Abstract

물, 설탕, 물엿, 산, 응고제, 완충액, 향미료, 착색료를 혼합시켜 제조하는 구미이다. 응고제로서는, 펙틴과 젤라틴이 병용된다. 펙틴과 젤라틴과의 첨가량으로서는, 설탕, 물엿, 산, 응고제 및 완충액으로 이루어지는 주요원료의 고형분 총중량에 대하여, 펙틴을 1.9 내지 2.6중량%, 젤라틴을 1 내지 3.8중량%로 한다.

Claims (4)

  1. 물, 설탕, 물엿, 산, 응고제, 완충액, 향미료, 착색료를 혼합시켜 제조하는 구미로서, 상기 응고제로서 펙틴과 상기 젤라틴이 병용되고, 상기 펙틴과 젤라틴과의 첨가량으로서, 설탕, 물엿, 산, 응고제 및 완충액으로 이루어지는 주요원료의 고형분 총중량에 대하여, 펙틴을 1.9 내지 2.6중량%, 젤라틴을 1 내지 3.8중량%로 하고 있는 것을 특징으로 하는 구미.
  2. 제1항에 있어서, 상기 구미에 구취소취제가 첨가되는 것을 특징으로 하는 구미.
  3. 제2항에 있어서, 상기 구취소취제가 감의 착즙엑기스인 것을 특징으로 하는 구미.
  4. 물, 설탕, 물엿, 산, 응고제로서의 펙틴과 젤라틴, 완충액, 향미료, 착색료, 구취소취제로서의 감의 착즙엑기스를 혼합시켜 제조하는 동시에, 상기 펙틴과 상기 제라틴과의 첨가량으로서, 설탕, 물엿, 산, 응고제 및 완충액으로 이루어지는 주요원료의 고형분 총중량에 대하여, 펙틴을 1.9 내지 2.6중량%, 젤라틴을 1 내지 3.8중량%로 한 구미의 제조방법으로서, 상기 물, 산의 일부, 완충액, 설탕, 물엿, 펙틴을 혼합용해시킨 후, 상기 용해액에 상기 착즙엑기스를 혼합시켜 상기 착즙액기스를 혼합시켜 상기 착즙엑기스를 교반시킨 후, 다시 상기 산의 잔부, 착색료, 향미료, 및 상기젤라틴을 용해시켜 제조하는 것을 특징으로 하는 구미의 제조방법.
