Description
又、特許文献12では不快臭・不快味をマスキングするためにスクラロースと、良好な甘味質を有する甘味組成物のソーマチン、フルクトース、非還元性二糖類、糖アルコール、ビートオリゴ糖、甘草抽出物、ステビア抽出物、ラムノース及びグリチルリチン等を併用し、風味が改善された食品組成物、味質が改善された保存料及び食品組成物、フレーバー感が改善された香気性組成物を開示している。
(A)非重合体カテキン類を0.08〜0.5質量%、
(B)甘味料を0.0001〜20質量%、及び
(C)炭酸ガスを含有し、ガス容積が0.5容積%から4.0容積%であり、
(D)非重合体カテキン類の非エピ体率が5〜25質量%、
(A)非重合体カテキン類中の(E)ガレート体類の比率([(E)/(A)]×100)が5〜55質量%、
(F)pHが2.5〜5.1である発泡性容器詰飲料を提供するものである。
また、本発明は、甘味料を0.0001〜20質量%及び(C)炭酸ガスを配合する、非重合体カテキン類含有容器詰飲料の苦味抑制方法を提供するものである。
香料には、様々なフレーバーのブレンド、例えばレモン及びライムフレーバー、シトラスフレーバーと選択されたスパイス(典型的なコーラソフトドリンクフレーバー)等を含めることができる。このような香料は本発明の発泡性容器詰飲料に好ましくは0.0001〜5重量%、より好ましくは0.001〜3重量%配合できる。
メンブランフィルター(0.8μm)でろ過し、次いで蒸留水で希釈した試料を、島津製作所製、高速液体クロマトグラフ(型式SCL−10AVP)を用い、オクタデシル基導入液体クロマトグラフ用パックドカラム L−カラムTM ODS(4.6mmφ×250mm:財団法人 化学物質評価研究機構製)を装着し、カラム温度35℃でグラジエント法により測定した。移動相A液は酢酸を0.1mol/L含有の蒸留水溶液、B液は酢酸を0.1mol/L含有のアセトニトリル溶液とし、試料注入量は20μL、UV検出器波長は280nmの条件で行った(通常カテキン類及びカフェインの濃度は、質量/容積%(%[w/v])で表すが、実施例中の含有量は液量を掛けて質量で示した)。
Gas Volume/Air Meter Model GVA−500(京都電子(株))を使用して測定した。
パネラー5名により飲用試験を行った。評価基準は表1および表2の下欄に示した。
調製した飲料を37℃で4週間保存し、保存前後での飲料の色調変化を、5名のパネラーに目視で、表1及び表2の下欄記載の基準で評点をつけた。さらに、非重合体カテキン類を測定した。
市販の緑茶抽出物の精製物(三井農林(株)「ポリフェノンHG」)100gを90.0質量%エタノール900gに分散させ、30分熟成し、2号濾紙及び孔径0.2μmの濾紙で濾過し、水200mLを加えて減圧濃縮することによって精製物を得た。得られた精製物中の(A)非重合体カテキン類は15.2質量%、(C)非重合体カテキンガレート体類の割合は58.1質量%であった。得られた非重合体カテキン類組成物のうち75.0gをステンレス容器に投入し、イオン交換水で全量を1,000gとし、5質量%重炭酸ナトリウム水溶液3.0gを添加してpH5.5に調整した。次いで、22℃、150r/minの攪拌条件下で、イオン交換水1.07g中にキッコーマンタンナーゼKTFH(Industrial Grade、500U/g以上)0.27g(非重合体カテキン類に対して2.4%)を溶解した液を添加し、55分後にpHが4.24に低下した時点で酵素反応を終了した。次いで95℃の温浴にステンレス容器を浸漬し、90℃、10分間保持して酵素活性を完全に失活した後、25℃まで冷却した後に濃縮処理を行った。タンナーゼ処理後に得られた緑茶抽出物の精製物の非重合体カテキン類は15.0質量%、非重合体ガレート体率は45.2質量%であった。この緑茶抽出物の精製物のうち8.5gと、無水結晶果糖36.6g、エリスリトール7.5g、無水クエン酸1.0g、クエン酸3ナトリウム1.2g、L−アスコルビン酸0.5g、レモンライム香料1.0gを添加後2℃に冷却した炭酸水で全量1、000g(炭酸ガス2.2容積%)とし、このうち500gを耐圧性PETボトルに充填した。次に、60℃、12分間加熱殺菌処理を行った。この発泡性容器詰飲料の組成、風味評価結果及び保存試験結果を表1に示す。
