Abstract
Description
詳細には、塩化ナトリウム等のナトリウム塩を含む飲食物に対して水溶性食物繊維を添加することにより、塩味を増強することを特徴とする飲食物の塩味増強方法、及び/又は減塩目的に使用する塩化カリウム等のカリウム塩(代替塩)の飲食物に与える異味(エグ味)を改善(マスキング)する方法および塩味改善剤に関する。
すなわち、本発明は、以下を提供する。
1.水溶性食物繊維を飲食物に添加することを特徴とする飲食物の塩味改善方法。
2.塩味改善方法が、ナトリウム塩の塩味増強方法である上記1記載の塩味改善方法。
3.上記ナトリウム塩が、塩化ナトリウムである上記2記載の塩味改善方法。
4.塩味改善方法が、カリウム塩のエグ味改善(マスキング)方法である上記1記載の塩味改善方法。
5.上記カリウム塩が、塩化カリウムである上記4記載の塩味改善方法。
6.水溶性食物繊維が、難消化性デキストリン、分岐マルトデキストリン、イヌリン及びポリデキストロースからなる群から選択される1種以上である上記1~5のいずれか1記載の塩味改善方法。
7.水溶性食物繊維が、難消化性デキストリンである上記6記載の塩味改善方法。
8.飲食物中の塩化ナトリウムの量が、無水物換算で、飲食物に対して0.5w/w%以上である上記1~7のいずれか1項記載の塩味改善方法。
9.飲食物の塩化カリウムの塩化ナトリウムに対する代替率が、無水物換算で、50w/w%以下である上記1~8のいずれか1項記載の塩味改善方法。

14.水溶性食物繊維とともに、塩化ナトリウム、代替塩、他の塩味増強剤、ミネラル強化剤、旨味料および香辛料から選ばれる1種又は2種以上を含有してなる塩味改善剤。
本発明における、食塩等のナトリウム塩の代替塩として用いられる代表的なカリウム塩は、塩化カリウムであるが、それ以外のカリウム塩としては、リン酸カリウムが例示される。
水溶性食物繊維として、具体的に、難消化性デキストリン(例えば、市販品としては松谷化学工業株式会社製、商品名「パインファイバー」、「ファイバーソル2」)、ポリデキストロース(例えばダニスコ・カルター社製、商品名「ライテス」)、分岐マルトデキストリン(例えばロケット社製、商品名「ニュートリオース」)、イヌリンなどが挙げられる。これらの他にも、上記低粘性、水溶性の条件を満たす水溶性食物繊維(難消化性糖類)は何れも包含される。
本発明において好ましい水溶性食物繊維の分子量は1,000~5,000、より好ましくは1,500~2,500である。
本発明で使用する水溶性食物繊維として、難消化性デキストリンが最も効果的で好ましい。
難消化性デキストリンの分子量は通常1,500~2,500の範囲である。
但し、水溶性食物繊維の添加量が多くなり過ぎても、その塩味等増強効果がさらに劇的に強まるということはなく、経済的な観点からも、食塩を含む飲食物に対して10.0w/w%までで十分である。
本明細書において、「減塩飲食物」とは、塩化ナトリウムあるいは他のナトリウム塩由来のナトリウム量が、飲食物に標準的に含まれる塩化ナトリウムあるいは他のナトリウム塩由来のナトリウム量に比べて意図的に低減された飲食物のことであり、例えば、食塩摂取制限による健康維持の側面から減塩された飲食物が含まれる。
つまり、先にも述べたように、本発明の塩味改善剤は、飲食物の製造工程において味付けをする態様、あるいは消費者が食する直前に好みに合わせて味を調整する態様のいずれにも用いることができるということであり、例えば、ポップコーン菓子の味付けのように、工場あるいは店舗で、本発明品をふりかける態様や油脂等に混入させた調味液の形態でからめて味付けする態様であっても、消費者が食する直前にふりかけて味付けする態様であっても構わない。
以下、実験に基づいて、本発明をより詳細に説明する。実験例及び実施例中、%は質量%を示す。
<塩化ナトリウムの塩味に及ぼす各種水溶性食物繊維の影響>
