Description
本出願は、2016年10月18日に出願された米国仮特許出願第62/409,748号の利益を主張する。
本発明は、現在消費者が入手可能なスクロース含有飲料又は高フルクトースコーンシロップ含有飲料の甘味、カロリー及び満腹感によく合うが、それらの飲料に関連する脂肪肝疾患及び代謝疾患などの様々な疾患状態を改善するのに役立つ飲料に関する。
以降でより詳細に説明するように、公衆衛生に悪影響を及ぼさない甘味付けされた炭酸飲料(「ソーダ」又は「清涼飲料水」)及び他の飲料を開発することが急務である。米国では、年間で何百万缶ものソーダが消費されており、これらの飲料は、スクロース又は高フルクトースコーンシロップ(HFCS)の1種のいずれかで甘くされている。
本発明の1つの態様では、開示されている口当たりの良い甘味付けされた飲料は、フルクトース及び/又はスクロースを本質的に含まない甘味料系を含む。更に、これは、ほとんど又は全く味の違和感及びいつまでも残る後味なしに、好ましい味のプロファイル及び満腹報酬を提供する。本明細書で提示されるフルクトースフリーの技術は、過度の代謝ストレスから肝臓を保護することにより、メタボリックシンドローム、肥満及び糖尿病のリスクの改善を助ける。
本明細書において使用される「外因性風味源」とは、それからグルコース及び/又は高甘味度甘味料が得られるもの以外の供給源から得られるヒトの味蕾によって感知可能な風味料である。
ステビオシド及びグルコースにより甘味付けされた非発泡性飲料
グルコース、スクロース及びステビアは、ACS試薬グレードの化合物であった。これらの甘味料を水(Millipore)に溶解し、20℃に維持した。互変異性体の完全な変旋光を可能にするために、使用の少なくとも24時間前に全ての溶液を調製した。
ステビオシド及びグルコースにより甘味付けされた炭酸飲料
実施例1の通りであるが、0.6Mのグルコース及び0.75mMのステビオシドを含有する試験溶液を調製した。製品の説明書に従って使用した市販の炭酸化装置(SodaStreamTM)を用いて溶液を炭酸化した。炭酸化により溶液間の甘味の違いが増幅されることが判明したため、ステビオシドの濃度を0.75ミリモルに増加させた。参照溶液は、0.32Mのスクロースを含んでいた。
甘味識別試験
最初の試験は、グルコース及び高甘味度甘味料ステビオシド(実施例1のもの)を含む、口当たりが良いフルクトースを含まない非炭酸化混合物を、非炭酸化スクロースの等カロリー溶液から味により識別できるか否かを決定するために行った。
ストック着色料溶液の調製(Ternatea法)
25gの乾燥したチョウマメ(Clitoria Ternatea)の花を500mlの逆浸透(Millipore)濾過水に入れた。20分間沸騰させた後、更に500ml添加し、更に10分間沸騰させた。抽出物を、数層のチーズクロスを通して滅菌瓶内へ濾過してから冷ました。この濃縮抽出物は、ストック着色料水溶液である。ストック着色料溶液は、直ちに使用することができるか、又は使用まで2~8℃で保存することができる。
異なるpHのソーダシロップの調製
1リットルのpH3.1のソーダシロップの組成は、次の通りであった:3.04Mのグルコース、0.0005Mのスクラロース、12gのクエン酸、5gのグルコン酸ナトリウム、40滴のビビッドワイルドラズベリー、20滴のビビッドタンジェリン及び10滴のビビッドレモンジュース。
ピンク/紫色ソーダの調製
200mlのpH3.1のソーダシロップを大さじ1杯(15グラム)のストック着色料水溶液と混合することにより、ピンク/紫色ソーダを調製した。逆浸透濾過水を使用して混合物を1000mLに希釈した。この溶液をSoda Stream炭酸化装置を使用して炭酸化し、その後、蓋をした12オンスの滅菌した瓶内に保管した。
青色ソーダの調製
