Description
本發明係關於一種含有高濃度非聚合物兒茶素類之容器裝飲料。
作為兒茶素類之效果,報告有抑制膽固醇上升作用或抑制澱粉酶活性作用等(例如,參照專利文獻1、2)。為了表現如上述之兒茶素類的生理效果,必須攝取大量兒茶素類,因此業者期望有於飲料中添加高濃度兒茶素類之技術。作為該方法之一,有利用綠茶萃取物的濃縮物(例如,參照專利文獻3~5)等,將兒茶素類以溶解狀態添加於飲料中之方法。
然而,若直接使用市售之綠茶萃取物的濃縮物,則因綠茶萃取物的濃縮物中所含成分之影響,而使得澀味或苦味較強而且順喉感差。如此般,考慮到對於為表現兒茶素的生理效果而必須長期飲用之適應性,於任一技術中均期望有降低添加高濃度兒茶素飲料所特有的來自兒茶素的澀味或苦味之飲料。
作為降低茶系飲料的苦味之方法,報告有添加環糊精之方法(例如專利文獻6~11)。即,於專利文獻6中,揭示有於製造含有相對於1質量份乾燥質量茶萃取物為2.5質量份以上環糊精之含有茶萃取物之組合物時;於專利文獻7中,揭示有於製造含有1質量%以下兒茶素類、0.1質量%以下咖啡因及0.1~20.0質量%環糊精之飲食物時,使水蒸氣活化碳與茶萃取液作用而吸附及除去咖啡因之方法;於專利文獻8、9中,揭示有含有特定量的兒茶素類及環糊精之容器裝飲料。進而,於專利文獻10中,揭示有藉由將高度分歧狀糊精(cluster dextrin)添加於高濃度茶兒茶素類中而抑制苦味之容器裝茶飲料;於專利文獻11中,進一步揭示環糊精對高濃度兒茶素類的苦味之抑制效果。
又,於專利文獻12中,揭示一種為了遮蔽不快氣味及不快口味,而將蔗糖素(sucralose)與具有良好甘味的甘味組合物之索馬甜(thaumatin)、果糖、非還原性二糖類、糖醇、甜菜寡糖、甘草萃取物、甜菊萃取物、鼠李糖以及甘草甜素(glycyrrhizine)等併用,且改善風味之食品組合物、改善味質之保存料以及食品組合物、改善香味感之香氣性組合物。
但是,為了藉由於含高濃度非聚合物兒茶素類的容器裝飲料中添加環糊精而降低加熱殺菌處理後的苦味,必須添加大量的環糊精。若添加更多量的環糊精,則存在因環糊精自身的味道而使飲料本來的風味受損之缺點,因而其使用量有限制。又,若僅添加蔗糖素等人工甘味料,則對含高濃度非聚合物兒茶素類之容器裝飲料的苦味之抑制效果並不理想。又,報告有,為了改善提高綠茶萃取濃度時之苦澀味、褐變、蒸餾殺菌之異味,而添加檸檬酸及蔗糖,再吹入二氧化碳,藉此製造飲料(非專利文獻1)。

即,本發明提供一種發泡性容器裝飲料,其係添加茶萃取物的純化物者,且含有:(A)非聚合物兒茶素類0.08~0.5質量%、(B)甘味料0.0001~20質量%、以及(C)二氧化碳;氣體容積為0.5容積%至4.0容積%,(D)非聚合物兒茶素類之非表體類之比率為5~25質量%,(A)非聚合物兒茶素類中(E)沒食子酸酯體類之比率([(E)/(A)]×100)為5~55質量%,(F)pH值為2.5~5.1,(G)咖啡因與(A)非聚合物兒茶素類之含有質量比[(G)/(A)]為0.001~0.16。
又,本發明提供一種含有非聚合物兒茶素類之容器裝飲料之苦味抑制方法,其係添加0.0001~20質量%甘味料以及(C)二氧化碳者。
