糖類濃度を上記範囲に調整するには、茶葉の乾燥(火入)加工や抽出を適宜条件にして調整することができる。例えば、茶葉の乾燥(火入)加工を強くすると糖類は分解されて減少し、また、高温で長時間抽出すると糖類は分解されて減少する。しかるに、茶葉の乾燥(火入)条件と、抽出条件により、糖類濃度を調整することができる。
この際、糖類を添加して調整することも可能であるが、緑茶飲料本来の香味バランスが崩れるおそれがあるため、糖を添加することなく、茶抽出液を得るための条件を調整する他、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
かかる観点から、単糖の濃度に対する二糖の濃度の比率(二糖/単糖)は、好ましくは11~25、特に好ましくは15~22である。
単糖の濃度に対する二糖の濃度の比率を上記範囲に調整するには、茶葉の乾燥(火入)加工や抽出を適宜条件にして調整することができる。例えば、茶葉に乾燥(火入)加工を施すと、先ず単糖が減少し、次に二糖が減少していくため、茶葉に強く乾燥(火入)加工を施し、高温短時間で抽出することで、二糖/単糖の比率を高めることができる。
この際、糖類を添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
総カテキン類濃度は、特に200ppm~500ppmであるのがより好ましく、中でも特に250ppm~400ppmであるのがさらに好ましい。
なお、カテキン濃度が高すぎると、香りが目立なくなるため、香りを特に重視する場合には、総カテキン類濃度は380ppm以下、特に350ppm以下であるのが好ましい。
この際、総カテキン類とは、カテキン(C)、ガロカテキン(GC)、カテキンガレート(Cg)、ガロカテキンガレート(GCg)、エピカテキン(EC)、エピガロカテキン(EGC)、エピカテキンガレート(ECg)及びエピガロカテキンガレート(EGCg)の合計8種の意味であり、総カテキン類とは8種類のカテキン濃度の合計値の意味である。
総カテキン類濃度を上記範囲に調整するには、抽出条件で調整するようにすればよい。
この際、カテキン類を添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
電子局在カテキン濃度は、特に160ppm~420ppmであるのがより好ましく、中でも特に205ppm~350ppmであるのがさらに好ましい。
なお、本発明でいう「電子局在カテキン」とは、トリオール構造(ベンゼン環にOH基が3基隣り合う構造)を有し、イオン化したときに電荷の局在が起こりやすいと考えられるカテキンであり、具体的には、エピガロカテキンガレート(EGCg)、エピガロカテキン(EGC)、エピカテキンガレート(ECg)、ガロカテキンガレート(GCg)、ガロカテキン(GC)、カテキンガレート(Cg)などがある。
電子局在カテキン濃度を上記範囲に調整するには、抽出条件で調整すればよいが、抽出時間や温度で変化しやすいため、温度が高すぎたり、抽出時間が長すぎたりするのは、飲料の香気保持の面からも好ましくない。この際、電子局在カテキンを添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
かかる観点から、糖類濃度に対する電子局在カテキン濃度の比率(電子局在カテキン/糖類)は、1.2~2.3であるのが特に好ましく、中でも1.5~1.8であるのがさらに好ましい。
糖類濃度に対する電子局在カテキン濃度の比率を上記範囲に調整するには、抽出条件で可能であるが、カテキンは高温での抽出率が高まるが、高温状態により糖類は分解しやすい為、抽出時間は短いほうが好ましい。この際、電子局在カテキン及び糖類を添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
カフェイン濃度を上記範囲に調整するには、抽出条件を調整するようにすればよい。この際、カフェインを添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
カフェイン濃度に対する総カテキン類濃度の比率は、1.3~4.0であるのがより好ましく、特に2.0~4.0であるのがさらに好ましい。
