技术领域
本发明涉及容器装饮料,其配合了绿茶提取物,含有高浓度儿茶酸、味道好、在透明容器内高温保存时色调稳定性好。
背景技术
作为儿茶酸类的效果,报道了抑制胆固醇上升的作用或抑制淀粉酶活性的作用等(参照例如专利文献1、2)。为了发挥儿茶酸类的这些生理效果,成人每天必需饮用4~5杯茶,因此为了更简便地摄取大量的儿茶酸类,就需要在饮料中配合高浓度儿茶酸类的技术。作为这种方法之一,有利用绿茶提取物的浓缩物(参照例如专利文献3~5)等,将儿茶酸类以溶液状态添加于饮料中的方法。
但是,如果直接使用市售的绿茶提取物的浓缩物,则由于绿茶提取物的浓缩物中所含成分的影响,涩味或苦味重,而且下咽的感觉差,不适合使儿茶酸发挥生理效果所必需的长期饮用的目的。另一方面,作为减少不适合长期饮用的因素之一的涩味的方法,有配合糊精的方法,但当配合高浓度儿茶酸类时,有仅此还不够的问题。另外,即使是加入甜味剂的饮料类,如果直接使用市售的绿茶提取物的浓缩物,则其涩味、苦味重,而且还具有来自绿茶的不必要的味道,特别是高温保存过程中苦味、涩味有变化的现象,苦味、涩味稳定性不好,不适合于长期饮用的目的(例如专利文献6)。另外,配合了绿茶提取物和糖类的饮料与配合了绿茶提取液或绿茶提取物的饮料相比,在高温保存时外观容易变化,填充入透明容器中,色调长期不稳定。

发明内容
本发明提供容器装饮料,其是配合了绿茶提取物的容器装饮料,含有下述成分(A)和(B):
(A)非聚合儿茶酸类 0.01~1.0重量%
(B)碳水化合物 葡萄糖换算量0.0001~20重量%、
果糖换算量小于0.05重量%,
且pH为2~6。
具体实施方式
本发明提供容器装饮料,其含有高浓度儿茶酸类,即使使用绿茶提取物,也可减少苦味、涩味,适合长期饮用,而且苦味、涩味的稳定性和下咽感好,在高温保存时饮料外观不容易变化,填充于透明容器中,色调长期稳定.
本发明人为解决上述课题,进行了如下研究,结果发现对配合了绿茶提取物、儿茶酸类浓度提高了的容器装饮料的成分组成进行调整,通过配合碳水化合物作为甜味成份,使葡萄糖换算量和果糖换算量在一定值范围内,特别是使果糖换算量小于0.05重量%,且将pH调整在2~6的范围,可得到含高浓度儿茶酸的饮料,该饮料没有绿茶味、异味、异臭,适合长期饮用,苦味、涩味的稳定性或下咽感好,另外,即使填充于透明容器中保存,色调也长期稳定。
本发明的容器装饮料含有高浓度的非聚合儿茶酸类,苦味、涩味减少,适合长期饮用,苦味、涩味稳定性以及下咽感好,即使填充于透明容器中高温保存,色调也长期稳定,特别是可作为非茶类容器装饮料。
在本发明中,(A)非聚合儿茶酸类是儿茶酸、棓儿茶酸、儿茶酸棓酸酯、棓儿茶酸棓酸酯等非表儿茶酸类以及表儿茶酸、表棓儿茶酸、表儿茶酸棓酸酯、表棓儿茶酸棓酸酯等表儿茶酸类的总称,不仅指非聚合物,还指非氧化物的儿茶酸类。
在本发明的容器装饮料中,含有溶解于水中的状态的非聚合物、非氧化物的(A)非聚合儿茶酸类0.01~1.0重量%,优选含有0.03~0.5重量%,更优选含有0.04~0.4重量%,进一步优选含有0.05~0.3重量%,更进一步优选含有0.06~0.3重量%,特别优选含有0.092~0.26重量%,最优选含有0.1~0.15重量%。如非聚合儿茶酸类的含量在该范围,则从容易获取大量非聚合儿茶酸类、饮料制备后的色调方面考虑,也是优选的。该非聚合儿茶酸类的浓度可通过绿茶提取物的配合量进行调整。
