳酸菌・酵母乳清発酵液2100gを得た。
乳酸菌・酵母乳清発酵液の保存性を高めるため、食塩を最終製品中にて20%となるように添加し、撹拌しつつ溶解することで加塩乳酸菌・酵母乳清発酵液を得た。
清澄性を高めるため、加塩乳酸菌・酵母乳清発酵液を精密ろ過膜(MF)にて濾過を行い、清澄加塩乳酸菌・酵母乳清発酵液を得た。MFは旭化成ケミカルズ社製のマイクローザUSP-143(公称孔径0.1μm)を用いた。
85℃の恒温水槽中にて30分間保持し加熱殺菌を行い、殺菌済み清澄加塩乳酸菌・酵母乳清発酵液(発明品1)2000gを得た。
得られた発明品1の各種分析を行った。結果を下表に示す。
配合表を下記に示す。
上記(1)に従い、100ml三角フラスコに乳酸菌シード培地の各原料を混合・溶解後、85℃、30分の加熱殺菌を行い、36℃まで冷却した。冷却後の培地に乳酸菌ラクトバチルス・ラムノサスAN1株をMRS寒天培地上から白金耳にて接種し36℃、24時間静置培養して乳酸菌シード培養液70gを得た。
上記(2)に従い、500mlバッフル付三角フラスコに酵母シード培地の各原料を混合・溶解後、120℃、20分間のオートクレーブ滅菌を行い、30℃まで冷却した。冷却後の培地にサッカロマイセス・セレビジエFAHP-1株をYPD寒天培地上から白金耳にて接種し30℃、24時間振盪培養(回転速度:200rpm)して酵母シード培養液70gを得た。
上記(3)に従い、3リットル小型培養槽(ABLE社製)に各原料を混合・溶解後、85℃、30分の加熱殺菌を行い、36℃まで冷却した。冷却後の液に上述の乳酸菌シード培養液70gを接種した後、50rpmで微速撹拌しつつ36℃、24時間乳酸発酵を行い乳酸菌豆乳発酵液2070gを得た。
上記(4)に従い、100ml三角フラスコに各原料を混合・溶解後、120℃、20分のオートクレーブ滅菌を行った。30℃まで冷却後、30℃に温度調整した3リットル小型培養槽中の乳酸菌豆乳発酵液に添加し、撹拌・混合後に上述の酵母シード培養液70gを接種し30℃にて通気撹拌発酵(撹拌速度:400rpm、通気量:1.0リットル/分(0.5vvm))を20時間行って乳酸菌・酵母豆乳発酵液2100gを得た。
乳酸菌・酵母豆乳発酵液の保存性を高めるため、食塩を最終製品中にて20%となるように添加し、撹拌しつつ溶解することで加塩乳酸菌・酵母豆乳発酵液を得た。

得られた発明品2の各種分析を行った。結果を下表に示す。
下表および下記の手順に従い、殺菌済み清澄加塩乳酸菌・酵母乳清発酵液(発明品1)の冷凍春巻への添加効果を確認した。
(1)配合表5の原料中のごま油以外の調味料原料を予め混合しておく。
(2)予熱したフライパンに油大匙1をひき、肉類を軽く炒める。
(3)その他の具材を加え炒める。
(4)具材に火が通ったら調味料混合液を加え、加熱する。
(5)粘度が出たら火を止め、ごま油を加えてパットにとる。
(6)市販の春巻の皮で具材30gを包む。
(7)170℃の油で2分揚げる。
(8)室温にて冷却後、-25℃の冷凍庫にて2週間、冷凍保管。
冷凍2週間保管後、各春巻試作品を電子レンジにて解凍し、よく訓練されたパネル14名にて素材感および風味の好ましさについてControl(非冷凍品)を10点、Blank(無添加冷凍品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。なお、1桁の有効数字に丸めて7点以上となる場合を、従来品にはない十分な素材感または風味を与えるものであり、合格と定めた(以下の実施例において同じ。)。

