Abstract

PURPOSE: To prepare an acidic soybean milk beverage, having improved stability, and containing no prepcipitate without using an enzyme, by adding a saccharide to a soybean milk, and further adding a fruit juice and/or sour agent thereto.
CONSTITUTION: A saccharide, e.g. sucrose, maltose, or isomerized sugar, and preferably a stabilizer such as a paste, e.g. pectin, propylene glkycol ester of alginic acid, are added to a soybean milk obtained by the conventional method, and the reaultant mixture is then heated at preferably 50W75°C. A fruit juice or sour agent or both are added thereto.