另外,为了发挥促进蓄积脂肪燃烧、促进饮食性脂肪燃烧以及促进肝脏β-氧化基因表达的效果,成人每天的摄取量,作为非聚合儿茶酸类,可以为300mg或以上,优选为450mg或以上,更优选为500mg或以上。另外,具体而言,证实了通过饮用每个含有非聚合儿茶酸类483mg、555mg以及900mg等的饮料,得到了抗肥胖效果、减少内脏脂肪的效果(特开2002-326932号公报)。
因此,对于本发明的容器装饮料,成人每天的摄取量,作为非聚合儿茶酸类,也可以为300mg或以上,优选为450mg或以上,更优选为500mg或以上,从确保每天的必要摄取量的观点考虑,每个本发明的容器装饮料(350~500mL)的非聚合儿茶酸类配合量也可以为300mg或以上,优选为450mg或以上,更优选为500mg或以上。
为了改善非聚合儿茶酸类的苦味、涩味,本发明的容器装饮料中含有(B)碳水化合物。该碳水化合物的含量,葡萄糖换算量为0.0001~20重量%,果糖换算量小于0.05重量%,优选葡萄糖换算量为0.0001~15重量%,果糖换算量小于0.05重量%,更优选葡萄糖换算量为0.001~10重量%,果糖换算量小于0.05重量%。特别优选葡萄糖换算量为0.001~8重量%,果糖换算量小于0.05重量%。如在该范围,则不会产生强烈的苦味、涩味、强的收敛性,苦味、涩味减少,适于长期饮用,另外苦味、涩味的稳定性和下咽感好。特别是,如果果糖换算量在0.05重量%或以上,则含儿茶酸类饮料的风味随温度变化而显著变化,不优选。而如果葡萄糖换算量大于20重量%,则色调稳定性变差。
用于本发明饮料的可溶性碳水化合物不仅起甜味剂作用,还有能量源的作用.作为选择碳水化合物时的基准,考虑充分的胃排空和肠吸收速度是重要的.碳水化合物可以是葡萄糖和果糖的混合物,或也可以是在消化道水解形成葡萄糖和果糖的碳水化合物.本说明书所用的碳水化合物包括单糖、二糖、低聚糖、杂多糖以及它们的混合物.单糖有四糖、戊糖、己糖以及己酮糖.己糖的例子有葡萄糖这样的己醛糖.本发明的容器装饮料中存在的葡萄糖的量为0.0001~20重量%,优选为0.001~15重量%,更优选为0.001~10重量%.为人知的果糖是己酮糖.本发明容器装饮料中存在的果糖量小于0.05重量%,优选小于0.04重量%,更优选小于0.035重量%.
本发明饮料中可以含有上述两种糖和/或在体内形成这些糖的碳水化合物(即蔗糖、麦芽糖糊精、玉米糖浆、高果糖-玉米糖浆)。碳水化合物的重要类型为二糖。二糖的例子有作为蔗糖或甜菜糖而为人知的蔗糖。本发明容器装饮料中蔗糖的量需要以葡萄糖换算量0.0001~20重量%、果糖换算量小于0.05重量%的方式配合。
作为可用于本发明的复合碳水化合物,可列举麦芽糖糊精。本发明容器装饮料中碳水化合物的总量为0.0001~20重量%。碳水化合物的总量中不仅包括果汁或茶提取物中天然存在的碳水化合物,还包括配合的碳水化合物。为了使其容易地吸收,分布在整个身体而供给能量,本发明也可以使用碳水化合物衍生物、多元醇、例如甘油类、人工甜味剂类作为甜味源供给。但是,甘油的存在并不是得到本发明的效果所必需的。根据需要,本发明容器装饮料中可以使用0.1~15重量%、优选6~10重量%的甘油。