レモンライムの代わりに実施例1と同様にしてグレープフルーツ飲料、オレンジ飲料を製造した。コーラ飲料及びルートビア飲料では炭酸ガス3.5容積%で製造した。
レモンライム果汁1.0gを添加し、無水結晶果糖の代わりに無水結晶ブドウ糖36.6gを使用した以外は、実施例1と同様の飲料を製造した。
クエン酸3ナトリウムを15.0gに増量した以外は実施例1と同様の方法で飲料を製造した。
無水結晶果糖及びエリスリトールを使用しなかった以外は実施例1と同様の方法で飲料を製造した。
実施例1において、炭酸ガスを使用せずに飲料を製造した。
実施例1において、炭酸ガス5.0容積%で飲料を製造した。
実施例1で得られた緑茶抽出物の精製物5.3g、中国産緑茶抽出物粉末2.2g、無水結晶果糖36.6g、エリスリトール7.5g、L−アスコルビン酸0.5g、緑茶香料1.0gを添加後、2℃に冷却した炭酸水で全量1、000g(炭酸ガス2.2容積%)とした後、実施例1と同様の方法で飲料を製造した。この発泡性容器詰飲料の組成、風味評価結果及び保存試験結果を表2に示す。
実施例1で得られた緑茶抽出物の精製物8.5g、インド産紅茶抽出物粉末0.5g、無水結晶果糖36.6g、エリスリトール7.5g、L−アスコルビン酸0.5g、5%重曹水溶液2.0g、紅茶香料1.0gを添加後、2℃に冷却した炭酸水で全量1、000g(炭酸ガス2.2容積%)とした後、実施例1と同様の方法で飲料を製造した。この発泡性容器詰飲料の組成、風味評価結果及び保存試験結果を表2に示す。
L−アスコルビン酸の代わりにL−アスコルビン酸ナトリウム0.3gと5%重曹水溶液1.5gを配合した以外は実施例7と同様の方法で飲料を製造した。
実施例7において無水結晶果糖、エリスリトールを使用せずに実施例7と同様の方法で飲料を製造した。

- 茶抽出物の精製物を配合し、
(A)非重合体カテキン類を0.08〜0.5質量%、
(B)甘味料を0.0001〜20質量%、及び
(C)炭酸ガスを含有し、ガス容積が0.5容積%から4.0容積%であり、
(D)非重合体カテキン類の非エピ体率が5〜25質量%、
(A)非重合体カテキン類中の(E)ガレート体類の比率([(E)/(A)]×100)が5〜55質量%、
(F)pHが2.5〜5.1である発泡性容器詰飲料。 - (G)カフェインと(A)非重合体カテキン類との含有質量比[(G)/(A)]が0.0001〜0.16である請求項1記載の発泡性容器詰飲料。

- 甘味料が、人工甘味料を含有する請求項1〜4のいずれか1項記載の発泡性容器詰飲料。
- さらに、アスコルビン酸、クエン酸、グルコン酸、コハク酸、酒石酸、乳酸、フマル酸、リン酸、リンゴ酸及びそれらの塩類から選ばれる1種以上を含有する請求項1〜5のいずれか1項記載の発泡性容器詰飲料。
- さらに、ナトリウム、カリウム、カルシウム、マグネシウム、亜鉛及び鉄から選ばれる少なくとも1種以上のミネラルを含有する請求項1〜6のいずれか1項記載の発泡性容器詰飲料。
- さらに、イノシトール、チアミン塩酸塩、チアミン硝酸塩、リボフラビン、リボフラビン5'−リン酸エステルナトリウム、ナイアシン、ニコチン酸アミド、パントテン酸カルシウム、ピリドキシ塩酸塩及びシアノコバラミンから選ばれるビタミンB群、葉酸並びにビオチンから選ばれる1種以上を飲料1本当たり、1日所要量(米国RDI基準:US2005/0003068記載:U.S.Reference Daily Intake)の10質量%以上含有する請求項1〜7のいずれか1項記載の発泡性容器詰飲料。
- ショ糖を1としたときの甘味度が2以上である請求項1〜8のいずれか1項記載の発泡性容器詰飲料。
- 茶系飲料である請求項1〜9のいずれか1項記載の発泡性容器詰飲料。
- 非茶系飲料である請求項1〜9いずれか1項記載の発泡性容器詰飲料。
- 果汁、野菜汁及び香料から選ばれる1種以上を含有する請求項1〜11のいずれか1項記載の発泡性容器詰飲料。
- 乳成分を含有する請求項1〜12のいずれか1項記載の発泡性容器詰飲料。
- カロリーが40Kcal/240ml未満である請求項1〜13のいずれか1項記載の発泡性容器詰飲料。
