Abstract
PURPOSE: Backbones of eel are fried with the oil that is obtained from the same part to make the objective food product of eel backbones with high storability, good taste and enriched nutritients.
CONSTITUTION: The backbone part of eel is washed with water, drained, and fried with the oil that is obtained from the same part by heating at 160W180°C or higher temperature.Then, the oil is sufficiently drained and the resultant fried backbones is used as a food product directly or after cut into about 1W 5cm length.