本發明提供一種發泡性容器裝飲料,其含有高濃度的兒茶素,兼具苦味的降低與適度的甘味,無論是否含有甘味料即使進行長期保存其兒茶素含量的減少亦較少。
本發明者們為了在不降低含高濃度非聚合物兒茶素類之容器裝飲料的風味下減低其苦味而進行了研究,結果發現:以特定比率添加甘味料且使其含有二氧化碳,而獲得優異之苦味抑制效果;藉由控制非聚合物兒茶素類的非表體類之比率、調整pH值、以及調整咖啡因/非聚合物兒茶素類比,而獲得即使進行長期保存兒茶素含量減少亦較少、可長期保持飲料本來的風味之發泡性容器裝飲料。
根據本發明,可提供一種風味良好且抑制苦味、並且即使進行長期保存兒茶素含量的減少亦較少之含有非聚合物兒茶素類之發泡性容器裝飲料。
本發明之所謂(A)非聚合物兒茶素類,係指將兒茶素、沒食子兒茶素、兒茶素沒食子酸酯、沒食子兒茶素沒食子酸酯等非表體兒茶素類,以及表兒茶素、表沒食子兒茶素、表兒茶素沒食子酸酯、表沒食子兒茶素沒食子酸酯等表體兒茶素類合併之總稱;非聚合物兒茶素類之濃度,係基於上述合計8種的合計量而定義。
本發明之發泡性容器裝飲料中,含有0.08~0.5質量%、較好的是0.09~0.4質量%、更好的是0.1~0.3質量%、最好的是0.1~0.2質量%之非聚合物兒茶素類。若非聚合物兒茶素類係在此範圍內,則可容易地攝取大量的非聚合物兒茶素類,可期待產生非聚合物兒茶素類的生理效果。又,於非聚合物兒茶素類含量小於0.08質量%之情形時,生理效果並不理想,若超過0.5質量%則飲料的苦味增加,並不適於作為飲料。
非表體本來在自然界中幾乎不存在,係藉由表體的熱異構化而生成。進而,藉由熱變性使非聚合物兒茶素類變化成聚合物兒茶素類。可於本發明之發泡性容器裝飲料中使用之(A)非聚合物兒茶素類中之(D)非聚合物兒茶素類的非表體類之比例,較好的是5~25質量%、更好的是8~20質量%、尤其好的是10~15質量%,此就風味及非聚合物兒茶素類的保存安定性之觀點而言,為較好。
本發明之發泡性容器裝飲料中之非聚合物兒茶素類中,存在包含表沒食子兒茶素沒食子酸酯、沒食子兒茶素沒食子酸酯、表兒茶素沒食子酸酯及兒茶素沒食子酸酯之沒食子酸酯體,以及包含表沒食子兒茶素、沒食子兒茶素、表兒茶素及兒茶素之非沒食子酸酯體。因作為酯型非聚合物兒茶素類之沒食子酸酯體的苦味較強,故本發明之發泡性容器裝飲料中可使用之(A)非聚合物兒茶素類中之(E)非聚合物兒茶素類的沒食子酸酯體類之比例([(E)/(A)]×100),較好的是5~55質量%、更好的是8~46質量%,此就抑制苦味之觀點而言為較好。又,若本發明之非聚合物兒茶素類的沒食子酸酯體類濃度係在30~100 mg/100 ml之範圍,則餘味的偏離消失,故而為較好。
本發明之具有高濃度非聚合物兒茶素類之發泡性容器裝飲料,例如可藉由添加綠茶萃取物的純化物來調整非聚合物兒茶素類濃度而獲得。具體可舉出:於綠茶萃取物之純化物之水溶液、或者該綠茶萃取物之純化物中添加綠茶萃取液者。此處所謂綠茶萃取物之純化物,係指自利用熱水或者水溶性有機溶劑自綠茶葉進行萃取的溶液中除去一部分水分者,或者加以純化而提高非聚合物兒茶素類濃度者;至於純化物之形態,可舉出:固體、水溶液、漿狀等各種形態。又,所謂自綠茶中獲得之茶萃取液,係指不進行濃縮或純化操作之萃取液。
