技术领域
本发明属于运动营养食品领域,具体涉及一种用于减脂的谷物代餐棒及其制备方法。
背景技术
减脂是一项复杂的、严谨的科学,需要科学的理论指导和实践方法才能达到减重、减脂、改善身体情况、提高免疫力的目的。目前科学公认的健康减肥方法是运动干预和饮食干预。饮食干预的关键要素是打造能量缺口,使每日摄入的能量小于每日所需要的能量。目前关于饮食干预的方法有很多,比如节食、辟谷、轻断食、低碳水饮食、慢碳水饮食、食用代餐食品等。
目前代餐食品,比如代餐粉、代餐棒、代餐饼干等,由于热量低、食用方便的特点受到越来越多减肥人士的欢迎,但大多以概念性产品居多,缺乏营养性,饱腹时间短;且还添加各种香精、色素和防腐剂,对产品的营养性和安全性大打折扣。
发明内容
针对上述技术问题,本发明根据科学的减脂理论和普通人群膳食营养需求,开发出具有原料安全性和营养性、配伍科学合理、有效减脂、食用方便的代餐产品,其具有能量负平衡、强饱腹、低升糖、全营养的特点,使减肥人士达到减重减脂目的的同时,还能保证身体的健康与活力。
为了达到上述技术效果,本发明采用下述方案:
一种用于减脂的谷物代餐棒,包括如下重量份的组分:浓缩乳清蛋白0.5~15份,酪蛋白酸钙0.5~10份,大豆分离蛋白0.5~20份,水解鱼胶原蛋白0.5~10份,魔芋粉2~10份,圆苞车前子壳粉0.1~10份,白芸豆提取物0.1~5份,马铃薯提取物0.1~5份,共轭亚油酸甘油酯粉0.5~10份,帝斯曼fabuless棕榈油粉0.05~10份,冻干水果粉0.5~5份,甜菜汁粉0.5~10份,混合谷物粉0.05~20份,混合生育酚浓缩物0.01-1份,活性益生菌粉0.2~5份,复合营养强化剂0.5~5份,冻干水果颗粒1~20份,坚果粒0.5~20份,奇亚籽0.5~15份,膨化谷物颗粒1~30份,膨化大豆蛋白粒0.5~30份,低聚异麦芽糖5~20份,低聚果糖1~10份,抗性糊精0.5~5份,甘油0.5~10份,高油酸葵花籽油0.5~10份。
所述冻干水果粉包含草莓、蓝莓、蔓越莓、树莓、柑橘、甜橙、柚子、芒果等果粉中的一种或几种以上混合物。
所述活性益生菌粉包含瑞士乳杆菌、植物乳杆菌、副干酪乳杆菌、双歧杆菌、布拉迪酵母中的一种或几种以上混合物。
所述冻干水果颗粒包含草莓粒、蓝莓粒、蔓越莓粒、树莓粒、柑橘粒、甜橙粒、柚子粒、芒果粒等果粒中的一种或几种以上混合物。
所述坚果粒包含花生、芝麻、核桃、扁桃仁、杏仁、腰果、榛子、南瓜仁、夏威夷果等烘烤坚果颗粒中的一种或几种以上混合物。
所述膨化谷物颗粒包含小麦、玉米、黑米、红豆、薏米、藜麦、燕麦、紫薯等膨化谷物中的一种或几种以上混合物。
所述低聚异麦芽糖和低聚果糖均为液体状态,固形物含量在75%以上。

本发明中,所述谷物代餐棒可根据实际需求对其表面进行涂层或不涂层处理;若进行表面涂层处理,所用涂层可以是纯巧克力涂层或代可可脂巧克力涂层,口味上可以是黑巧克力、白巧克力、酸奶巧克力、草莓巧克力等;以起到改善外观、增加口味多样性的作用。
本发明还提供上述谷物代餐棒的制备方法,包括:
(1)粉料预混:将粉料浓缩乳清蛋白、酪蛋白酸钙、大豆分离蛋白、水解鱼胶原白、魔芋粉、圆苞车前子壳粉、白芸豆提取物、马铃薯提取物、共轭亚油酸甘油酯粉、帝斯曼fabuless棕榈油粉、冻干水果粉、甜菜汁粉、混合谷物粉、混合生育酚浓缩物、活性益生菌粉、复合营养强化剂按比例称量,并混合均匀备用;
