Abstract
PURPOSE: Soybeans, the raw material, are immersed in water containing gluconic δ-lactone and then ground in hot water, thus making said soybean milk with no soybean odor, astringency and throat irritation.
CONSTITUTION: Unprocessed or skin-removed soybeans are immersed in water which contains 0.1W1.0%, based on the weight of the soybeans, of gluconic δ- lactone, 0.1W1.0% of ascorbic acid or its sodium salt and sodium bicarbonate in such an amount that the pH of the water becomes 6.5W7.5 at the completion of the immersion, at a temperature of lower than 10°C, preferably lower than 7°C for 16W 24hr. Then, the water is removed and the soybeans are simply washed with water and the resulting soybeans are ground in hot water so that the temperature becomes 80°C or higher on the completion of grinding and then filtered.
