Abstract

PURPOSE: To obtain a soybean protein-containing food product having improved digestive ratio free from unripe smell of soybeans of their own, by treating a solution of soybean protein by ultrasonic wave.
CONSTITUTION: An aqueous solution of soybean protein, e.g., soybean milk, etc, is heated to not lower than 50°C, preferably 55W60°C. After the solution is cooled to about normal temperature, it is treated by ultrasonic wave. Heating and ultrasonic wave treatment are carried out once or repeated several times.