結果を図1、2に示した。春巻具材の素材感は、発明品1の添加量が増加するにつれて向上し、有効な添加量は0.1%以上だった。春巻全体の風味の好ましさも同様に発明品1の添加量増加に応じて向上したが、添加量2%では乳清発液としての酸味や香気がやや感じられ、春巻らしさが失われる傾向にあった。
実施例3と同様の手順で調理し、冷凍食品を調製した。
実施例3と同様に行った。
結果を図3および4に示した。春巻具材の素材感は、発明品2の添加量が増加するにつれて向上し、有効な添加量は発明品1と同様に0.1%以上だった。春巻全体の風味の好ましさも同様に発明品2の添加量増加に応じて向上したが、添加量2%では豆乳発酵液としての酸味や香気がやや感じられ、春巻らしさが失われる傾向にあった。
下表、および下記の手順に従い、殺菌済み清澄加塩乳酸菌・酵母乳清発酵液(発明品1)の冷凍中華丼の具への添加効果を確認した。
(1)表中のタレ原料の一部(日本酒から発明品1まで)を予め混合しておく。
(2)具材を個別に茹でてパットに取る。
(3)鍋にねぎみじん切りとおろし生姜を投入。
(4)(1)を投入して加熱。
(5)粘度が出たら火を止める。
(6)ごま油を投入して混合。
(7)茹でた具材を投入して混合。
(8)室温にて冷却後、-25℃の冷凍庫にて2週間冷凍保管。
冷凍2週間保管後、各中華丼の具試作品を電子レンジにて解凍し、よく訓練されたパネル14名にて素材感・具材感、風味の好ましさについてControl(非冷凍品)を10点、Blank(無添加冷凍品)を5点として10段階評価で官能評価を行い各パネルの評価点の平均を求めた。

実施例5の表において発明品1を発明品2に置き換えたほかは同じ配合で、下記の手順に従い、清澄加塩乳酸菌・酵母豆乳発酵液(発明品2)の冷凍春巻への添加効果を確認した。
実施例5と同様の手順で、調理し、冷凍食品を調製した。
実施例5と同様に実施した。
結果を図7、8および下表に示した。また、パネラーの試食コメントは下表のとおりであった。
他の乳酸菌または酵母を用いた以外は実施例1または2に準じて、発酵液を調製した。
下記の手順に従い、清澄加塩乳酸菌・酵母乳清発酵液(発明品1)に含有される成分の分画液を調製した。
(1) 清澄加塩乳酸菌・酵母乳清発酵液を減圧濃縮により二倍に濃縮する。
(2) 分画分子量20000の透析チューブ(スペクトラ/ポア、フナコシ)に(1)を充填し、撹拌しながら蒸留水中で透析を行う(4℃、24時間、蒸留水1L×3回交換)。
(3) 透析チューブ内のサンプルを分画液1とする。
(4) 蒸留水側を透析前と等量になるよう減圧濃縮する。
(5) 分画分子量3500~5000の透析チューブ(スペクトラ/ポア、フナコシ)に(4)を充填し、撹拌しながら蒸留水中で透析を行う(4℃、24時間、蒸留水1L×3回交換)。
(6) 透析チューブ内のサンプルを分画液2とする。
(7) 蒸留水側を透析前と等量になるよう減圧濃縮する。
(8) 分画分子量100~500の透析チューブ(スペクトラ/ポア、フナコシ)に(7)を充填し、撹拌しながら蒸留水中で透析を行う(4℃、24時間、蒸留水1L×3回交換)。
(9) 透析チューブ内のサンプルを分画液3とする。
(10) 蒸留水側を透析前と等量になるよう減圧濃縮し、分画液4とする。
各分画液に含有される成分の分子量を、下表に示した。
実施例3と同様の手法により、清澄加塩乳酸菌・酵母乳清発酵液の分画液の冷凍春巻への添加効果を確認した。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の若鶏の香味焼きへの添加効果を確認した。
(1) 配合表に記載の調味液原料(鶏ムネ肉以外の原料)を混合する。
(2) 鶏ムネ肉を切り、(1)で得られた調味液と混合して漬け込む。
(3) 得られた鶏ムネ肉をオーブンにて加熱する。
(4) 加熱した鶏ムネ肉を急速凍結する。
冷凍3日保管後、電子レンジにて解凍後、室温まで冷まし、よく訓練されたパネル10名にて食感の柔らかさとジューシーさについてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。