200mlのpH3.1のソーダシロップを大さじ1杯(15グラム)のストック着色料水溶液と混合することにより、ピンク/紫色ソーダを調製した。逆浸透濾過水を使用して混合物を1000mLに希釈した。この溶液をSoda Stream炭酸化装置を使用して炭酸化し、その後、蓋をした12オンスの滅菌した瓶内に保管した。

Claims (17)
- フルクトースを本質的に含まず(<0.002M)、外因性甘味系を含む飲料であって、前記外因性甘味系が、(i)0.1~0.7モーラー濃度のアルドヘキソースD-グルコース、(ii)0.1~1.0ミリモーラー濃度のフルクトース非生成高甘味度甘味料を含む、飲料。
- 炭酸飲料である、請求項1に記載の飲料。
- 非発泡性飲料、ジュース、飲料水、茶飲料、小袋から得られる飲料、シロップミックスから得られる飲料又は濃縮液若しくはシロップから得られる飲料である、請求項1に記載の飲料。
- 0.6モル以下のアルドヘキソースD-グルコースを含み、前記フルクトース非生成高甘味度甘味料は、ステビオシドである、請求項1~3のいずれかに記載の飲料。
- 0.6モル以下のアルドヘキソースD-グルコースを含み、前記フルクトース非生成高甘味度甘味料は、レバウジオシド、モグロシド、スクラロース、アセスルファム-K、チクロ、アスパルテーム又はこれらの組み合わせである、請求項1~3のいずれかに記載の飲料。
- 前記フルクトース非生成高甘味度甘味料は、レバウドシドA、レバウドシドB、レバウドシドC、レバウドシドD、レバウドシドE、レバウドシドF及びレバウドシドMからなる群から選択されるレバウドシドである、請求項5に記載の飲料。
- グルコース対フルクトース非生成高甘味度甘味料のモル比は、200/1~3000/1の範囲内である、請求項1~6のいずれかに記載の飲料。
- 0.6モーラーのアルドヘキソースD-グルコース及び0.75ミリモーラーのステビオシドのフルクトース非生成高甘味度甘味料を含む炭酸飲料であって、前記飲料がフルクトースを本質的に含まない、請求項1に記載の飲料。
- 0.6モーラーのアルドヘキソースD-グルコース及び0.25ミリモーラーのステビオシドのフルクトース非生成高甘味度甘味料を含む非発泡性飲料である、請求項1に記載の飲料。
- チョウマメ(C. Ternatea)から得られる着色料を更に含み、2.7~4.3のpHに調整される炭酸飲料又は非発泡性飲料である、請求項5又は6に記載の飲料。
- グルコースをベースとする糖ポリマーをさらに含む、請求項1~10のいずれかに記載の飲料。
- 前記グルコースをベースとする糖ポリマーは、マルトース、トレハロース、マルトオリゴ糖若しくはイソマルトオリゴ糖又はこれらの組み合わせからなる群から選択される、請求項11に記載の飲料。
- 非合成着色料をさらに含む、請求項1~12のいずれかに記載の飲料。
- 前記非合成着色料は、
(a)Ternatea法由来の青色着色料、
(b)Ternatea法由来の紫色着色料であり、ここで、pHは、クエン酸塩緩衝液若しくはリンゴ酸、酒石酸、リン酸及びアスコルビン酸の塩を含む緩衝液又はこれらの組み合わせを使用して5.4よりも上に調整される、
(c)ヤムイモから得られるオレンジ色風味料、
(d)水溶性パプリカから得られる赤色風味料、及び/又は、
(e)ホウレンソウ、フダンソウ、カラードグリーン、マスタードグリーン、カブラ菜、エンダイブ又はこれらの組み合わせから得られる緑色風味料,
である、請求項13に記載の飲料。 - 前記非合成着色料は、風味料でもある、請求項14に記載の飲料。
- 風味料をさらに含む、請求項1~12のいずれかに記載の飲料。
- 前記風味料は、
(a)水溶性トウガラシ又はカプサイシノイド、
(b)冷水で抽出されたチリ品種由来の風味料、
(c)ブルーアガベのサボテン風味、
(d)ライム、レモン、オレンジ、タンジェリン、ラズベリー、リンゴ、洋ナシ、モモ、ブラックベリー若しくはイチゴの果実又はこれらの組み合わせから得られる風味料、
(e)オリーブから得られるオレオカンタール又はオレアシン、
である、請求項16に記載の飲料。