本发明容器装饮料中可以配合人工甜味剂。优选含有人工甜味剂0.0001~20重量%,更优选含有0.001~15重量%,特别优选含有0.001~10重量%。如过少,则几乎没有甜味,与酸味、咸味不调和。而过多,则过甜,挂在噪子上的感觉强,下咽感差。这种人工甜味剂的例子有阿斯巴甜、糖精、环己基氨基磺酸盐、双氧噁噻嗪K、L-天冬氨酰-L-苯丙氨酸低级烷基酯甜味剂、L-天冬氨酰-D-丙氨酰胺、L-天冬氨酰-D-丝氨酰胺、L-天冬氨酰-羟基甲基烷酰胺甜味剂、L-天冬氨酰-1-羟基乙基烷酰胺甜味剂、三氯蔗糖、索马甜等高甜度甜味剂、赤藓糖醇、木糖醇、海藻糖等糖醇、甘草甜、合成烷氧基芳香族化合物等。也可使用甜叶菊苷(stevioside)和其他天然来源的甜味剂。
甜味剂的组合更优选人工甜味剂单独的体系或人工甜味剂和葡萄糖类的体系的组合。如果是含有果糖0.05重量%或以上的体系,则本饮料高温保存时粘附于舌上的涩味残留感强,不优选。
本发明的容器装饮料中除了上述成分,还可以含有0.001~0.5重量%的钠离子和0.001~0.2重量%的钾离子。配合了这种矿物质,则可做成运动饮料、等渗饮料等饮料形态。运动饮料一般被规定为可以迅速补充身体运动后作为汗失去的水分、矿物质的饮料。
主要的生理电解质中有钠和钾.这些电解质和离子成分可以以与其相应的水溶性成份或无机盐的形态配合.它们也存在于果汁和茶提取物中.只要不另外指出,本发明饮料中的电解质或离子成分的量是基于最终可饮用的容器装饮料.电解质浓度为离子浓度,而不是盐浓度.溶解性小的盐的一部分溶解于水或pH为酸性的水中.钾离子成分可作为氯化钾、碳酸钾、硫酸钾、醋酸钾、碳酸氢钾、柠檬酸钾、磷酸钾、磷酸氢钾、酒石酸钾、山梨酸钾等或者它们的混合物,或者作为果汁或茶的成分配合.本发明饮料中优选含有0.001~0.2重量%的钾离子,更优选含有0.002~0.15重量%的钾离子,特别优选含有0.003~0.12重量%的钾离子.同样,钠离子成分可作为氯化钠、碳酸钠、碳酸氢钠、柠檬酸钠、磷酸钠、磷酸氢钠、酒石酸钠、苯甲酸钠等以及他们的混合物等容易得到的钠盐,或者作为果汁或茶的成分配合.从利用渗透压而使水的吸收变得容易方面考虑,钠浓度优选低,但为不会因渗透压而将水从身体吸引至肠的程度对本发明来说是重要的.实现这一点,所必要的钠浓度优选比血浆钠的低.本发明的饮料中优选含有0.001~0.5重量%的钠离子,更优选含有0.002~0.4重量%的钠离子,特别优选含有0.003~0.2重量%的钠离子.除了钾离子和钠离子,本发明容器装饮料中还可以优选含有0.001~0.5重量%的氯离子、更优选含有0.002~0.4重量%的氯离子,特别优选含有0.003~0.3重量%的氯离子.氯离子成分可以作为氯化钠或氯化钾等盐供给.也可以配合钙和镁、锌、铁等其他微量离子.这些离子也可以作为盐配合.存在的离子的总量包括添加的离子量和饮料中天然存在的量.例如,添加氯化钠时,该钠离子和氯离子的量也包括在各离子的总量中.此时,如钠离子或钾离子浓度过低,则根据饮用的场合,有时会感到不够味,不能有效补给矿物质,不优选.另一方面,如果过多则盐类自身的味道强,不适于长期饮用.