含有非聚合物兒茶素類之綠茶萃取物之純化物,可舉出:市售之三井農林(股)「POLYPHENON」、伊藤園(股)「泰阿呋蘭」、太陽化學(股)「三苯酚」等。若非聚合物兒茶素類濃度係在上述範圍內,則亦可使用將該等進行純化者。純化方法,例如有將綠茶萃取物之純化物懸濁於水或者水與乙醇等有機溶劑的混合物中,再除去所生成的沈澱,繼而餾去溶劑之方法。或者,亦可使用以下者:將利用熱水或者乙醇等水溶性有機溶劑自茶葉進行萃取的萃取物加以濃縮,再將濃縮物進一步進行純化者;或者將萃取物直接進行純化者。
本發明所使用之非聚合物兒茶素類,可藉由對綠茶萃取物的純化物進行鞣酸酶處理,而降低其中的沒食子酸酯體類之比率。使用鞣酸酶之處理中,較好的是,以相對於綠茶萃取物的沈澱物或者沈澱物中的非聚合物兒茶素類成為0.5~10質量%範圍之方式,添加鞣酸酶。鞣酸酶處理之溫度,較好的是獲得酶活性之15~40℃、更好的是20~30℃。鞣酸酶處理時之pH值,較好的是獲得酶活性之4~6、更好的是4.5~6、尤其好的是5~6。
本發明之發泡性容器裝飲料中(A)非聚合物兒茶素類與(G)咖啡因之含有質量比[(G)/(A)],較好的是0.0001~0.16、更好的是0.001~0.15、更好的是0.01~0.14、更好的是0.05~0.13。若使用以通常的綠茶葉萃取操作而獲得之萃取液,則無法獲得上述範圍之[(G)/(A)]。因此,於本發明之發泡性容器裝飲料中,可藉由使用含有非聚合物兒茶素類之綠茶萃取物之純化物,而獲得該範圍之[(G)/(A)]。若咖啡因相對於非聚合物兒茶素類之比率過低,則對風味平衡不利。又,若咖啡因相對於非聚合物兒茶素類之比率過高,則會損害飲料本來的外觀,故而不好。咖啡因,可係作為原料使用的綠茶萃取物、香料、果汁以及其他成分中天然存在之咖啡因,亦可係新添加之咖啡因。
於本發明之發泡性容器裝飲料中,就風味及保存安定性之觀點而言,(F)pH值為2.5~5.1之範圍、較好的是2.8~5.0、更好的是3.0~4.5、尤其好的是3.8~4.2。即,若pH值小於2.5則酸味變強,於長期保存中會使非聚合物兒茶素類減少。又,若pH值超過5.1,則亦於長期保存中因與併用的碳水化合物起反應等而使非聚合物兒茶素類減少。pH值之調整,可用抗壞血酸或其鹽或者檸檬酸等將pH值調整為前述範圍,藉此可進行長期保存、且製成具有適度酸味之飲料。
於本發明之發泡性容器裝飲料中,作為(B)甘味料,可使用碳水化合物類、甘油類、糖醇、人工甘味料。於本發明之發泡性容器裝飲料中含有較好的是0.0001~20質量%、更好的是0.001~15質量%、尤其好的是0.01~10質量%之該等甘味料。若本發明之發泡性容器裝飲料中的甘味料過少,則甘味幾乎消失,無法獲得與酸味、鹹味之平衡,因此較好的是將蔗糖設為1時,其甜度為2以上(參考文獻:JISZ8144,官能評價分析-用語,序號3011,甘味;JISZ9080,官能評價分析-方法,試驗方法;飲料用語辭典4-2甜度之分類,資料11(Beverage Japan公司);特性等級試驗mAG試驗,ISO 6564-1985(E),「Sensory Analysis-Methodology-Flavour profile method」等)。另一方面,若甜度為8以上,則因過甜而使黏喉感覺較強,順喉感下降。再者,該等甘味料亦包含茶萃取物中之甘味料。
