Abstract
La invención presenta un proceso para la preparación de arroz de cocción rápida que presenta un aspecto natural y sensación agradable al paladar. Elarroz se produce manipulando mecánicamente arroz húmedo con un contenido de humedad de 17% a32 % por peso, preferentemente mediante amoladura húmeda delarroz para eliminar el salvado, tras lo cual se seca. La amoladura húmda da como resultado un producto con propiedades comestibles. El arroz húmedomanipulado mecánicamente puede serinstant izado asiismo después del paso de flexión en húmedo para producir un arroz instantáneo. En consecuencia,la invención presenta arroces de cocción rápida e instantánea que se obtienen mediante el proceso reivindicado.
