Abstract

PURPOSE: To prepare soybean milk containing homogeneously dispersed proteins, by heating raw soybean milk to deactivate the trypsin-inhibiting activity, adding seasonings, flavors, etc., and finally heating again to sterilize the milk.
CONSTITUTION: Soybean milk prepared by a conventional process is (1) homogenized pref. under a pressure of ≥200kg/cm2, (2) heating the homogenized milk to deactivate more than 70%, pref. more than 80% of the trypsin-inhibiting activity of the soybean milk, (3) adding and mixing proper ingredients such as salt, sugar, flavor, stabilizing agent, fruit juice, etc., (4) homogenizing the mixture, and finally (5) heating and sterilizing the product.