碳水化合物系甘味料,包含單糖、寡糖、複合多糖或者其等之混合物。其中,以選自葡萄糖、蔗糖、果糖以及果糖葡萄糖液糖中的1種以上之自天然獲得之碳水化合物為尤佳。
單糖中有丁糖、戊糖、己糖及酮己糖。己糖之例,係如作為葡萄糖而周知的葡萄糖之醛己醣。本發明之發泡性容器裝飲料中之葡萄糖含量為0.0001~20質量%、更好的是0.001~15質量%、尤其好的是0.01~10質量%;作為果糖而周知之果糖係酮己醣。本發明之發泡性容器裝飲料中之果糖含量為0.0001~20質量%、更好的是0.001~15質量%、尤其好的是0.01~10質量%。果糖葡萄糖液糖係該等之混合液糖,其含量較好的是0.01~7質量%、更好的是0.1~6質量%、尤其好的是1.0~5質量%。若合計添加20質量%以上該等甘味料,則於飲料的保存中易產生因褐變而造成的著色。
至於寡糖,例如可舉出:蔗糖、麥芽糊精、玉米糖漿、高果糖玉米糖漿、龍舌蘭萃取物、楓糖漿、甘蔗、蜂蜜等。該寡糖以二糖為佳。二糖之例,係作為蔗糖或甜菜糖而周知的蔗糖。又,蔗糖之形態,有砂糖、液糖、上等白糖等,亦可使用該等中之任一種。本發明之發泡性容器裝飲料中之蔗糖含量,較好的是0.001~20質量%、更好的是0.01~15質量%、尤其好的是0.1~10質量%。
複合多糖之較佳例係麥芽糊精。又,碳水化合物衍生物、多元醇例如甘油類亦可用於本發明。本發明之發泡性容器裝飲料中,亦可使用例如0.1~15質量%、較好的是0.2~10質量%之甘油類。
本發明之發泡性容器裝飲料中所使用之甘味料中,至於糖醇,可舉出:赤蘚糖醇、山梨糖醇、木糖醇、海藻糖、麥芽糖醇、乳糖醇、巴拉金糖(palatinose)、甘露醇、塔格糖(tagatoSe)等。該等之中,以無熱量的赤蘚糖醇為佳。
本發明之發泡性容器裝飲料中所使用之甘味料中,至於人工甘味料,則有:阿斯巴甜、蔗糖素、糖精、環己胺磺酸鹽、醋磺內酯鉀、L-天門冬胺醯基-L-苯基丙胺酸低級烷基酯、L-天門冬胺醯基-D-丙胺醯胺、L-天門冬胺醯基-D-絲胺酸醯胺、L-天門冬胺醯基-羥基甲基烷醯胺、L-天門冬胺醯基-1-羥基乙基烷醯胺、蔗糖素等高甜度甘味料,甘草甜素(glycyrrhizine),合成烷氧基芳香族化合物等。又,亦可使用索馬甜、舌菊苷及其他天然來源甘味料。
本發明之發泡性容器裝飲料,其特徵在於:(C)可藉由含有二氧化碳且具有適度的起泡性,而抑制非聚合物兒茶素類的苦味,進而繼續賦予柔軟感及清涼感。壓入的二氧化碳,就香味之觀點而言,較好的是以其氣體容積為0.5~4.0容積%之範圍使用者,於飲用時可獲得更爽快感。利用將氣體容積設為0.5容積%以上所產生的二氧化碳的效果,可抑制非聚合物兒茶素類的苦味,藉由將氣體容積設為4.0容積%以下而使刺激不會過強,可維持香料之新鮮感。
本發明中所定義之氣體容積係表示於1大氣壓、15.6℃下,於飲料中溶解的二氧化碳容積與飲料容積之比率。將二氧化碳壓入調合液之操作稱為碳酸化作用(二氧化碳壓入);該碳酸化作用,通常是於稱為碳酸化器的裝置中使二氧化碳與調合液接觸,藉此而進行。溫度越低液體對二氧化碳的吸收就越大,因此為了有效率地進行碳酸化,較好的是,冷卻至10℃以下再進行壓入。又,於一定溫度下,碳酸化器內的二氧化碳壓力越高則吸收效率變得越高。通常碳酸化係於0.1~4 kg/cm2