結果を図9に示した。発明品2添加品は、重曹製剤添加品よりも柔らかく、ジューシーであるという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の無調整豆乳への添加効果を確認した。尚、事前試験の結果から、高い効果が得られることが分かった添加量範囲0.4%~1%について試験した。
無調整豆乳(紀文)に発明品2を添加し(0, 0.4, 0.5, 0.6, 0.7, 0.8, 0.9, 1%)、塩分を食塩で揃えた。
よく訓練されたパネル10名にて、甘味、まろやかさ、味の厚み、青臭味のマスキングについてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
1点:非常に弱い。
2点:Blankよりかなり弱い。
3点:Blankより弱い。
4点:Blankよりやや弱い。
5点:Blank(無添加品)と同じ。

結果を図11に示した。発明品2添加品は、無添加品に比べ甘味、まろやかさ、味の厚みが増し、豆乳の青臭味をマスキングしているという評価であった。添加率0.7%までは全ての項目が比例的に上昇したが、その後は上昇が緩やかになった。また、1.0%になると、雑味や渋みが出てきた。
下表、および以下の手順に従い、挽肉の40%を植物タンパク質(大豆タンパク質)に置き換えたハンバーグにて、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の植物タンパク質臭マスキング効果を確認した。尚、比較対象として植物タンパク質臭マスキングに従来用いられている純米料理酒を同製造コストになるように添加した。
(1)植物タンパク質を調味液に30分浸漬する。
(2)配合Aの材料を混合、粘りが出るまで混ぜあわせる。
(3)浸漬した植物タンパク質を配合Aに添加し、さらに混ぜる。
(4)冷蔵庫で30分間ねかす。
(5)各120gに分割・成型後、230℃、10分間オーブンにて加熱。
(6)急速冷凍した後、真空パックして冷凍保管。
(7)試食時は湯煎にて温めた。
よく訓練されたパネル10名にて、植物タンパク質臭マスキング、柔らかさ、ジューシーさ、肉感についてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。

結果を図12に示した。発明品2添加品は、無添加品や純米料理酒に比べ、全ての評価項目が向上した。特に植物タンパク質臭マスキング効果が高かった。また、料理酒は酒独特の風味が付与されていた。しかし、豆乳発酵液添加品は、風味自体は変えずに種々の効果のみが付与されていた。
下表および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のお好み焼ソースへの添加効果を確認した。
(1)表に記載の原料を配合したお好み焼ソースに、豆乳発酵液(発明品2)を添加した。
よく訓練されたパネル10名にて、香辛料感、酸味、熟成感、コクについてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
1点:Blankより非常に劣る。
2点:Blankよりかなり劣る。
3点:Blankより劣る。

結果を図13に示した。発明品2添加品は、無添加品に比べ、香辛料感、熟成感、コクが向上した。特に香辛料感(刺激感)の向上が目立った。また、後味をひく効果もあった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のショコラショーへの添加効果を確認した。
(1)カカオマスを湯煎で溶かす。
(2)無調整豆乳を50℃まで温め、溶けたカカオマスに約半量注ぎ、混合する。
(3)残りの豆乳、およびグラニュー糖も加え混合する。
(4)食塩水または発明品2を混合する。
試作後、10℃、20℃、40℃にしたサンプルを、よく訓練されたパネル4名にて、カカオ風味についてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
1点:非常に弱い。
2点:Blankよりかなり弱い。
3点:Blankより弱い。

下表、および以下の手順に従い、殺菌済み清澄乳酸菌・豆乳発酵液(発明品2、但し加塩していないもの)のミルクチョコレートへの添加効果を確認した。
(1)ミルクチョコレートを湯煎で溶かす。
(2)水または発明品2を混合する。
試作後、冷やして固体にしたサンプルおよび40℃の液体サンプルを、よく訓練されたパネル6名にて、カカオ風味についてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
1点:非常に弱い。
2点:Blankよりかなり弱い。
3点:Blankより弱い。
4点:Blankよりやや弱い。
5点:Blank(無添加品)と同じ。