塩化ナトリウムの塩味が、共存する水溶性食物繊維の違いによって、どのような影響を受けるかを調べた。塩化ナトリウムとしては、試薬級の塩化ナトリウムを使用し、水溶性食物繊維としては、難消化性デキストリン(松谷化学工業株式会社販売、商品名「ファイバーソル2」、分子量約1600)、分岐マルトデキストリン(ロケット社製商品名「ニュートリオースFB」、分子量約1600)、ポリデキストロース(ダニスコ・カルター社製、商品名「ライテスII」、分子量約2000)、イヌリン(大日本明治製糖株式会社製、商品名ラフティリンHP、分子量約1500)を用いた。比較として、一般的なデキストリン(松谷化学工業株式会社販売、商品名「パインデックス#2」、DE10、分子量約1700)を、また、参考として、塩味増強効果が知られているトレハロース(株式会社林原社製、商品名「トレハ」)を使用した。
無水物換算で、塩化ナトリウムが1.5%と、上記水溶性食物繊維の何れかが、無水物換算で1%となるように溶解共存させて試験水溶液を調製し、対照として、水溶性食物繊維無添加の1.5%塩化ナトリウム水溶液を調製し、試験水溶液の塩味が、対照(水溶性食物繊維無添加の1.5%塩化ナトリウム水溶液)と比較して、どう変化するかをパネルテストで判定した。パネラーは11名で、男性6名、女性5名の構成で、室温26℃にて行った。塩味に及ぼす影響の判定は、対照に比べて塩味が、低減する、変化なし、やや増強、著しく増強の4段階で判定し、各々の水溶性食物繊維について、各段階の判定をしたパネラーの人数を表1に示す。
また、備考欄に記載したが、ニュートリオースFBやライテスIIには収斂味かエグ味のような異味が感じられるというコメントが多く、トレハロースについては甘味が感じられるとのコメントが多かった。
<塩味増強に及ぼす塩化ナトリウム濃度と難消化性デキストリン濃度の影響>
実験例1で使用した食物繊維の中で、難消化性デキストリンが最も塩味増強効果があることが判明したので、塩味増強に与える塩化ナトリウム濃度と難消化性デキストリン濃度との関係を調べた。実験例1の方法に準じて、塩化ナトリウムと難消化性デキストリンとを、表2に示すように、それぞれ0.5乃至10%となるように溶解共存させて試験水溶液を調製した。対照として、難消化性デキストリン無添加で、0.5乃至10%の塩化ナトリウムを含有する水溶液を調製し、各試験水溶液との塩味の比較をパネルテストにより行った。パネラーは11名で、男性6名、女性5名の構成で、室温26℃にて行った。判定は、対照に比べて、低減する(-1)、変化なし(0)、やや増強(1)、著しく増強(2)の4段階で判定し、各段階の判定をしたパネラーの人数に点数を乗じた結果を表2に示す(判定結果の数字は、最低-11点、最高22点となる)。
<塩化ナトリウムと塩化カリウムを併用した場合の各水溶性食物繊維の塩味に及ぼす影響と異味改善に及ぼす影響>
次に、塩化ナトリウムとともに、食塩代替物の代表ともいえる塩化カリウムが併存した場合の、水溶性食物繊維の、塩味増強効果と異味(エグ味)改善(マスキング)効果を調べた。無水物換算で、塩化ナトリウムを0.75%、塩化カリウム(試薬)を0.75%共存させた水溶液を調製した。実験例1にならい、各種水溶性食物繊維を1.0%含有させたときの塩味およびエグ味が、対照(水溶性食物繊維無添加の0.75%塩化ナトリウム+0.75%塩化カリウム水溶液)と比較して、どう変化するかをパネルテストで判定した。パネラーは11名で、男性6名、女性5名の構成で、室温26℃にて行った。
塩味およびエグ味に及ぼす影響の判定は、対照に比べて各味が、著しく低減する、やや低減する、変化なし、やや増強、著しく増強の5段階で判定した。各々の水溶性食物繊維について、各段階の判定をしたパネラーの人数を表3-1、および表3-2に示す。
<塩化ナトリウムとグルタミン酸モノナトリウムを併用した場合の各水溶性食物繊維の塩味に及ぼす影響>
