Abstract
1375912 Milk substitute MORINAGA MILK INDUSTRY CO Ltd 24 March 1972 [30 Aug 1971 29 Dec 1971] 13793/72 Heading A2B [Also in Division C3] A process for preparing a casein concentrate which may be used as infant milk substitute, comprises dissolving in a casein solution a carboxylate and/or a polyhposphate in an amount corresponding to the formula: log y=0.384x + (0.80 Œ 0.35) wherein y is the weight in mg. of carboxylate, and/or polyphosphate per gram of casein, mixing therewith at below 50‹C an aqueous solution of a calcium salt in such an amount that the mixture contains 10-40 mg. of Ca ion per gram of casein wherein x in the above expression is the weight in mg. of calcium ions added per g of casein, adjusting the pH tc 6.2-6.8 and heating with stirring to at least 65‹C to form casein micelle, adding an emulsifier and nutrients (see below) to the micelle, homogenising, pasteurising, concentrating and drying the micelle. Preferably the casein is dissolved by alkali and the carboxylate, e.g. lactate, tartrate succinate or citrate or polyphosphate, e.g. pyrophosphate, meta-phosphate, polymetaphosphate or tetraphosphate is a potassium salt and the emulsifier is a glycerol fatty acid ester, sucrose fatty acid ester, sorbitan fatty acid ester, propylene glycol fatty acid ester or soy bean lecithin and animal or vegetable fats, carbohydrates, vitamins or lactose are added as nutrients. Exemplified compositions comprise lactic acid casein together with K 3 PO 4 , K 2 CO 3 , potassium citrate, CaCl 2 , MgCl 2 , ferrous lactate and other additives including sucrose, NaCl, refined vegetable fat, Vitamin A Oil, Vitamin B 2 , Vitamin B 12 , Vitamin D 2 , Vitamin E Oil, Nicotinamide, Folic acid, Vitamin A acetate, Vitamin B 6 , Vitamin C, Calcium pantothenate, Cystine, malt dextrine powder, Vitamin A acetate, and Vitamin B 1 nitrate.
