Abstract

A powdered dessert composition adapted for dispersion in an aqueous medium comprises gelatin in an amount effective to set the composition on dispersion, a dried emulsion of fat encapsulated in a hydrophilic edible proteinaceous material, for example non-fat milk solids or sodium caseinate, and an emulsifier for the fat. Carbohydrate material may be mixed with the proteinaceous material. The emulsifier may be an edible partial ester of a glycol and a C12-C22 saturated fatty acid, and may additionally contain lecithin. The composition may be prepared by drying an aqueous slurry of the fat, emulsifier, and encapsulating material, the gelatin being added either before or after drying.
