Abstract
【解決手段】 緑茶抽出物を配合した容器詰飲料であって、次の成分(A)及び(B)
(A)非重合体カテキン類 0.01〜1.0重量%、
(B)炭水化物 グルコース換算量0.0001〜20重量%、
フルクトース換算量0.05重量%未満
を含有し、pHが2〜6である容器詰飲料。

を含有し、pHが2〜6である容器詰飲料を提供するものである。
また、蓄積体脂肪燃焼促進、食事性脂肪燃焼促進及び肝臓β酸化遺伝子発現促進の効果を出すための成人一日当りの摂取量としては、非重合体カテキン類として300mg以上、好ましくは450mg以上、更に好ましくは500mg以上がよいとされている。また具体的には飲料一本あたり483mg、555mg及び900mg等の摂取によって抗肥満効果や内臓脂肪低減効果が確認されている(特開2002−326932号公報)。
したがって本発明の容器詰飲料においても成人一日当りの摂取量としては、非重合体カテキン類として300mg以上、好ましくは450mg以上、更に好ましくは500mg以上がよく、一日当りの必要摂取量を確保する意味からも、本発明の容器詰飲料1本(350〜500mL)当り300mg以上、好ましくは450mg以上、更に好ましくは500mg以上の配合量があるものが良い。
05重量%未満である。この範囲にあると、強烈な苦味、渋味、強い収斂性が生じなく、苦味、渋味が低減され長期間の飲用に適し、また苦味、渋味の安定性及び喉越しに優れる。特にフルクトース換算量が0.05重量%以上になると、カテキン含有飲料の温度変化に伴う風味変化が著しく好ましくない。また、グルコース換算量が20重量%よりおおくなると、色調の安定性が悪くなる。
トレハロースなどの糖アルコール、グリチルリチン、合成アルコキシ芳香族化合物等がある。ステビノシド及び他の天然源の甘味料も使用できる。
甘味料の組み合わせは、人工甘味料単独系か、又は人工甘味料とグルコース系との組み合わせがより好ましい。フルクトースを0.05重量%以上含む系であると、本飲料において、高温保存時に舌に張りつくような渋味の残留感が強くなり好ましくない。
量%、特に0.003〜0.12重量%本発明飲料中に含有させることが好ましい。 同様に、ナトリウムイオン成分は、塩化ナトリウム、炭酸ナトリウム、炭酸水素ナトリウム、クエン酸ナトリウム、リン酸ナトリウム、リン酸水素ナトリウム、酒石酸ナトリウム、安息香酸ナトリウム等及びそれらの混合物のような容易に入手しうるナトリウム塩として、あるいは果汁又は茶の成分として配合できる。ナトリウム濃度は浸透圧による水の吸収を容易にさせる上で低い方が望ましいが、体から腸に水を浸透圧吸引しない程度であることが、本発明では重要である。これを行うために必要なナトリウムの濃度は、血漿ナトリウムの場合よりも低いことが好ましい。ナトリウムイオンは、0.001〜0.5重量%、更に0.002〜0.4重量%、特に0.003〜0.2重量%本発明の飲料中に含有させるのが好ましい。カリウム及びナトリウムイオンに加えて、本発明飲料には好ましくは0.001〜0.5重量%、より好ましくは0.002〜0.4重量%、特に好ましくは0.003〜0.3重量%の塩化物イオンを更に含有させることができる。塩化物イオン成分は塩化ナトリウム又は塩化カリウムのような塩として供給できる。カルシウム及びマグネシウム、亜鉛、鉄のような他の微量イオンを配合してもよい。これらのイオンも塩として配合してよい。存在するイオンの合計量には、添加したイオン量と共に、飲料中に天然で存在する量を含む。例えば、塩化ナトリウムが添加されると、その量のナトリウムイオン及びその量の塩化物イオンも、それに応じて各イオンの合計量に含まれる。ここで、ナトリウムイオンやカリウムイオン濃度が少なすぎると、飲む場面によっては味的に物足りなく感じ、効果的なミネラル補給ができなくて好ましくない。一方、多すぎると、塩類自体の味が強くなり長期間の飲用に好ましくない。
シュウ酸が、飲料に含まれる茶由来成分ならびに配合成分と相互作用して沈殿を起こす場合があるため、容器詰飲料において、シュウ酸は非重合体カテキン類(A)に対して0.2以下の含有重量比であることが好ましい。[(C)/(A)]がこの範囲にあると、本発明容器詰飲料において、沈澱が起こりにくくなるので、製品の外観上好ましい。本発明での(C)シュウ酸又はその塩は、緑茶抽出物、香料、果汁及び他の成分中に天然で存在するシュウ酸又はその塩と、新たに加えられたシュウ酸、又はその塩とを含んでいる。