次に、塩化ナトリウムとともに、多くの飲食品物中で共存し得るグルタミン酸モノナトリウムが併存した場合の、各水溶性食物繊維の塩味増強効果を調べた。無水物換算で、塩化ナトリウムを1.5%、グルタミン酸モノナトリウムを0.2%共存させた水溶液を調製した。さらに実験例1にならい、各種水溶性食物繊維を1.0%含有させたときの塩味が、対照(水溶性食物繊維無添加の塩化ナトリウム1.5%+グルタミン酸モノナトリウム0.2%の溶液)と比較して、どう変化するかをパネルテストで判定した。パネラーは11名で、男性6名、女性5名の構成で、室温26℃にて行った。
塩味に及ぼす影響の判定は、対照に比べて塩味が、低減する、変化なし、やや増強、著しく増強の4段階で判定し、各々の水溶性食物繊維について、各段階の判定をしたパネラーの人数を表4に示す。
下記の配合および工程により、ポタージュスープを作製し、塩味について、パネルテストで判定した。パネラーは11名で、男性6名、女性5名の構成で、室温26℃、スープ温度は40℃で行った。塩味に及ぼす影響の判定は、対照の比較例1に比べて塩味が、低減する、変化なし、やや増強、著しく増強の4段階で判定した。各段階の判定をしたパネラーの人数を表6に示す。
原料を混合して90℃に達するまで加熱攪拌し、減量した水分を補正後、レトルトパウチに封入して120℃、20分間の殺菌を行った。
なお、比較例2及び実施例1には塩化ナトリウムを添加していないが、粉末コンソメ中には約34%の塩分(食塩換算)が含まれているので、塩味は保持されている。
また、比較例2及び実施例1の塩分を、それぞれ、(株)アタゴ製、デジタル塩分系ES-421を用いて測定したところ、両者とも0.5%となり、計測上の塩味は同等に保持されていることが確認された。
以下の配合および工程により、ハンバーガーバンズを作成し、物性や食味を確認した。配合表中の数値は、すべてベーカーズ%(小麦粉の合計質量を100%として、各成分の質量を小麦粉の合計質量に対する比で表した質量%)である。

下記の配合および工程により、ポタージュスープを作製し、エグ味について、パネルテストにより判定した。ポタージュスープは、グルタミン酸ナトリウム無添加の粉末コンソメを使用して作製し(比較例3-1、対照)、その中の塩化ナトリウムの一部を塩化カリウムで代替したもの(比較例3-2)、そこへ水溶性食物繊維(ファイバーソル2)を添加したもの(実施例3)を作製して、比較評価した。
パネラーは11名(男性6名、女性5名の構成)で、室温26℃、スープ温度は40℃で行った。
エグ味の判定は、対照の比較例3-1に比べて、エグ味がそれぞれ、効果的に低減する、やや低減する、変化なし、やや増強する、著しく増強する、の5段階で行った。各段階の判定をしたパネラーの人数を表7に示す。

下記配合および工程により、プロセスチーズを作製した。プロセスチーズを製造する際、成形性を向上させる目的で、乳化剤表示されるポリリン酸ナトリウムやクエン酸3ナトリウムが一般的に使用されるが、これらに由来するナトリウム量を低減させる目的で、クエン酸3カリウム等のカリウム塩に代替される場合がある。本実施例においては、クエン酸3ナトリウムを使用したプロセスチーズを対照とし(比較例4-1)、その配合中のクエン酸3ナトリウムの全てをリン酸3カリウムに置き換えたもの(比較例4-2)、そこへさらにファイバーソル2を添加したもの(実施例4)の塩味とエグ味について、パネルテストで判定した。
パネラーは11名(男性6名、女性5名の構成)で行った。
塩味とエグ味の判定は、対照の比較例4-1に比べ、塩味あるいはエグ味がそれぞれ、著しく低減する、やや低減する、変化なし、やや増強する、著しく増強する、の5段階で行った。各段階の判定をしたパネラーの人数を、塩味については表8に、エグ味については表9に示す。
上記配合表に示される割合で、ゴーダチーズ以外の原料を混合し、その後、粉砕したゴーダチーズを投入し、90℃で5分間攪拌、混合した。攪拌後、約7gに分割し、キャンディー型に成型してチーズとした。
