Description
a) 40℃未満で、水性相の材料を混合するステップと、
b) 50℃を上回る温度、好ましくは70℃を超える温度で水性相を加熱するステップと、
c) 室温を上回る温度、好ましくは50℃以上の温度で、脂肪相にある水性相を乳化するステップと、
d) 室温を上回る温度で、油中水型エマルションを冷却するステップと、
e) 油中水型エマルションの油相に粒子を加えるステップ。
同じエマルションを実施例1のように作ったが、0.2%の水を、ある乳化剤(ステアリル乳酸ナトリウム)によって代替した。
Claims (10)
- 油中水型エマルションからなる低脂肪菓子製品であって、水性相が最終製品の少なくとも60%であり、脂肪相が最終製品の最大20%であり、前記油中水型エマルションは、ココア粒子及び少なくとも一つの構造化剤を更に含む、低脂肪菓子製品。
- 6〜15%脂肪相及び60〜90%水性相、好ましくは、6〜13%脂肪相及び60〜85%水性相を含む、請求項1に記載の低脂肪菓子製品。
- 前記構造化剤が、多糖類及びタンパク質類からなる群から選ばれ、又はその両方である、請求項1又は2に記載の低脂肪菓子製品。
- 前記構造化剤がカラゲナンであり、0.5〜4%の量で存在する、請求項1〜3のいずれか一項に記載の低脂肪菓子製品。
- 乳化剤がPGPR又は低HLBショ糖エステルであり、0.5〜3%の量で存在する、請求項1〜4のいずれか一項に記載の低脂肪菓子製品。
- 前記脂肪相に分散されている5〜30%の粒子を含む、請求項1〜5のいずれか一項に記載の低脂肪菓子製品。
- 300kcal/100g以下のカロリー含有量を有する、請求項1〜6のいずれか一項に記載の低脂肪菓子製品。
- SSLを含む、請求項1〜7のいずれか一項に記載の低脂肪菓子製品。
- 共懸濁液を更に含む、請求項1〜8のいずれか一項に記載の低脂肪菓子製品。
- 請求項1〜9のいずれか一項に記載の低脂肪菓子製品の製造方法であって、
a)40℃未満で、水性相の材料を混合するステップと、
b)50℃を上回る温度、好ましくは70℃を超える温度で水性相を加熱するステップと、
c)室温を上回る温度、好ましくは50℃以上の温度で、脂肪相にある水性相を乳化するステップと、
d)室温を上回る温度で、油中水型エマルションを冷却するステップと、
e)脂肪相に粒子を加えるステップと
を含む、製造方法。
