Abstract

Una composición de leche de soya utilizando sustancialmente la totalidad del material de celulosa y proteína natural de dicha semilla, para preparar una leche de soya, dicho método incluye: proporcionar un particulado entero, triturado o pulverizado de semillas de soya; incorporar por lo menos un ácido orgánico y una sal orgánica ácida con dicho particulado de soya para formar una base de semilla de soya; agregar agua a dicha base de semilla de soya en una cantidad suficiente para proporcionar una base de semilla de soya líquida; y tratar dicha base de semilla de soya líquida a una presión suficiente para homogenizar dicha base de semilla de soya líquida. El método anterior además puede incluir un ion de calcio, componentes de grasa o componentes de sabor.
