  1. REIVINDICACIONES

    Gránulo comprendiendo un núcleo y un revestimiento donde el núcleo comprende una fitasa y el revestimiento comprende al menos el 60% p/p de una sal y el tamaño de partícula es inferior a 400 !m.
  2. 2.
    Método de fabricación de una composición alimentaria comprendiendo las etapas de:
    i. mezcla de componentes alimentarios con gránulos comprendiendo un núcleo y un revestimiento, donde el núcleo comprende una enzima,
    ii. tratamiento con vapor de dicha composición (i), y
    iii. granulación de dicha composición (ii),
    caracterizado por el hecho de que el revestimiento comprende al menos el 60% p/p de una sal seleccionada en el grupo que consiste en Na2SO4 y K2SO4.
  3. 3.
    Gránulo según la reivindicación 1 o método según la reivindicación 2, donde el espesor del revestimiento de sal es de al menos 1 !m.
  4. 4.
    Gránulo según la reivindicación 1 o método según la reivindicación 2, donde el espesor del revestimiento de sal es de al menos 4 !m.
  5. 5.
    Gránulo según la reivindicación 1 o método según la reivindicación 2, donde el espesor del revestimiento de sal es de al menos 8 !m.

    Gránulo o método según cualquiera de las reivindicaciones precedentes, donde el revestimiento comprende al menos el 80% p/p de la sal.

    Gránulo o método según cualquiera de las reivindicaciones 1 a 5, donde el revestimiento comprende al menos el 90% p/p de la sal.

    Gránulo o método según cualquiera de las reivindicaciones 1 a 5, donde el revestimiento comprende al menos el 95% p/p de la sal.

    Gránulo o método según cualquiera de las reivindicaciones precedentes, donde la sal se selecciona en el grupo que consiste en Na2SO4 y K2SO4.

    Gránulo o método según la reivindicación 9, donde la sal en el revestimiento es Na2SO4.
  11. 11.
    Gránulo o método según la reivindicación 9, donde la sal en el revestimiento es K2SO4.
  12. 12.
    Gránulo o método según cualquiera de las reivindicaciones 1 a 11, donde el revestimiento constituye el 20-80% p/p del gránulo revestido.

    Método según cualquiera de las reivindicaciones 2 a 12, donde la enzima presente en el núcleo mantiene al menos el 75% de la actividad antes de la granulación con vapor.
  14. 14.
    Método según cualquiera de las reivindicaciones 2 a 13, donde los gránulos tienen un tamaño de partícula de 100-1000 !m.
  15. 15.
    Método según cualquiera de las reivindicaciones 2 a 14, donde la enzima se selecciona en el grupo que consiste en amilasas, proteasas, beta-glucanasas, fitasas, xilanasas, fosfolipasas y glucosa oxidasas.

    Método según cualquiera de las reivindicaciones 2 a 14, donde la enzima es una fitasa.
  17. 17.
    Método según cualquiera de las reivindicaciones 2 a 14, donde la fitasa es una 6-fitasa.
  18. 18.
    Método según cualquiera de las reivindicaciones 2 a 14, donde la fitasa es un fitasa Escherichia coli.
  19. 19.
    Gránulo o método según cualquiera de las reivindicaciones 1 a 18, donde el núcleo es una partícula inerte con la enzima aplicada sobre ésta.

    Gránulo o método según la reivindicación 19, donde la partícula inerte es un almidón, un azúcar o una sal.
  21. 21.
    Gránulo o método según la reivindicación 19, donde la partícula inerte es Na2SO4.
  22. 22.
    Gránulo o método según cualquiera de las reivindicaciones 1 a 21, que comprende además uno, dos o más estratos de revestimiento adicionales en la superficie interior o exterior del revestimiento de sal.

    Gránulo o método según la reivindicación 22, donde el revestimiento adicional comprende talco.
  24. 24. Gránulo o método según la reivindicación 22, donde el revestimiento adicional comprende (PVA) alcohol 5 polivinílico.
  25. 25. Método según cualquiera de las reivindicaciones 2 a 22, donde el tratamiento con vapor consiste en calentar la mezcla alimentaria a 60-100°C por inyección de vapor.
    10 26. Uso de gránulos comprendiendo un núcleo comprendiendo una enzima y un revestimiento para la fabricación de una composición alimentaria granulada tratada con vapor, caracterizado por el hecho de que el revestimiento comprende al menos el 60% p/p de una sal que se selecciona en el grupo que consiste en Na2SO4 y K2SO4.