优选本发明的容器装饮料中,(C)草酸或其盐与(A)非聚合儿茶酸类的含量重量比[(C)/(A)]为0.2或以下,更优选为0.1或以下,进一步优选为0.09或以下,更优选为0.07或以下,更优选为0.06或以下,特别优选为0.05或以下,最优选为0.03或以下。草酸或其盐为绿茶提取物所含的成分。如绿茶提取物的纯化度高则不含草酸或其盐。
由于草酸有时与饮料中所含的来自茶的成分和配合成分相互作用而生成沉淀,因此,对于容器装饮料,优选草酸相对于非聚合儿茶酸类(A)的含量重量比为0.2或以下。如果[(C)/(A)]在该范围,则本发明容器装饮料不容易产生沉淀,因此从产品的外观上考虑优选。本发明的(C)草酸或其盐包括绿茶提取物、香料、果汁及其他成分中天然存在的草酸或其盐和新添加的草酸或其盐。
本发明的容器装饮料的pH为2~6,优选为2~5,更优选为2~4.5。如小于2,则饮料的酸味、刺激性臭味强,不适合饮用。而大于6,则达不到风味的调和,可口性降低,不优选。并且,从色调稳定性上考虑,也不优选。
本发明的容器装饮料是调整绿茶提取物的成分,并进一步配合必要的成分而制造的。用作原料的绿茶提取物优选为对固体成分中含有20~90重量%的非聚合儿茶酸类的绿茶提取物的浓缩物进行调整,使(C)草酸或其盐和(A)非聚合儿茶酸类的含量重量比[(C)/(A)]为0.2或以下的绿茶提取物。在此所述绿茶提取物为将用热水或水溶性有机溶剂从茶叶中提取得到的提取物浓缩得到的物质进一步纯化得到的物质,或将提取得到的提取物直接纯化得到的物质,可通过调整(C)草酸或其盐与(A)非聚合儿茶酸类的含量比例而得到。进一步,也可以是将茶叶或制剂用超临界流体处理得到的物质,还可以是将儿茶酸吸附于吸附剂,用乙醇水溶液洗脱而纯化的物质。另外,也可以用市售的三井农林(株)“polyphenon”、伊藤园(株)“thea-flan”、太阳化学(株)“sunphenon”等绿茶提取物的浓缩物。对于非聚合儿茶酸类与草酸或其盐的含量比例不在本发明的范围的,通过进行成分调整,则成为适合本发明目的的绿茶提取物。
作为绿茶提取物的浓缩物的纯化手段,可列举例如下述方法:将绿茶提取物的浓缩物悬浮于水或水与有机溶剂的混合物中,除去通过向其中添加有机溶剂而产生的沉淀,接着蒸馏除去溶剂的方法;将绿茶提取物的浓缩物溶解于有机溶剂中,除去通过向其中添加水或水与有机溶剂的混合物而产生的沉淀,接着蒸馏除去溶剂的方法.另外,也可以将固体成分中含有25~90重量%的非聚合儿茶酸类的绿茶提取物的浓缩物溶解于有机溶剂和水的重量比为9/1~1/9的混合溶液中,使其与活性炭和酸性白土或活性白土接触.或者,除了这些以外,也可以是利用超临界萃取的纯化或使其吸附于吸附树脂,并用乙醇溶液洗脱得到的物质等.