壓力下進行;於可樂飲料或蘇打飲料中以氣體壓力為3.0 kg/cm2
以上,於無果汁而添加水果系香料之飲料中以氣體壓力為0.7 kg/cm2
以上,於添加果汁或乳製品之飲料中以氣體壓力為0.2 kg/cm2
以上之壓力填充二氧化碳。
本發明之發泡性容器裝飲料中,可含有作為電解質之0.001~0.5質量%之鈉及/或0.001~0.2質量%之鉀。此處,鈉與鉀的合計濃度,較好的是0.001~0.5質量%,若該合計小於0.001質量%,則視飲用的場合而存在感覺口味不夠充分之傾向,並非較好。另一方面,若超過0.5質量%,則鹽類本身的味道較強,存在不利於長期飲用之傾向。
作為本發明中所使用之鈉,可添加:抗壞血酸鈉、氯化鈉、碳酸鈉、碳酸氫鈉、檸檬酸鈉、磷酸鈉、磷酸氫鈉、酒石酸鈉、苯甲酸鈉等以及其等之混合物的鈉鹽。又,鈉,亦包含來自所添加果汁或茶成分中的鈉。鈉濃度變得愈高,則飲料的變色程度會變得愈高。就製品之安定性之觀點而言,本發明之發泡性容器裝飲料中之鈉含量,較好的是0.001~0.5質量%、更好的是0.002~0.4質量%、更好的是0.003~0.2質量%。
本發明中所使用之鉀,可添加除茶萃取液中所含有鉀以外的化合物而增加其濃度。例如,亦可添加如氯化鉀、碳酸鉀、硫酸鉀、醋酸鉀、碳酸氫鉀、檸檬酸鉀、磷酸鉀、磷酸氫鉀、酒石酸鉀、山梨酸鉀等或其等混合物之鉀鹽,亦包含來自所添加的果汁或香料者。鉀濃度,與鈉濃度比較,對長期高溫保存時的色調影響較大。就如上述之安定性之觀點而言,本發明之發泡性容器裝飲料中之鉀含量,較好的是0.001~0.2質量%,更好的是0.002~0.15質量%、更好的是0.003~0.12質量%。
本發明之發泡性容器裝飲料中,可使用酸味料。於酸味料的濃度較小之情形時,可抑制苦味、澀味,但酸味過弱。另一方面,於酸味料的濃度較大之情形時,酸味變強,但苦味或澀味亦變強。本發明之酸味料,係選自抗壞血酸、檸檬酸、葡萄糖酸、琥珀酸、酒石酸、乳酸、富馬酸、磷酸、蘋果酸及其等之鹽類中之1種以上。具體可舉出:檸檬酸三鈉、檸檬酸一鉀、檸檬酸三鉀、葡萄糖酸鈉、葡萄糖酸鉀、酒石酸鈉、酒石酸三鈉、酒石酸氫鉀、乳酸鈉、乳酸鉀、富馬酸鈉等。
至於其他酸味料,可舉出:己二酸及其鹽、自天然成分中萃取之果汁類。較好的是,本發明之發泡性容器裝飲料中含有0.01~0.7質量%、尤其是0.02~0.6質量%之酸味料(以全體計)。又,亦可使用無機酸類、無機酸鹽類。至於無機酸類、無機酸鹽類,可舉出:磷酸氫二銨、磷酸二氫銨、磷酸氫二鉀、磷酸氫二鈉、磷酸二氫鈉、偏磷酸三鈉、磷酸三鉀等。該等無機酸類、無機酸鹽類,較好的是本發明之發泡性容器裝飲料中之0.01~0.5質量%、尤其好的是0.02~0.3質量%。