(2)颗粒料预混:将颗粒料冻干水果颗粒、坚果粒、奇亚籽、膨化谷物颗粒、膨化大豆蛋白粒按比例称量,并混合均匀备用;
(3)粉料颗粒料混合:将步骤(1)和(2)获得的物料进行混合,得到粉料颗粒料混合物,备用;
(4)浆料制备:将低聚异麦芽糖、低聚果糖、抗性糊精、甘油按比例称量,倒入容器内混合均匀,预热到60-65℃,再加入高油酸葵花籽油,边搅拌边加热熬煮,熬煮至所需固形物,停止加热,保温备用;
(5)混合搅拌:按照配方比例,将步骤(4)所得浆料倒入步骤(3)所得粉料颗粒料混合物中,充分混匀后,压制成型,冷却,切割包装。
本发明的有益效果如下:
(1)本发明选用优质蛋白浓缩乳清蛋白、酪蛋白酸钙、大豆分离蛋白和水解鱼胶原蛋白复配,蛋白含量超过12%,符合高蛋白宣称,高蛋白可以延长饱腹感。而且具有动植物蛋白搭配、快慢蛋白搭配的优点,而且具有人体所需要的必需氨基酸含量。
(2)本发明添加不同来源的膳食纤维如魔芋粉、圆苞车前子壳粉、抗性糊精(水溶性膳食纤维)、奇亚籽来进行复配,这些原料具有遇水溶胀,增加饱腹感,润肠通便的功效。膳食纤维能促进咀嚼,增加唾液的分泌,结合大量的水而使胃部膨胀,水合后粘度增加能够延缓营养物质的吸收和胃的排空,具有回肠刹车作用从而减慢肠道的蠕动,具有减脂瘦身、润肠通便的功效。
(3)本发明添加有不同功效的减脂补剂,分别从抑制食欲、增加饱腹、促进能量消耗、糖和淀粉的吸收阻断等方面综合作用进行减脂,其中:Fabuless棕榈油粉(帝斯曼公司开发、拥有专利)具有抑制食欲的功效,其独特的乳化系统延缓了油在胃肠道中的消化,到达回肠时仍能保持相对完整的结构,而未经消化的脂肪触发回肠内的食欲控制系统,向大脑发送饱腹感信号。马铃薯提取物具有提高CCK水平,更快产生饱腹感且延长饱腹时间的功效。共轭亚油酸(CLA)具有促进脂肪燃烧、防止肌肉分解、提高骨密度等功效。白芸豆提取物中含有的α-淀粉酶抑制剂,可以通过减慢和降低淀粉降解,弱化餐后血糖激增。另外,含有的红血球凝聚活性,可以与胃上皮细胞和肠道内的刷状缘膜结合,刺激肠促胰酶肽(CCK)和胰高血糖素的释放,降低饥饿感。此四种减脂补剂综合作用,可以有效增强产品的饱腹效果,达到高效减脂的目的。
(4)本发明添加的活性益生菌粉含有嗜酸乳杆菌、双歧杆菌、副干酪乳杆菌、鼠李糖乳杆菌、植物乳杆菌等的一种或几种,这些菌种具有提高机体免疫力、改善肠道健康、防止便秘等功效;而产品原辅料中的低聚异麦芽糖和低聚果糖不同于一般糖浆,属于益生元,具有促进益生菌增殖、调理菌群平衡、减轻便秘、缓解胰岛素拮抗,减少肥胖症和2型糖尿病、增强免疫力、预防癌症等功效;益生菌和益生元结合,具有相互促进、相辅相成的功效。
(5)本发明添加的复合营养素包括:维生素A、维生素D、维生素E、维生素B1、维生素B2、维生素B6、维生素B12、维生素C、烟酸、叶酸、泛酸、钙、铁、锌;涵盖人体所需要的多种维生素和矿物质,一般节食或长期使用单一食物,会导致维生素和矿物质的缺失,本发明中特殊添加这些成分,保证产品的营养全面,防止消费者长期节食或食用一般代餐产品引起的营养不良。
(6)本发明添加的高油酸葵花籽油,油酸含量高达普通葵花籽油的3倍,含多种不饱和脂肪酸,具有调节血脂、清理血栓、免疫调节、补脑健脑等功效。另外高油酸葵花籽油比普通葵花籽油具有更好的氧化稳定性,更耐热和耐加工,不易哈拉,并具有辅助糖浆粘结、防止棒干燥的效果。

