(本発明の用途)
本発明のシステムによって加工された食材を、焼く、煮る、揚げる、蒸す等の加熱調理で各種惣菜に仕上げた場合、加熱調理に要する時間が大幅に短縮される点は、食品加工上の大きな利点である。例えば、最終的にフライドチキンやトンカツなどの惣菜を製造する場合に、本発明のシステムで加工された食材を用いれば、揚げ時間を通常の加熱時間の半

野菜類の新鮮な市販品を洗浄し、必要に応じてカットした。これらを本発明の食材加工システムを用いて加温したものと、何の処理もしなかったものとの食感を比較した。結果を表1に示す。

Claims (15)
- 食材を間接的に加温する加温機構を備える加温部と、
該加温部によって加温された該食材を冷却する冷却機構を備える冷却部と、
該加温部および該冷却部を通って該食材を搬送する搬送部と
を備える、食材加工システム。 - 前記冷却機構は、前記食材を直接的に冷却するように構成される、請求項1に記載のシステム。
- 前記加温機構は、前記搬送部の下方に存在する、請求項1に記載のシステム。
- 前記加温部は送風機構を備える、請求項1〜3のいずれか1項に記載のシステム。
- 前記冷却部は送風機構を備える、請求項1〜4のいずれか1項に記載のシステム。
- 前記加温機構は、前記搬送部の搬送方向に沿って少なくとも2つの加温機構を含み、