為了提高嗜好性,可於本發明之發泡性容器裝飲料中添加香料或果汁(水果汁)。本發明中可使用天然或合成香料或者果汁。該等可自水果汁、水果香料、植物香料或者其等的混合物中選擇。尤其以水果汁與茶香料一起,較好的是綠茶或黑茶香料之組合為佳。尤其好的水果汁,可使用蘋果、梨、檸檬、酸橙、紅橘、葡萄柚、蔓越橘、橙、草莓、葡萄、獼猴桃、鳳梨、百香果、芒果、番石榴、樹莓以及櫻桃。尤其好的是柑橘汁、葡萄柚、橙、檸檬、酸橙、紅橘、芒果、百香果以及番石榴之果汁,或者其等之混合物。較好的天然香料為茉莉、西洋甘菊、薔薇、胡椒薄荷、山楂、菊花、菱角、甘蔗、荔枝、竹筍等。本發明之發泡性容器裝飲料中含有較好的是0.001~20重量%、更好的是0.002~10重量%之果汁。尤其好的香料,係包含橙香料、檸檬香料、酸橙香料以及葡萄柚香料之柑橘香料。代替柑橘香料,可使用如蘋果香料、葡萄香料、樹莓香料、蔓越橘香料、櫻桃香料、鳳梨香料等各種其他水果香料。該等香料,可自如水果汁及香油之天然源中衍生,或者亦可合成。
香料可包含各種香料的混合物,例如自檸檬及酸橙香料、柑橘香料中選擇之香辛料(典型的為可樂軟飲料香料)等。可於本發明之發泡性容器裝飲料中添加較好的是0.0001~5重量%、更好的是0.001~3重量%之上述香料。
本發明之發泡性容器裝飲料中可進而含有維生素。較好的是,添加維生素A、維生素B及維生素E。又,亦可添加如維生素D之其他維生素。至於維生素B,可舉出:選自肌醇、噻胺鹽酸鹽、噻胺硝酸鹽、核黃素、核黃素5'-磷酸酯鈉、菸鹼酸、菸鹼醯胺、泛酸鈣、吡哆醇鹽酸鹽、氰鈷胺之維生素B群;葉酸、生物素亦可用於本發明之飲料。較好的是,每瓶飲料中含有1日所需量(美國RDI標準:US2005/0003068記載:U.S.Reference Daily Intake)的至少10質量%以上之該等維生素。
本發明之發泡性容器裝飲料中可進而含有礦物質。較好的礦物質為鈣、鉻、銅、氟、碘、鐵、鎂、錳、磷、硒、矽、鉬及鋅。尤其好的礦物質為鎂、磷及鐵。
為了抑制非聚合物兒茶素類的苦味,可於本發明之發泡性容器裝飲料中併用環糊精。環糊精,可舉出:α-環糊精、β-環糊精、γ-環糊精。以成為較好的是0.005~0.5質量%、更好的是0.02~0.3質量%、尤其好的是0.05~0.25質量%之方式,於本發明之容器裝飲料中添加該等環糊精。
於如此之本發明之發泡性容器裝飲料中,與來自茶的成分組合,亦可單獨添加或併用添加抗氧化劑、各種酯類、色素類、乳化劑、保存料、調味料、蔬菜萃取物類、花蜜萃取物類、品質安定劑等添加劑。
又,本發明之發泡性容器裝飲料,可製成茶系飲料,亦可製成非茶系飲料。至於茶系飲料,可舉出:綠茶飲料等不醱酵茶飲料、烏龍茶飲料等半醱酵茶飲料、紅茶飲料等醱酵茶飲料。又,本發明之發泡性容器裝飲料,亦可製成機能性飲料,例如亦可製成強化水(enhanced water)、瓶裝水、運動飲料、似水飲料(near water)等非茶系飲料。
本發明之發泡性容器裝飲料之熱量,係對100 ml飲料中所含葡萄糖、果糖及蔗糖以每1 g為4 kcal而算出,赤蘚糖醇係以每1 g為0 Kcal而算出。此處本發明之容器裝茶系飲料具有低熱量,熱量較好的是40 kcal/240 ml以下、更好的是2~35 kcal/240 ml以下、尤其好的是3~30 kcal/240 ml以下。
本發明之發泡性容器裝飲料可使用之容器,可以下列通常之形態而提供:以聚對苯二甲酸乙二醇酯為主成分之成形容器(所謂PET瓶)、金屬罐、與金屬箔或塑膠薄膜加以複合之紙容器、瓶等。此處所謂發泡性容器裝飲料,係指不加稀釋即可飲用者。