浓缩乳清蛋白4份,酪蛋白酸钙1份,大豆分离蛋白2.5份,水解鱼胶原蛋白2份,魔芋粉2份,圆苞车前子壳粉1.5份,白芸豆提取物0.8份,马铃薯提取物0.53份,共轭亚油酸甘油酯粉1.2份,帝斯曼fabuless棕榈油粉0.6份,冻干水果粉3份,甜菜汁粉1份,混合谷物粉6份,混合生育酚浓缩物0.07份,活性益生菌粉2份,复合营养强化剂1.5份,冻干水果颗粒6份,坚果粒6份,奇亚籽4份,膨化谷物颗粒14.3份,膨化大豆蛋白粒10份,低聚异麦芽糖10份,低聚果糖10份,抗性糊精4份,甘油3份,高油酸葵花籽油3份。
上述减脂谷物代餐棒的制备方法,包含以下步骤:
(1)粉料预混:将粉料浓缩乳清蛋白、酪蛋白酸钙、大豆分离蛋白、水解鱼胶原白、魔芋粉、圆苞车前子壳粉、白芸豆提取物、马铃薯提取物、共轭亚油酸甘油酯粉、帝斯曼fabuless棕榈油粉、冻干水果粉、甜菜汁粉、混合谷物粉、混合生育酚浓缩物、活性益生菌粉、复合营养强化剂按比例称量,于三维混合机中混合20min,三维混合机转速500r/min,备用;
(2)颗粒料预混:将颗粒料冻干水果颗粒、坚果粒、奇亚籽、膨化谷物颗粒、膨化大豆蛋白粒按比例称量,于三维混合机中混合15min,三维混合机转速500r/min,备用;
(3)粉料颗粒料混合:将步骤(1)和(2)获得的物料进行混合,于三维混合机中混合20min,三维混合机转速500r/min,得到粉料颗粒料混合物,备用;
(4)浆料制备:将低聚异麦芽糖、低聚果糖、抗性糊精、甘油按比例称量,倒入熬煮锅中搅拌混合均匀,预热到65℃,再加入高油酸葵花籽油,边搅拌边加热熬煮,熬煮至105℃,糖度在77%-79%之间,停止加热,卸料入保温锅中,保温温度60℃,备用;
(5)混合搅拌:按照配方比例,将糖浆倒入粉料与颗粒料混合物中,搅拌7min混合均匀,上棒线压制成型,冷却后,切割包装。
效果验证
实验例1营养成分分析
本实验例在于研究本发明所述的减脂谷物代餐棒的营养成分,分析其是否符合能量负平衡和全营养的要求。
1、取本发明实施例1制备的减脂谷物代餐棒,按照国家标准的要求,对各营养成分进行检测,结果如表1:

以上结果表明:
(1)实施例1所得减脂谷物代餐棒的蛋白含量达到18.5%,膳食纤维含量为17.0%,符合GB28050关于高蛋白、高膳食纤维含量的宣称;(2)脂肪大部分来自优质脂肪来源高油酸葵花籽油和共轭亚油酸甘油酯,不含反式脂肪酸;(3)含有11种维生素,3种矿物质,第七大营养素膳食纤维,对减脂和促进肠道健康有有益影响。
2、根据《中国居民膳食营养素参考摄入量(2013版)》,18-49岁的轻体力活动者1天需要摄入的能量为:男性2250千卡,女性1800千卡,其中早餐、中餐、晚餐能量摄入比例为20:40:40。以晚餐为例,女性晚餐正常所需能量补充应为:1800×40%=720千卡。
食用实施例1所述减脂谷物棒2支(推荐摄入量为每餐2支,一支30g),能量摄入1423/4.186×0.6=204千卡。所以,食用本发明减脂谷物棒2支会使热量摄入减少:720-204=516千卡。人体内1g脂肪完全氧化,可以释放9千卡的热量,516千卡的热量相当于燃烧人体内57.3g脂肪。所以本发明的减脂谷物代餐棒从能量负平衡角度来讲,有利于减脂;且营养全面,不会出现长期食用而导致的营养不良等问题。
实验例2血糖生成指数
本实验例在于研究本发明所述的减脂谷物代餐棒的血糖生成指数,分析其是否属于低GI食物。
