Abstract
1293476 Sugar products; dispersible foods; cocoa A SCHAPIRO 31 Dec 1970 [31 Dec 1969 12 Nov 1970] 62026/70 Headings A2B and A2E A sugar product comprising sugar crystals coated with an oil-soluble surface-active agent is mixed with a water-insoluble or difficult-todissolve food product to form a product which is readily dispersible in water or an aqueous medium, e.g. milk. The dispersible product may be mixed with sugar syrup prior to dispersing. The sugar product may be formed by mixing sugar with the surface-active agent dissolved in oil (e.g. coconut oil, cottonseed oil, cocoa butter), alcohol or ether to form a dry product or paste which paste may if desired, be mixed with more sugar prior to use. The sugar product may comprise an agglomerate of sugar-crystals. The food product may be cocoa or one or more proteins (e.g. soybean protein, casein, calcium, sodium or potassium caseinate, seed meal protein or fish protein). The sugar may be sucrose, dextrose, fructose, lactose, levulose, corn syrup solids or mixtures thereof. The surface active agent may be lecithin, hydroxylated lecithins, refined phospholipids, polyoxyethylene sorbitan fatty acid esters, sorbitan fatty acid esters, propylene glycol mono-laurate and-stearate, glycerol mono-stearate and-oleate, safflower monoglycerides, polyoxyethylene nonyl phenol adducts, polyethylene glycol laurates, stearates and oleates, polyoxyethylene ethers, lauric and stearic diethanolamides, phosphotidyl choline glycerides, inositol phosphatides, cephalin fractions, sodium stearoyl-2-lactylate. dioctyl sodium sulphosuccinate and di-acetyl sodium sulphosuccinate.