本發明之發泡性容器裝飲料之製造,若採用先前的碳酸飲料製造法即可,例如,製作將非聚合物兒茶素類、甘味料及水混合之溶液,進而製成添加果汁、香料、酸味料等之調合液,將一定量該調合液注入PET瓶等容器中,繼而填充碳酸水之Post-mix(後混合)方法;及一面用定量混合機以一定比率將非聚合物兒茶素類、甘味料、果汁及水連續混合者冷卻一面壓入二氧化碳,將該調合液填充於PET瓶等容器中之Pre-mix(前混合)方法。以如此方式將調合液填充於容器中後,以食品衛生法中規定的殺菌條件、較好的是於59~62℃溫度下加熱殺菌10~15分鐘左右,將內容物的飲料液進行殺菌處理。
非聚合物兒茶素類之測定使用以薄膜過濾器(0.8 μm)進行過濾繼而以蒸餾水進行稀釋之試料,使用島津製作所製高速液體層析儀(型號SCL-10AVP),再安裝十八烷基導入液體層析儀用充填式管柱L-管柱TMODS(4.6 mmΦ×250 mm:財團法人化學物質評價研究機構製),藉由梯度法於管柱溫度為35℃下進行測定。將移動相A液製成含有0.1 mol/L醋酸的蒸餾水溶液,將B液製成含有0.1 mol/L醋酸的乙腈溶液,以試料注入量為20 μL、UV檢測器波長為280 nm之條件進行測定(通常兒茶素類及咖啡因的濃度,係以質量/容積%(%[w/v])表示,但實施例中的含量係以質量乘以液量來表示)。
氣體容積之測定使用Gas Volume/Air Meter Model GVA-500(京都電子(股))進行測定。
風味之評價由5名官能檢查員進行飲用試驗。評價標準示於表1及表2之下欄。
保存試驗將所調製的飲料於37℃下保存4週,由5名官能檢查員以目視以表1及表2的下欄記載之標準,對保存前後之飲料色調變化進行評點。進而,測定非聚合物兒茶素類。
將100 g市售之綠茶萃取物之純化物(三井農林(股)「POLYPHENON HG」)分散於900 g之90.0質量%乙醇中,熟成30分鐘,以2號濾紙及孔徑0.2 μm的濾紙進行過濾,添加200 mL水,再進行減壓濃縮,藉此獲得純化物。所得純化物中之(A)非聚合物兒茶素類為15.2質量%,(C)非聚合物兒茶素沒食子酸酯體類之比例為58.1質量%。將所得非聚合物兒茶素類組合物中的75.0g投入不銹鋼製容器中,以離子交換水將總量調整為1000g,添加3.0g之5質量%碳酸氫鈉水溶液將pH值調整為5.5。繼而,於22℃、150r/min的攪拌條件下,添加將0.27g(相對於非聚合物兒茶素類為2.4%)龜甲萬公司製鞣酸酶KTFH(工業級,500U/g以上)溶解於1.07g離子交換水中的溶液,55分鐘後於pH值降低至4.24之時間點結束酶反應。繼而,將不銹鋼容器浸泡於95℃的水浴中,於90℃下保持10分鐘使酶活性完全失活後,冷卻至25℃,然後進行濃縮處理。鞣酸酶處理後獲得之綠茶萃取物純化物之非聚合物兒茶素類為15.0質量%、非聚合物沒食子酸酯體類之比率為45.2質量%。於該綠茶萃取物之純化物中的8.5g中,添加36.6g無水結晶果糖、7.5g赤蘚糖醇、1.0g無水檸檬酸、1.2g檸檬酸三鈉、0.5g L-抗壊血酸、1.0g檸檬酸橙香料,以冷卻至2℃的碳酸水將總量調整為1000g(二氧化碳2.2容積%),將其中的500g填充於耐壓性PET瓶中。其次,於60℃下進行12分鐘加熱殺菌處理。將該發泡性容器裝飲料之組成、風味評價結果及保存試驗結果揭示於表1。