結果を図15に示した。発明品2添加品(試験1)は、Blankよりもカカオ風味が向上したという評価であった。また、液体の方がカカオ風味向上効果は大きかった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の光照射牛乳、光照射豆乳への添加効果を確認した。
(1) 牛乳または無調整豆乳に、食塩水または発明品2を混合する。
(2) 照明付インキュベータFLI-2010T型(EYELA東京理化器械株式会社)により、光照射する(5℃、26000ルクス、5日間)
5日後のサンプルを、よく訓練されたパネル2名にて、光劣化臭抑制効果について、光照射ありBlankを1点、光照射なしサンプルを10点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
1点:光劣化臭抑制効果は非常に弱い(光劣化臭は光照射なしより非常に強いが、光照射ありBlankと同等)。
2点:光劣化臭抑制効果はかなり弱い(光劣化臭は光照射なしより非常に強いが、光照射ありBlankより僅かに弱い)
3点:光劣化臭抑制効果は弱い(光劣化臭は光照射なしより非常に強いが、光照射ありBlankよりやや弱い)。
4点:光劣化臭抑制効果はやや弱い(光劣化臭は光照射なしより非常に強いが、光照射ありBlankより弱い)。
5点:光劣化臭抑制効果は僅かに弱い(光劣化臭は光照射なしより非常に強いが、光照射ありBlankよりかなり弱い)。
6点:光劣化臭抑制効果は僅かに強い(光劣化臭は光照射なしよりかなり強い)。

結果を図16および17に示した。牛乳、豆乳共に、光照射によって劣化臭が発生したが、発明品2添加品(試験1)は、Blankよりもこの光劣化臭を抑制しているという評価となった。
下表の通り、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のクリームへの添加効果を確認した。
(1)油層 油を加熱し溶解したところにレシチン、乳化剤を入れ混ぜる。
(2)水層 水分を加熱し材料を加え混ぜる。
(3)水層と油層を混合し予備乳化を行い、その後、均質化処理を行い冷却する。
得られたサンプルの乳風味について、よく訓練されたパネル2名にて官能評価を行った。
発明品2添加品は、Blankよりも乳風味が向上したという評価であった。
下表の通り、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のクリームコロッケ中具への添加効果を確認した。
(1)玉ねぎを炒めた後、表に記載の原材料を混合し加熱する。
(2)(1)で得られた中具を冷却し固めた後、成型、衣付けする、
(3)(2)を油ちょう(180℃3分)してクリームコロッケを得る。
得られたサンプルの乳風味について、よく訓練されたパネル2名にて官能評価を行った。
発明品2添加品(試験1)は、Blankよりも乳風味が向上したという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の即席味噌汁への添加効果を確認した。即席味噌汁用の調味味噌として、合わせ味噌(永谷園製「あさげ」生味噌タイプ、大豆味噌を使用)、赤だし味噌(永谷園製「ひるげ」生味噌タイプ、大豆味噌を使用)、白味噌(永谷園製「ゆうげ」生味噌タイプ、大豆味噌を使用)を使用した。
(1)調味味噌と、食塩水および発明品2を混合する。
(2)湯を注ぎ、混合する。
試作後、室温まで冷ましたサンプルを、よく訓練されたパネル4名にて、穀物風味(大豆風味)、甘味、旨味の強さについてBlank(無添加品)を5点として10段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
1点:非常に弱い。
2点:Blankよりかなり弱い。
3点:Blankより弱い。
4点:Blankよりやや弱い。
5点:Blank(無添加品)と同じ。
6点:Blankより僅かに強い。
7点:Blankよりやや強い。