カフェイン濃度に対する総カテキン類濃度の比率を上記範囲に調整するには、茶葉量、抽出温度により調整できる。この際、総カテキン類及びカフェインを添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
本容器詰緑茶飲料の茶葉由来の可溶性固形分の濃度は、0.19%~0.40%であるのがより好ましく、中でも特に0.20%~0.25%であるのがさらに好ましい。
茶葉由来の可溶性固形分の濃度を上記範囲に調整するには、茶葉量と抽出条件で適宜調整できる。
茶葉由来の可溶性固形分濃度に対する糖類濃度の比率を上記範囲に調整するには、茶葉量を増やすことにより固形分濃度を高めることができ、原料茶の乾燥条件により比率を調整することができる。この際、糖類を添加して調整することも可能であるが、緑茶飲料のバランスが崩れるおそれがあるため、茶抽出液を得るための条件を調整するほか、茶抽出液どうしの混合、或いは茶抽出物の添加などによって調整するのが好ましい。
本容器詰緑茶飲料を充填する容器は、特に限定するものではなく、例えばプラスチック製ボトル(所謂ペットボトル)、スチール、アルミなどの金属缶、ビン、紙容器などを用いることができ、特に、ペットボトルなどの透明容器等を好ましく用いることができる。
本容器詰緑茶飲料は、例えば、茶葉原料の選定と共に、茶葉の乾燥(火入)加工や抽出の条件を適宜調整して、飲料中の単糖の濃度と二糖の濃度とを合わせた糖類濃度を100ppm~300ppmに調整し、且つ、単糖の濃度に対する二糖の濃度の比率(二糖/単糖)を10~28に調整することにより製造することができる。例えば、茶葉を280℃~330℃で乾燥(火入)加工し、その茶葉を高温短時間で抽出した抽出液と、従来一般的な緑茶抽出液、すなわち茶葉を80℃~150℃で乾燥(火入)加工し、その茶葉を低温長時間で抽出した抽出液とを用意し、これらを適宜割合で配合することにより、本容器詰緑茶飲料を製造することができる。但し、このような製造方法に限定されるものではない。
本発明において「緑茶飲料」とは、茶を抽出して得られた茶抽出液乃至茶抽出物を主成分とする飲料の意である。
また、「容器詰緑茶飲料」とは、容器に詰めた緑茶飲料の意であるが、同時に希釈せずに飲用できる緑茶飲料の意味でもある。
なお、実施例において「単糖の濃度」とは、グルコース(ブドウ糖)及びフルクトース(果糖)の濃度合計の意味であり、「二糖の濃度」とは、スクロース(蔗糖)、セロビオース及びマルトース(麦芽糖)の濃度合計の意味である。
以下の抽出液A~Dを作成し、これらを用いて実施例1~3及び比較例1~6の緑茶飲料を作製し、その官能評価を行なった。
摘採後の茶葉(やぶきた種、静岡県産1番茶)を、荒茶加工し、回転ドラム型火入機で設定温度90℃、乾燥時間30分の条件にて乾燥加工(火入加工)を施し、その茶葉を、茶葉5g、90℃の熱水1L、抽出時間3分の条件にて抽出した。この抽出液をステンレスメッシュ(20メッシュ)で濾過して茶殻を取り除いた後、さらに、ステンレスメッシュ(80メッシュ)で濾過し、その濾液を、SA1連続遠心分離機(ウエストファリアー社製)を用いて流速300L/h、回転数10000rpm、遠心沈降液面積(Σ)1000m2の条件にて遠心分離し、抽出液Aを得た。
摘採後の茶葉(やぶきた種、静岡県産1番茶)を、荒茶加工し、回転ドラム型火入機で設定温度90℃、乾燥時間30分の条件にて乾燥加工(火入加工)を施し、その茶葉を、茶葉12g、90℃の熱水1L、抽出時間5分の条件にて抽出した。この抽出液をステンレスメッシュ(20メッシュ)で濾過して茶殻を取り除いた後、さらに、ステンレスメッシュ(80メッシュ)で濾過し、その濾液を、SA1連続遠心分離機(ウエストファリアー社製)を用いて流速300L/h、回転数10000rpm、遠心沈降液面積(Σ)1000m2の条件にて遠心分離し、抽出液Bを得た。
摘採後の茶葉(やぶきた種、静岡県産1番茶)を、荒茶加工し、回転ドラム型火入機で設定温度280℃、乾燥時間10分の条件にて乾燥加工(火入加工)を施し、その茶葉を、茶葉20g、90℃の熱水1L、抽出時間5分の条件にて抽出した。この抽出液をステンレスメッシュ(20メッシュ)で濾過して茶殻を取り除いた後、さらに、ステンレスメッシュ(80メッシュ)で濾過し、その濾液を、SA1連続遠心分離機(ウエストファリアー社製)を用いて流速300L/h、回転数10000rpm、遠心沈降液面積(Σ)1000m2の条件にて遠心分離し、抽出液Cを得た。