市販の減塩醤油(キッコーマン株式会社、商品名「特撰丸大豆減塩醤油」、食塩約8%)に難消化性デキストリン(松谷化学工業株式会社、ファイバーソル2)を5%溶解させ、塩味を増強させた減塩醤油を調製した。本品は、ファイバーソル2無添加の減塩醤油と比較して、明らかに塩味かつ旨味が増強されており、減塩品でありながら、通常品と同様に煮物、惣菜、焼物、汁物などの調味に有利に利用でき、食品の風味を楽しむことができる。また、本品は循環器系疾病患者の治療促進、生活習慣病やメタボリックシンドロームの予防・改善、美容、健康の維持・増進などに有利に利用できる。
市販の減塩味噌(マルコメ株式会社、商品名「おいしく塩分1/2」、食塩約6.5%)にファイバーソル2を5%練り込み溶解させて、塩味を増強させた減塩味噌を調製した。本品は、減塩味噌と比較して明らかに塩味と旨味を増強していただけでなく、市販減塩味噌に食塩代替として添加されている塩化カリウムに起因する異味をも低減しており、減塩品でありながら通常品と同様に、煮物、惣菜、焼物、汁物などの調味に有利に利用でき、食品の風味を楽しむことができる。また、本品は循環器系疾病患者の治療促進、生活習慣病やメタボリックシンドロームの予防・改善、美容、健康の維持・増進などに有利に利用できる。
昆布とかつお節を使って、常法により調製しただし汁40質量部に対し、減塩醤油7質量部、ファイバーソル2を2質量部及びみりん10質量部を配合溶解して減塩麺つゆを製造した。また、ファイバーソル2を使用しなかった点を除いて、同様にして対照の減塩麺つゆを製造した。
対照の減塩麺つゆが食味がぼけているのに対し、本発明の減塩麺つゆは、塩化ナトリウムと難消化性デキストリンファイバーソル2とを含有し、塩から味とともに旨味を増強しており、減塩品でありながら、通常品と同様に麺の風味を楽しむことができる。
ファイバーソル2を80質量部、塩化カリウム10質量部、塩化カルシウム7質量部及び硫酸マグネシウム3質量部からなる塩味増強剤を300ml容振り出し口付容器に充填して卓上用塩味増強剤を得た。本品は、塩味が薄く食品がぼけて物足りなさを感じる各種飲食物に振りかけて、その塩味とともに旨味を増強し、満足のいく食味に仕上げることができる。
Claims (14)
- 水溶性食物繊維を飲食物に添加することを特徴とする飲食物の塩味改善方法。
- 塩味改善方法が、ナトリウム塩の塩味増強方法である請求項1記載の塩味改善方法。
- ナトリウム塩が、塩化ナトリウムである請求項2記載の塩味改善方法。
- 塩味改善方法が、カリウム塩のエグ味改善(マスキング)方法である請求項1記載の塩味改善方法。
- カリウム塩が、塩化カリウムである請求項4記載の塩味改善方法。
- 水溶性食物繊維が、難消化性デキストリン、分岐マルトデキストリン、イヌリン及びポリデキストロースからなる群から選択される1種以上である請求項1~5のいずれか1項記載の塩味改善方法。
- 水溶性食物繊維が、難消化性デキストリンである請求項6記載の塩味改善方法。
- 飲食物中の塩化ナトリウムの量が、無水物換算で、飲食物に対して0.5w/w%以上である請求項1~7のいずれか1項記載の塩味改善方法。
- 飲食物の塩化カリウムの塩化ナトリウムに対する代替率が、無水物換算で、50w/w%以下である請求項1~8いずれか1項記載の塩味改善方法。
- 水溶性食物繊維が、無水物換算で、飲食物に対して1.0w/w%以上の量で添加される請求項1~9のいずれか1項記載の塩味改善方法。
- 請求項1~10のいずれか1項記載の塩味改善方法によって塩味改善が図られた飲食物。
- 飲食物が、減塩飲食物である請求項11記載の飲食物。
- 水溶性食物繊維を含有してなる塩味改善剤。
- 水溶性食物繊維とともに、塩化ナトリウム、代替塩、他の塩味増強剤、ミネラル強化剤、旨味料および香辛料から選ばれる1種又は2種以上を含有してなる塩味改善剤。
