1398355 Pudding mix UNILEVER Ltd 19 March 1974 [22 March 1973] 13830/73 Heading A2B A dry composition for use in preparing an instant pudding by mixing with milk comprises a pudding stiffening agent such as pregelatinised starch, a phosphate gelling agent, and a fat-containing component comprising a spraydried mixture of emulsified fat, water-dispersible protein, and an emulsifier comprising a glycerol diester having a C 12-24 fatty acid radical and an acetyl radical; for example, an acetylated monoglyceride. Also present may be a sweetener such as malto dextrin, and milk powder.
