CONSTITUTION: Whole or peeled soybeans (S) which may be immered in an aqueous solution are heat-treated directly or indirectly in the presence of a polyphosphate, e.g. sodium or potassium meta-, poly-or pyrophosphate, or in combination with sodium bicarbonte, with water, hot water, or steam.
