Abstract

PURPOSE: To bleach and to sterilize noodles or pasty food without using hydrogen peroxide, and to provide them with extremely mild taste and flavor, by using an acidic organic salt.
CONSTITUTION: An organic acid, e.g., citric acid, tartaric acid, acetic acid, etc., a carbonate or bicarbonate are separately added to noodles comprising a main ingredient and a properly added subsidiary ingredient or a raw material ingredient for pasty food product, or an acidic organic salt prepared separately from preferably an organic acid, carbonate, or bicarbonate is added to the noodles or the raw material ingredient to give a blend. A proper amount of water is added to the blend, which is thoroughly kneaded to prepare conventionally noodles or pasty food product.
