Abstract
PURPOSE: To obtain a powdered fruit juice having a low moisture absorption and balanced taste without astringency and bitterness, by adding a substance containing cyclodextrin as a drying assistant to a fruit juice, and spray-drying the resultant mixture.
CONSTITUTION: In powdering a fruit juice, e.g. a lemon, grapefruit, mandarin oragne, peach, grape or apple as it is or a concentrate or its mixture with lactic acid bacteria or an alcoholic component, the fruit juice is mixed with a substance containing cyclodextrin, e.g. obtained by using starch with cyclodextrin glycocyltransferase, in an amount of usually 0.1pt.wt. or more, preferably 0.2W1pt.wt., based on one pt.wt. solid content of the fruit juice as a drying assistant. The resultant mixture is then spray-dried to give a powdered fruit juice having balanced and round taste without astringency and bitterness readily.