代替檸檬酸橙,以與實施例1同樣之方式製造葡萄柚飲料、橙飲料。若係可樂飲料及沙士(root beer)飲料,則以二氧化碳為3.5容積%進行製造。
除添加1.0 g檸檬酸橙果汁、使用36.6 g無水結晶葡萄糖來代替無水結晶果糖以外,其餘以與實施例1同樣之方式製造飲料。
除將檸檬酸三鈉增量至15.0 g以外,其餘以與實施例1同樣之方法製造飲料。
除不使用無水結晶果糖及赤蘚糖醇以外,其餘以與實施例1同樣之方法製造飲料。
於實施例1中,不使用二氧化碳而製造飲料。
於實施例1中,以二氧化碳為5.0容積%製造飲料。
添加5.3 g實施例1中獲得之綠茶萃取物的純化物、2.2 g中國產綠茶萃取物粉末、36.6 g無水結晶果糖、7.5 g赤蘚糖醇、0.5 g L-抗壞血酸、1.0 g綠茶香料後,以冷卻至2℃的碳酸水將總量調整為1000 g(二氧化碳2.2容積%)後,以與實施例1同樣之方法製造飲料。將該發泡性容器裝飲料的組成、風味評價結果以及保存試驗結果揭示於表2。
添加8.5 g實施例1中獲得之綠茶萃取物的純化物、0.5 g印度產紅茶萃取物粉末、36.6 g無水結晶果糖、7.5 g赤蘚糖醇、0.5 g L-抗壞血酸、2.0 g 5%碳酸氫鈉水溶液、1.0 g紅茶香料後,以冷卻至2℃的碳酸水將總量調整為1000 g(二氧化碳為2.2容積%)後,以與實施例1同樣之方法製造飲料。將該發泡性容器裝飲料之組成、風味評價結果以及保存試驗結果示揭於表2。
除添加0.3 g L-抗壞血酸鈉及1.5 g 5%碳酸氫鈉溶液來代替L-抗壞血酸以外,其餘以與實施例7同樣之方法製造飲料。
除於實施例7中不使用無水結晶果糖、赤蘚糖醇以外,其餘以與實施例7同樣之方法製造飲料。
由表1及表2可明瞭,含有高濃度的非聚合物兒茶素類、甘味料及二氧化碳之發泡性容器裝飲料,可顯著地抑制苦味,可長期保存。

- 一種發泡性容器裝飲料,其係添加茶萃取物之純化物者且含有:(A)非聚合物兒茶素類0.08~0.5質量%、(B)包含赤蘚糖醇與選自果糖、葡萄糖及果糖葡萄糖液糖中之至少一種之甘味料0.0001~20質量%、以及(C)二氧化碳;氣體容積為0.5容積%至4.0容積%,(D)非聚合物兒茶素類之非表體類之比率為5~25質量%,(A)非聚合物兒茶素類中(E)沒食子酸酯體類之比率([(E)/(A)]×100)為5~55質量%,(F)pH值為2.5~5.1,(G)咖啡因與(A)非聚合物兒茶素類之含有質量比[(G)/(A)]為0.0001~0.16。
- 如請求項1之發泡性容器裝飲料,其進一步含有選自抗壞血酸、檸檬酸、葡萄糖酸、琥珀酸、酒石酸、乳酸、富馬酸、磷酸、蘋果酸及其等的鹽類中之1種以上。
- 如請求項1之發泡性容器裝飲料,其進而含有選自鈉、鉀、鈣、鎂、鋅及鐵中之至少1種以上之礦物質。
- 如請求項1之發泡性容器裝飲料,其中每1瓶飲料中進而含有1日所需量的10質量%以上之自選自肌醇、噻胺鹽酸鹽、噻胺硝酸鹽、核黃素、核黃素5'-磷酸酯鈉、菸鹼酸、菸鹼醯胺、泛酸鈣、吡哆醇鹽酸鹽以及氰鈷胺之維生素B群、葉酸以及生物素中選擇之1種以上。
