Abstract
PURPOSE: To obtain a mousse-like food having high nutritive value, low calorific value, and light and agreeable taste, by cooling and coagulating a hot aqueous solution containing agar, a sweetener, and soybean milk.
CONSTITUTION: A mousse-like food is prepared by cooling and coagulating a hot aqueous solution containing agar, a sweetener and soybean milk. The amounts of agar and soybean milk in the product are preferably 0.4W2.0wt% and 8W25wt% respectively, to obtain a food having balanced taste and nutritive value of the soybean milk and agreeable taste. The combined use of milk eliminate the smell of the soybean milk and increases the palatability. The amount of the milk is prefereably nearly equal to the soybean milk. The food may further contain fruits or their juice, and the fruits, etc. are usually added to the food after straining the hot aqueous solution containing agar and soybean milk.