非茶系容器詰飲料としては、例えばソフトドリンクである炭酸飲料、果汁エキス入り飲料、野菜エキス入りジュースやニアウォーター、スポーツドリンク、ダイエット飲料等が挙げられる。
フィルター(0.8μm)で濾過し、次いで蒸留水で希釈した容器詰めされた飲料を、島津製作所製、高速液体クロマトグラフ(型式SCL−10AVP)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム L−カラムTM ODS(4.6mm×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃でグラジエント法により行った。移動相A液は酢酸を0.1mol/L含有の蒸留水溶液、B液は酢酸を0.1mol/L含有のアセトニトリル溶液とし、試料注入量は20μL、UV検出器波長は280nmの条件で行った。
日本ダイオネックス社製(形式DXAQ1110)にカラム:IonPacAS4A−SC、4×250mmを装着し、サプレッサーASRS−ULTRA(ダイオネックス社製)に接続し、リサイクルモードで行った。移動相は1.8mmol/L、Na2CO3を1.7mmol/L、NaHCO3を1.0mL/minで流し、試料注入量は25μLとした。検出器は電気伝導度計を使用した。
次の(1)により遊離のフルクトース、グルコース及びショ糖を測定し、また(2)により加水分解後のフルクトース及びグルコースを測定し、これらの測定値からグルコース換算量及びフルクトース換算量を求めた。
検体を採取し、水を加えて中和し、妨害物質を除去した後メンブランフィルター(孔径0.45μm)で濾過したものを試験溶液とし、次の条件でHPLCにより測定した。

検出器:示差屈折計 RID−10A(島津製作所(株))
カラム:Wakosil 5NH2 φ4.6mm×250mm(和光純薬工業(株))
検体を採取し、塩酸加水分解し、冷却後濾過(No.5B)し、次いでメンブランフィルター(孔径0.45μm)で濾過したものを試験溶液とし、次の条件でHPLCにより測定した。

検出器:蛍光分光光度計 RF−10AXL(島津製作所(株))
カラム:TSKgel SUGAR AXI φ4.6mm×150mm(東ソー(株))
原子吸光光度法(塩酸抽出)
試料5gを10%塩酸(定溶時に1%塩酸溶液になるように)に入れ、その後イオン交換水で定溶し吸光度測定を行った。
波長:589.6nm
フレーム:アセチレン−空気

試料5gを10%塩酸(定溶時に1%塩酸溶液になるように)に入れ、その後イオン交換水で定溶し吸光度測定を行った。
表1に示す成分を混合して、所定の後処理を行い、容器詰飲料を製造した。
表1中、NDは検出できなかったことを示す。
緑茶抽出物の濃縮物としてポリフェノンHG(東京フードテクノ社製)100gを常温、250r/min攪拌条件下の95%エタノール水溶液490.9g中に懸濁させ、活性炭クラレコールGLC(クラレケミカル社製)20gと酸性白土ミズカエース#600(水澤化学社製)35gを投入後、約10分間攪拌を続けた。そして40%エタノール水溶液409.1gを10分間かけて滴下したのち、室温のまま約30分間の攪拌処理を続けた。その後、2号濾紙で活性炭及び沈殿物を濾過したのちに0.2μmメンブランフィルターによって再濾過を行った。最後にイオン交換水200gを濾過液に添加して、40℃、0.0272kg/cm2でエタノールを留去し製品を得た。
処理後の非重合体カテキン類は22重%含有。
処理後のシュウ酸/非重合体カテキン類重量比=0.01
表1にあげる代表的なスポーツドリンク処方で各成分を配合し、イオン交換水でメスアップし調合液を調製した。食品衛生法に基づく殺菌工程、ならびにホットパック充填を行い、容器詰飲料とした。飲料の成分値もあわせて示した。本発明の目的である苦味、渋味が低減され長期間の飲用に適した味かどうか評価を行った。30名の男性モニターを用い、1日につき500mLの飲用を1ヶ月間続けてもらい、1ヶ月連飲後の評価を以下の基準で評点をつけさせた。冷蔵所で保管しているものを試験に用いた。

飲料の色調の安定性については、500mL容量の透明PETボトル容器に充填して調製した飲料を55℃で1ヶ月保存しておき、保存前後での飲料の色調変化を、10名のパネラーに目視で以下の基準で評点をつけさせた。
A 変化しない
B やや変化する
C 変化する
D 大きく変化する
Claims (9)
- 緑茶抽出物を配合した容器詰飲料であって、次の成分(A)及び(B)
(A)非重合体カテキン類 0.01〜1.0重量%、
(B)炭水化物 グルコース換算量0.0001〜20重量%、
フルクトース換算量0.05重量%未満
を含有し、pHが2〜6である容器詰飲料。 - 飲料が非茶系飲料である請求項1記載の容器詰飲料。
- 更にナトリウムイオン0.001〜0.5重量%、及びカリウムイオン0.001〜0.2重量%を含有する請求項1又は2記載の容器詰飲料。
- pHが2〜5である請求項1〜3のいずれか1項記載の容器詰飲料。
- 更にシュウ酸、又はその塩を含有し、(C)シュウ酸、又はその塩と(A)非重合体カテキン類との含有重量比[(C)/(A)]が0.2以下である請求項1〜4のいずれか1項記載の容器詰飲料。
- 原料緑茶抽出物が、固形分中に非重合体カテキン類を20〜90重量%含有する緑茶抽出物の濃縮物を、(C)シュウ酸、又はその塩と(A)非重合体カテキン類との含有重量比[(C)/(A)]が0.2以下になるように調整したものである請求項1〜5のいずれか1項記載の容器詰飲料。
- (C)シュウ酸、又はその塩と(A)非重合体カテキン類との含有重量比[(C)/(A)]が0.05以下である請求項5記載の容器詰飲料。
- 非重合体カテキン類として1日300mg以上摂取できる形態である請求項1〜7のいずれか1項記載の容器詰飲料。
- 透明容器に充填されたものである請求項1〜8のいずれか1項記載の容器詰飲料。
