Abstract

Un procedimiento de preparación de una suspensión de harina de grano integral que comprende: a) dispersar la harina de grano integral en agua a una proporción de 1:1 a 1:50 a una temperatura de 87 a 99 ºC para obtener una mezcla de harina-agua; b) reducir la temperatura de la mezcla de harina-agua a 49-71 ºC; c) añadir una enzima para reducir la viscosidad de la mezcla de harina-agua y d) acidificar la mezcla de harina-agua para reducir el pH de la mezcla de harina-agua a menos de 5.