在此,作为绿茶提取物的形态,可列举固体、水溶液、浆液状等各种形态,特别优选水溶液、浆液状的干燥等工序少。
如上所述,优选本发明使用的绿茶提取物中的(C)草酸或其盐与(A)非聚合儿茶酸类的含量重量比[(C)/(A)]为0.2或以下,更优选为0.1或以下,进一步优选为0.09或以下,更优选为0.07或以下,更优选为0.06或以下,特别优选为0.05或以下,最优选为0.03或以下。如绿茶提取物中非聚合儿茶酸类相对于草酸或其盐的比例过低,则饮料中含有很多非聚合儿茶酸类以外的成分等,有损于饮料本身的外观,不优选。而如绿茶提取物中非聚合儿茶酸类相对于草酸或其盐的比例过高,则除去草酸或其盐时,来自茶叶的抑制涩味成分等同时被除去,从风味调和的角度考虑,不优选。
本发明使用的绿茶提取物中的非聚合儿茶酸类的浓度可以为20~90重量%,优选为20~87重量%,更优选为23~85重量%,特别优选为25~82重量%。如绿茶提取物中的非聚合儿茶酸类的浓度过低时,应配合于饮料中的绿茶提取物的纯化物本身的配合量多。如绿茶提取物中的非聚合儿茶酸类的浓度过高,则绿茶提取物中存在的总多酚以外的游离氨基酸等具有改善风味功能的微量成分等有被除去的倾向。
本发明使用的绿茶提取物中的非聚合儿茶酸类含有表棓儿茶酸棓酸酯、棓儿茶酸棓酸酯、表棓儿茶酸、棓儿茶酸的总棓体和含有表儿茶酸棓酸酯、儿茶酸棓酸酯、表儿茶酸、儿茶酸的总非棓体的比例优选保持天然绿茶叶的组成。因此,应在使上述4种棓体总量总是大于上述4种非棓体总量的纯化条件下进行。
从非聚合儿茶酸的生理效果的有效性上考虑,优选本发明使用的绿茶提取物中的含有儿茶酸棓酸酯、表儿茶酸棓酸酯、棓儿茶酸棓酸酯以及表棓儿茶酸棓酸酯的总棓酸酯体在总非聚合儿茶酸类中的比例为35~100重量%。从调味的容易性考虑,更优选为35~98重量%,特别优选为35~95重量%。
本发明的容器装饮料,如果配合苦涩味抑制剂,则适合饮用,因而优选。所使用的苦涩味抑制剂没有特别的限定,优选环糊精。作为环糊精可以使用α-环糊精、β-环糊精、γ-环糊精以及支链α-环糊精、支链β-环糊精、支链γ-环糊精。饮料中可以含有0.005~0.5重量%的环糊精,优选含有0.01~0.3重量%的环糊精。与来自茶的成分一起,作为配方上可以添加的成分,本发明的容器装饮料中还可以单独或并用而配合抗氧化剂、香料、各种酯类、有机酸类、有机酸盐类、无机酸类、无机酸盐类、无机盐类、色素类、乳化剂、保存剂、调味料、甜味剂、酸味剂、胶、乳化剂、油、维生素、氨基酸、果汁提取物类、蔬菜提取物类、花蜜提取物类、pH调节剂、品质稳定剂等添加剂。
为了提高可口性,在本发明的饮料中可以配合香料、果汁。一般果汁称为fruit juice,香料称为flavor.本发明可以使用天然或合成的香料、果汁.这些可以从果汁、水果香料、植物香料或它们的混合物中选择.特别是果汁和茶香料、优选绿茶或黑茶香料的组合,具有很好的风味.优选的果汁是苹果、梨、柠檬、酸橙、柑桔、葡萄柚、蔓越桔(cranberry)、橙子、草莓、葡萄、猕猴桃、波萝、西番莲果、芒果、番石榴、木莓和樱桃.特别优选柑桔类果汁,特别是葡萄柚、橙子、柠檬、酸橙、柑桔和芒果、西番莲果和蔓越桔的汁或它们的混合物.优选的天然香料为茉莉、母菊、玫瑰、薄荷、山楂、菊、菱、甘蔗、荔子、笋等.果汁作为加入黄烷醇和其他成分的基质存在,或用作香料或果汁.本发明饮料中的果汁浓度为0.001~20重量%,更优选0.002~10重量%.水果香料、植物香料、茶香料以及它们的混合物也可以作为果汁使用.特别优选的香料为包括橙子香料、柠檬香料、酸橙香料和葡萄柚香料的柑桔类香料.除柑桔类香料以外,还可以使用苹果香料、葡萄香料、木莓香料、蔓越桔香料、樱桃香料、菠萝香料等各种其他水果香料.这些香料可以由果汁和芳香油等天然源衍生,或者也可以合成.香料中可以含有各种香料的混合物,例如选择柠檬和酸橙香料、柑桔类香料的香料(典型的可乐软饮料香料)等.本发明饮料中可以配合0.0001~5重量%,特别优选配合0.001~3重量%的这样的香料.配合香料、果汁、乳化香料类,使葡萄糖换算量为0.0001~20重量%,果糖换算量小于0.05重量%.
