Abstract

"MéTODO DE EXTRAçãO E/OU PRENSAGEM DE ALIMENTO OU BEBIDA ALIMENTìCIA". Alimento a ser extraído e/ou prensado é alimentado para o interior de um moinho de colóides ou de um extrusor de parafuso duplo e, imediatamente após moagem e/ou simultaneamente com a moagem, um solvente frio (por exemplo, água ou leite a -3 <198>C a 50 <198>C) é acrescentado a ele. Após tratar o alimento com o extrusor, a torta é eliminada para produzir um extrato e/ou um suco de prensagem. Após a moagem um alimento objetivado (por ex., café, chá verde, chá preto, chá de ervas, chá de ervas selvagens, chá de erva chinesa, cacau, baunilha, frutas ou vegetais, seja como um material único ou uma combinação deles), um extrato ou um suco de prensagem pode ser obtido rapidamente e de modo altamente eficiente a uma baixa temperatura em um modo apropriado para a produção em massa sm qualquer piora no paladar devido à oxidação após a moagem, etc. Comparado com os métodos de extração/prensagem existentes tais como o método de extração a frio com uma necessidade quanto a um tempo prolongado, o método acima é muito vantajoso a partir dos pontos de vista de melhorar o paladar e a economicidade. No caso de bebidas de chá, por exemplo, componentes úteis são preservados e a vividas tonalidades das colorações características dos chás individuais podem ser mantidas durante um tempo prolongado.
