Abstract

 アミノ酸および/またはその誘導体を含有する塩味増強剤であって、上記アミノ酸は、L-ロイシンおよび/またはL-イソロイシンであることを特徴とする塩味増強剤に関する。これにより、飲食品の塩味を効果的に増強することができる塩味増強剤、それを含有する飲食品、および当該飲食品の製造方法を提供する。