进一步,本发明饮料中还可以配合酸味剂。作为酸味剂,可列举苹果酸、柠檬酸、酒石酸、富马酸等食用酸。酸味剂的配合量优选使pH为2~6的量。另外,有机或无机食用酸也可用于调整饮料的pH。酸可以以它们的非离解形态,或它们的各种盐,例如磷酸氢钾或钠、磷酸二氢钾或钠盐等形态存在。优选的酸为包括柠檬酸、苹果酸、富马酸、己二酸、葡糖酸、酒石酸、抗坏血酸、醋酸、磷酸或它们的混合物在内的食用有机酸和无机酸。特别优选的酸为柠檬酸和苹果酸。酸味剂也可以起到使饮料成分稳定的抗氧化剂作用。常用的抗氧化剂的例子有抗坏血酸、EDTA(乙二胺四乙酸)以及它们的盐、植物提取物等,但并不限定于此。
本发明还可以含有维生素。可优选列举维生素A、维生素C以及维生素E。也可以加入维生素D、维生素B等其他维生素。矿物质也可配合于本发明的饮料中。优选的矿物质为钙、铬、铜、氟、碘、铁、镁、锰、磷、硒、硅、钼以及锌。特别优选的矿物质为镁、磷和铁。
作为本发明的容器装饮料的饮料,优选为非茶类饮料,例如在绿茶提取物中加入选自碳水化合物、钠离子和/或钾离子、甜味剂、苦涩味抑制剂、香料、果汁、蔬菜提取物、酸味剂、维生素、矿物质、二氧化碳等的成分的非茶类饮料。
作为非茶类容器装饮料,可列举例如作为软饮料的碳酸饮料、加入果汁提取物的饮料、加入蔬菜提取物的果汁或功能水(near water)、运动饮料、减肥饮料等。
本发明的容器装饮料使用的容器,与一般的饮料一样,可以是以聚对苯二甲酸乙二酯为主要成分的成型容器(所谓PET瓶)、金属罐、与金属箔或塑料薄膜复合而成的纸容器、瓶等通常的形态。在此所述的容器装饮料是指不稀释就可饮用的饮料。
本发明的容器装饮料,例如是可以填充于金属罐这样的容器后,再加热灭菌的情况时,则可用食品卫生法所规定的杀菌条件制造,而对于PET瓶、纸容器这样的不能蒸馏灭菌的容器,则采用预先在上述同样的杀菌条件下,例如用平板式热交换器等高温短时间杀菌后,冷却至一定的温度,再填充于容器中等方法。另外,也可以在无菌条件下,向填充后的容器中配合并填充别的成分。进一步,也可以进行在酸性条件下加热杀菌后,在无菌条件下将pH值恢复至中性,或在中性条件下加热杀菌后,在无菌条件下将pH值恢复至酸性等的操作。
实施例
儿茶酸类的测定
将用过滤器(0.8μm)过滤,接着用蒸馏水稀释得到的容器包装的饮料用岛津制作所制的高效液相色谱(型号SCL-10AVP),安装导入十八烷基的液相色谱用填充柱L-柱TM ODS(4.6mm×250mm:财团法人化学物质评价研究机构制),在柱温35℃下,通过梯度法进行测定。在下述条件下进行:流动相A液为含有0.1mol/L醋酸的蒸馏水溶液,B液为含有0.1mol/L醋酸的乙腈溶液,进样量为20μL,UV检测器波长为280nm。
草酸的测定
安装日本dionex公司产(型号DAXQ1110)的色谱柱:IonPacAS4A-SC,4×250mm,连接于抑制器ASRS-ULTRA(dionex公司产),在循环模式下进行测定。流动相为1.8mmol/L Na2CO3,1.7mmol/L NaHCO3,以1.0mL/min流过,进样量25μL。检测器使用电导率仪。
葡萄糖换算量和果糖换算量的测定
通过下述(1)测定游离的果糖、葡萄糖和蔗糖,通过(2)测定水解后的果糖和葡萄糖,由这些测定值求出葡萄糖换算量和果糖换算量。
(1)利用HPLC的日本食品分析中心法(游离的果糖、葡萄糖和蔗糖)
取检品,加水中和,除去妨碍物质后,用膜过滤器(孔径0.45μm)过滤,以此作为试液,在下述条件下用HPLC测定。