上記各抽出液の1/10量を量り取り、アスコルビン酸を400ppm添加した後、重曹を添加してpH6.2に調整し、イオン交換水を加えて全量を100mlに調整し、この液を耐熱性の透明容器(ビン)に充填して蓋をし、30秒間転倒殺菌し、レトルト殺菌F0値9以上(121℃、9分)を行い、直ちに20℃まで冷却した溶液を測定し、各抽出液の成分を分析した。
その分析結果を下記表1に示す。なお測定方法は下記に示すのと同様である。
抽出液A~Dを、以下の表2に示す割合で配合し、アスコルビン酸を400ppm添加した後、重曹を添加してpH6.2に調整し、イオン交換水を加えて全量を1000mlに調整し、この液を耐熱性の透明容器(ビン)に充填して蓋をし、30秒間転倒殺菌し、レトルト殺菌F0値9以上(121℃、9分)を行い、直ちに20℃まで冷却し、実施例1~3及び比較例1~6の緑茶飲料を作製した。
実施例1~3及び比較例1~6の緑茶飲料の成分及びpHを以下に示したとおり測定した。その結果を上記表3に示す。

実施例1~3及び比較例1~6の緑茶飲料を用い、鼻に抜ける香り立ち、後味(エグミと淡白)、色調(赤み等)について評価した。
実施例1~3及び比較例1~6の緑茶飲料(温度25℃)を、5人の熟練した審査官に、まず、液色を目視で観察してもらった。次に、試飲してもらい、以下の評価で点数を付け、5人の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。これらの結果を、上記表3に示す。

上記3つの評価試験の平均点を算出し、平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として総合評価した。
実施例1~3は、いずれも総合評価「○」以上の評価であり好適な結果が得られた。
一方、比較例1~3は「△」、比較例4~6は「×」の評価であり、好ましくない結果であった。
これら結果から、糖類濃度は100ppm~300ppm、単糖の濃度に対する二糖の濃度の比率(二糖/単糖)は10~28の範囲が、鼻に抜ける香り立ち、後味、色調が良好になる範囲であると想定され、これらがこの範囲にある緑茶飲料は、火香(こうばしい香り)が強く、薄い味ではなく、しかもさっぱりとした後味を備えたものになることが見出せた。
以下の抽出液E,Fを作成し、これらを用いて実施例4~8の緑茶飲料を作製し、経時後の官能評価を行った。
摘採後の茶葉(やぶきた種、静岡県産1番茶)を、荒茶加工し、回転ドラム型火入機で設定温度300℃、乾燥時間8分の条件にて乾燥加工(火入加工)を施し、その茶葉を、茶葉8g、80℃の熱水1L、抽出時間3分の条件にて抽出した。この抽出液をステンレスメッシュ(20メッシュ)で濾過して茶殻を取り除いた後、さらに、ステンレスメッシュ(80メッシュ)で濾過し、その濾液を、SA1連続遠心分離機(ウエストファリアー社製)を用いて流速300L/h、回転数10000rpm、遠心沈降液面積(Σ)1000m2の条件にて遠心分離し、抽出液Eを得た。
摘採後の茶葉(やぶきた種、静岡県産1番茶)を、荒茶加工し、回転ドラム型火入機で設定温度330℃、乾燥時間1分の条件にて乾燥加工(火入加工)を施し、その茶葉を、茶葉12g、80℃の熱水1L、抽出時間2.5分の条件にて抽出した。この抽出液をステンレスメッシュ(20メッシュ)で濾過して茶殻を取り除いた後、さらに、ステンレスメッシュ(80メッシュ)で濾過し、その濾液を、SA1連続遠心分離機(ウエストファリアー社製)を用いて流速300L/h、回転数10000rpm、遠心沈降液面積(Σ)1000m2の条件にて遠心分離し、抽出液Fを得た。

実施例4~8の緑茶飲料を、37℃にて2ヶ月間保管し、沈殿物、鼻に抜ける香り立ち、後味(エグミと淡白)、劣化臭、香味のバランスについて評価した。
実施例4~8の緑茶飲料(温度25℃)を、5人の熟練した審査官に、まず、沈殿物の有無を目視で観察してもらい、以下の評価をしてもらった。次に、試飲してもらい、以下の評価で点数を付け、5人の平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として評価した。これらの結果を、上記表6に示す。

鼻に抜ける香り立ち、後味(エグミと淡白)、劣化臭、香味のバランスの4つ評価試験の平均点を算出し、平均点が3.5以上を「◎」、3以上3.5未満を「○」、2以上3未満を「△」、1以上2未満を「×」として総合評価した。
実施例4~6は、いずれも総合評価「○」以上の評価であり好適な結果が得られた。
一方、実施例7,8は「△」の評価であり、実施例4~6の結果と比較すると若干劣る結果であった。
これら結果から、電子局在カテキン/糖類が1.0~2.5の範囲であると、経時後でも、沈殿が生じることがなく、鼻に抜ける香り、後味(エグミと淡白)、劣化臭、香味のバランスが良好になる範囲であると想定され、これらがこの範囲にある緑茶飲料は、経時後でも火香(こうばしい香り)が強く、薄い味ではなく、しかもさっぱりとした後味を備え、沈殿物が生じないものになることが見出せた。
Claims (4)
- 単糖の濃度と二糖の濃度とを合わせた糖類濃度が100ppm~300ppmであり、単糖の濃度に対する二糖の濃度の比率(二糖/単糖)が10~28である容器詰緑茶飲料。
- 前記糖類濃度に対する電子局在カテキン濃度の比率(電子局在カテキン/糖類)が1.0~2.5である請求項1に記載の容器詰緑茶飲料。
- 緑茶飲料中の単糖の濃度と二糖の濃度とを合わせた糖類濃度を100ppm~300ppmに調整し、且つ、単糖の濃度に対する二糖の濃度の比率(二糖/単糖)を10~28に調整することを特徴とする容器詰緑茶飲料の製造方法。
- 緑茶飲料中の単糖の濃度と二糖の濃度とを合わせた糖類濃度を100ppm~300ppmに調整し、且つ、単糖の濃度に対する二糖の濃度の比率(二糖/単糖)を10~28に調整することを特徴とする、容器詰緑茶飲料の香味改善方法。