結果を図18に示した。発明品2添加品(試験1)は、Blankよりも穀物風味(大豆風味)、甘味、旨味が向上したという評価であった。その効果は、白味噌と合わせ味噌の即席味噌汁において特に大きかった。また、記載した生味噌タイプの他、フリーズドライタイプの即席味噌汁でも同様の効果が確認された。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のシャケほぐし身への添加効果を確認した。
(1) 表に記載された量の湯、食塩水および発明品2を混合する。
(2)(1)で混合した液をシャケのほぐし身と混合する。
得られたサンプルを、よく訓練されたパネル2名にて、魚肉の生臭みと魚臭について、Blankを+++(3点)として、3段階評価で官能評価を行い、各パネルの評価点の平均を求めた。なお、生魚の不快な臭いを「生臭み」、加熱された魚が持つ特有の臭いを「魚臭」とした。
結果を表に示した。発明品2添加品は、Blankよりも魚肉の生臭みや魚臭を抑制しているという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のもつ入り鍋スープへの添加効果を確認した。
(1) 表に記載された原材料を混合して調味液とする。
(2) 調味液と豚ゆでもつを表の配合率でパウチに充填し90℃10分加熱殺菌をする、これを水冷後凍結してもつ入り鍋スープとする。
(3) もつ入り鍋スープを解凍後、パックごと加熱して官能評価用サンプルとする。
上記手順により得られたサンプルを、よく訓練されたパネル2名にて、もつ臭さについて、Blankを+++(3点)として、3段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
結果を表に示した。発明品2添加品は、Blankよりももつの臭みを抑制しているという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の牛丼(具材)への添加効果を確認した。
(1) 表に記載された原材料を混合し、湯煎で85℃まで加熱した後、冷却して調味液とする。
(2) 牛肉と玉ねぎをボイルした後、冷却する。
(3) 牛肉、玉ねぎ、調味液を表に記載の配合率でパックに入れ、90℃10分で加熱する。これを水冷後、凍結して牛丼の素とする。
(4) (3)の牛丼の素を解凍後、パックごと加熱して官能評価用サンプルとする。
上記手順により得られたサンプルを、よく訓練されたパネル2名にて、牛肉のグラス臭について、Blankを+++(3点)として、3段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
結果を表に示した。発明品2添加品は、Blankよりも牛肉のグラス臭を抑制しているという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のシーズンド・ポークへの添加効果を確認した。
(1) シーズンド・ポークを半解凍の状態で、ミートチョッパーにて5mmにミンチする。
(2) ミンチしたシーズンド・ポークに、表に記載されたその他の材料を混合してパックに入れ、90℃10分で加熱する。これを冷ました後、官能評価用サンプルとする。
上記手順により得られたサンプルを、よく訓練されたパネル2名にて、シーズンドポークの畜肉臭について、Blankを+++(3点)として、3段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
結果を表に示した。発明品2添加品は、Blankよりも豚肉の獣臭を抑制しているという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)のトマトソースへの添加効果を確認した。
(1) 玉葱をみじん切りに、キサンタンガムは砂糖と、香辛料は調味料とそれぞれ混合して溶いておく。
(2) 鍋にオリーブ油をひいて玉葱を炒め、トマトを加えて軽く火を通す。
(3) (2)に(1)とその他の原料を入れ、香辛料と白ワインを加える。
(4) (3)をパウチに入れ、90℃40分で加熱する。
(5) (4)を冷ました後、軽く温めて官能評価用サンプルとする。
上記手順により得られたサンプルを、よく訓練されたパネル2名にて、トマトソースの果実感と酸味について、Blankを3点として、5段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
結果を表に示した。発明品2添加品は、Blankよりもトマトソースの果実感や酸味が向上しているという評価であった。
下表、および以下の手順に従い、殺菌済み清澄加塩乳酸菌・豆乳発酵液(発明品2)の納豆への添加効果を確認した。
(1) 表に記載の原材料を混合し、納豆のたれとする。
(2) 納豆(おかめ納豆(タカノフーズ製))50gに対し、(1)のたれを3.7gを添加。箸にて30回かき混ぜて官能評価用サンプルとする。