作为绿茶提取物的浓缩物,将100g polyphenonHG(东京foodtechno公司产)悬浮于常温、250rpm搅拌条件下的95%乙醇水溶液490.9g中,加入20g活性炭kuraray coal GLC(kuraray chemical公司产)和35g酸性白土mizuka-ace#600(水泽化学公司产)后,连续搅拌约10分钟。然后用10分钟滴加40%乙醇水溶液409.1g后,在室温下继续30分钟搅拌处理。然后,用2号滤纸过滤活性炭和沉淀物,然后用0.2μm膜过滤器进行再过滤。最后向滤液中添加离子交换水200g,在40℃、0.0272kg/cm2的条件下蒸馏除去乙醇,得到产品。
处理后含有22重量%非聚合儿茶酸类。
处理后草酸/非聚合儿茶酸类重量比=0.01。
<实施例1~4和比较例1~4的容器装饮料的制造方法>
按照表1所列举的代表性的运动饮料配方配合各成分,用离子交换水定溶,调制调和液。进行基于食品卫生法的杀菌工序以及热包装填充,制成容器装饮料。表中也一起示出了饮料的成分值。对是否是本发明目标的苦味、涩味减少的适合长期饮用的味道进行了评价。让30名男性评价员每日饮用500mL,持续1个月,连续饮用1个月后,按照以下基准进行评价,并进行评分。试验使用了保藏在冰箱的饮料。

对于下咽感的评价,让30名男性评价员单次自由饮用饮料500mL,按照下述基准进行评分。

对于饮料色调的稳定性,将填充于500mL容量的透明PET瓶容器调制的饮料在55℃下保存1个月,10名专门人员目视对保存前后饮料的色调变化按照以下基准进行了评分。
A未变化
B稍微变化
C变化
D变化大
使用绿茶提取物A、pH在范围外的运动饮料(比较例1)和使用绿茶提取物A、甜味剂组成在范围外的运动饮料(比较例2)涩味都很强,不适合长期饮用,且后味消失性质差。另一方面,使用绿茶提取物A的本发明的运动饮料(实施例1~4)没有绿茶味、异味、异臭,涩味、苦味减少。本发明的效果即,苦味、涩味减少,适合长期饮用,而且苦味、涩味的稳定性和下咽感好,饮料的外观在高温保存时不易变化,是即使填充于透明容器中保存,色调也长期稳定的容器装饮料。
Claims (8)
1.容器装饮料,其是配合了绿茶提取物的容器装饮料,含有下述成分(A)、(B)、(D)和(E):
(A)非聚合儿茶酸类0.01~1.0重量%,
(B)由糊精、葡萄糖和果糖组成的碳水化合物
葡萄糖换算量1~5重量%、果糖换算量小于0.05重量%,
(D)钠离子 0.001~0.5重量%,和
(E)钾离子 0.001~0.2重量%,
且pH为2~6。
2.权利要求1所述的容器装饮料,该饮料为非茶类饮料。
3.权利要求1所述的容器装饮料,其pH为2~5。
4.权利要求1所述的容器装饮料,该饮料中还含有草酸或其盐,且(C)草酸或其盐与(A)非聚合儿茶酸类的含量重量比即(C)/(A)为0.2以下。
5.权利要求1所述的容器装饮料,其中,原料绿茶提取物是对固体成分中含有20~90重量%非聚合儿茶酸类的绿茶提取物的浓缩物进行调整,使(C)草酸或其盐与(A)非聚合儿茶酸类的含量重量比即(C)/(A)为0.2以下而得到的绿茶提取物。
6.权利要求4所述的容器装饮料,其中,(C)草酸或其盐与(A)非聚合儿茶酸类的含量重量比即(C)/(A)为0.05以下。
7.权利要求1所述的容器装饮料,其是作为非聚合儿茶酸类,每天能够摄取300mg以上的形态。
8.权利要求1所述的容器装饮料,其填充于透明容器中。