上記手順により得られたサンプルを、よく訓練されたパネル2名にて、納豆臭について、Blankを+++(3点)として、3段階評価で官能評価を行い、各パネルの評価点の平均を求めた。
結果を表に示した。発明品2添加品は、Blankよりも納豆臭を抑制しているという評価であった。
Claims (12)
- 豆乳または乳清の、乳酸菌および酵母による発酵物(乳酸菌・酵母発酵物)を有効成分とする、食品の素材感改良、畜肉または魚肉の軟化、豆乳の青臭味マスキング、植物タンパク質臭マスキング、香辛料による刺激のエンハンス、カカオ風味向上、牛乳または豆乳の光劣化臭の抑制、乳感向上、味噌の穀物風味の向上、魚肉臭マスキング、畜肉臭マスキング、果実感向上、および納豆臭マスキングからなる群より選択されるいずれかのための、発酵調味料組成物。
- 乳酸菌が、ラクトバチルス・ラムノサス(Lactobacillus rhamnosus)、ペディオコッカス・アシドラクティチ(Pediococcus acidlactici)、ラクトバチルス・コンフュサス(Lactobacillus confusus)、ラクトバチルス・メールファメンタス(Lactobacillus malefermentans)、ラクトバチルス・パラカゼイ(Lactobacillus paracasei subsp. paracasei)、ラクトバチルス・ブルガリカス(Lactobacillus delbrueckii subsp. bulgaricus)、ラクトコッカス・ラクティス(Lactococcus lactis)、ラクトバチルス・アシドフィラス(Lactobacillus acidophilus)、およびラクトバチルス・ヘルベティカス(Lactobacillus helveticus)からなる群より選択されるいずれかである、請求項1に記載の発酵調味料組成物。
- 酵母が、サッカロマイセス・セレビジエ(Saccharomyces cerevisiae)、サッカロマイセス・サケ(Saccharomyces sake)、サッカロマイセス・ベティカス(Saccharomyces beticus)、シゾサッカロマイセス・ポンベ(Schizosaccharomyces pombe)からなる群より選択されるいずれかである、請求項1または2に記載の発酵調味料組成物。
- 豆乳の乳酸菌・酵母発酵物を有効成分とする、請求項1~3のいずれか1項に記載の発酵調味料組成物。
- 請求項1~4のいずれか1項に定義された乳酸菌・酵母発酵物の有効量を含む、食品。
- 請求項1~4のいずれか1項に定義された乳酸菌・酵母発酵物の有効量を含む、加熱調理された、冷蔵食品または冷凍食品。
- 乳酸菌・酵母発酵物を、乳清を原料とする乳酸菌・酵母発酵物である場合は固形分10.7%、豆乳を原料とする乳酸菌・酵母発酵物である場合は固形分6.5%の乳酸菌・酵母発酵物に換算して、0.1~2.0%含む、請求項5に記載の食品、または請求項6に記載の冷蔵食品または冷凍食品。
- 請求項1~4のいずれか1項に定義された乳酸菌・酵母発酵物の有効量を含む加熱調理された食品を、冷蔵または冷凍して冷蔵食品または冷凍食品を得る工程
を含む、冷蔵食品または冷凍食品の、製造方法、または
請求項1~4のいずれか1項に定義された乳酸菌・酵母発酵物の有効量を添加する工程
を含む、畜肉もしくは魚肉、豆乳、植物タンパク質、香辛料、カカオ由来原料、牛乳、味噌、トマトもしくは果実、または納豆を原料に含む食品の製造方法。 - 請求項1~4のいずれか1項に定義された乳酸菌・酵母発酵物の有効量を含む加熱調理された食品を、冷蔵または冷凍して冷蔵食品または冷凍食品を得る工程
を含む、冷蔵食品または冷凍食品の、素材感の改良方法、または
請求項1~4のいずれか1項に定義された乳酸菌・酵母発酵物の有効量を添加する工程
を含む、畜肉もしくは魚肉の軟化、豆乳の青臭味マスキング、植物タンパク質臭マスキング、香辛料による刺激のエンハンス、カカオ風味向上、牛乳または豆乳の光劣化臭の抑制、乳感向上、味噌の穀物風味の向上、魚肉臭マスキング、畜肉臭マスキング、果実感向上、および納豆臭マスキングからなる群より選択されるいずれかのための方法。 - 豆乳または乳清の乳酸菌発酵物を酵母でさらに発酵する工程
を含む、乳酸菌・酵母発酵物を有効成分とする、発酵調味料組成物の製造方法。 - 有効成分が、乳酸菌・酵母発酵物の分子量に基づき分画された画分であって、下限の分子量が75~1,800であり、上限の分子量が2,200~10,000である画分を含む、請求項1~4のいずれか1項に記載の発酵調味料組成物。
- 豆乳または乳清の、乳酸菌・酵母発酵物の分子量500~3,500の画分を含む、食品の素材感改良、畜肉もしくは魚肉の軟化、豆乳の青臭味マスキング、植物タンパク質臭マスキング、香辛料による刺激のエンハンス、カカオ風味向上、牛乳または豆乳の光劣化臭の抑制、乳感向上、味噌の穀物風味の向上、魚肉臭マスキング、畜肉臭マスキング、果実感向上、および納豆臭マスキングからなる群より選択されるいずれかのための剤。