1.实验对象与方法
1.1实验对象
20名年龄在20-40岁健康成年人,男性10名,女性10名。
1.2实验方法
1.2.1葡萄糖耐量试验当天清晨空腹(禁食10h)采静脉血3mL后,口服50g纯葡萄糖粉(溶于200mL温水),于5min内服完,于服后第15、30、45、60、90、120min分别从肘静脉采血3mL,离心后测血糖值。
1.2.2食物血糖应答试验葡萄糖耐量试验后,取实施例2、实施例3所得代餐棒样品分别作为受试物1、受试物2,于试验第3、6天分别进行受试物1和受试物2的血糖应答试验,试验结果取全部受试者血糖应答的平均值。受试者清晨空腹抽取静脉血3mL,然后食用相当于50g碳水化合物的受试物,分别在15、30、45、60、90、120min采取静脉血3mL,血液经离心后,于3h内测定血糖值。
1.2.3食物GI值的计算各组试验数据,以葡萄糖为参照物(GI=100),食物GI的计算采用Wolever的方法,GI值的计算由相应软件完成。以时间为横坐标,各时点血糖值为纵坐标,制作血糖应答曲线。
GI=(餐后2h血浆葡萄糖曲线下面积×100%)/(等量葡萄糖2h血浆葡萄糖曲线下面积)
2.实验结果与分析
2.1受试物的血糖应答
20名志愿者分别服用受试物1、受试物2和葡萄糖前后的血糖水平如表2所示。其中,服用受试物1和受试物2后,在15min、30min、45min、60min、90min的平均血糖值明显降低,具有统计学意义,至120min时各检测结果基本接近,无明显差异。

2.2受试物的血糖反应曲线
如图1所示,为空白、口服50g葡萄糖、受试物1和受试物2后的血糖反应曲线。
分别计算每位受试者服用葡萄糖、受试物1和受试物2后的血糖反应曲线下面积,分别计算相应的GI值,最后求得受试物1和受试物2的平均GI值,以葡萄糖GI=100为标准,则受试物1样品的平均GI值为42.79,受试物2样品的平均GI值为48.99,按目前碳水化合物类食品血糖指数高低的分类原则,此受试物1和受试物2均属于低GI食品。
实验例3饱腹效果测试
本实验例在于研究本发明所述的减脂谷物代餐棒的饱腹效果,分析其是否达到4-6小时长效饱腹的效果。
选择40名健康成年人,男性20名,女性20名,每天8:00前食用实施例3所得减脂谷物代餐棒2支作为早餐,并适量喝水,记录食用时间及食用后体感,每隔1小时询问并记录受试者体感,观察其饥饿状态。

由表3可以看出,无论男性女性,食用减脂谷物代餐棒1根可以维持4个小时的饱腹感,不会感觉到明显饥饿感;男性5h时开始出现明显饥饿感,女性6h开始出现明显饥饿感,但均可以忍受。故减脂谷物代餐棒的饱腹效果达到了预期的结果,可以实现4-5个小时的饱腹效果。
实验例4稳定性
本实验例在于研究本发明所述的减脂谷物代餐棒的产品稳定性,分析其货架期的储藏期限。
将实施例3所得的减脂谷物代餐棒食品置于37℃,湿度为75%的条件下,选择代表产品内在质量的菌落总数、酵母、霉菌等指标,每月采样测定一次(按照国标规定的取样方法,抽检5个点),连续三个月,测得指标结果如表4。

由表4可以看出,微生物指标细菌总数、大肠菌群、霉菌酵母在加速考察3个月内实验数据均在可控范围内,但感官指标在2个月内相对稳定,3个月时有微弱哈拉味产生,以及颜色有明显的褪色。所以,按照加速实验结果推算,保质期可控制在18个月以内,微生物和感官指标均可保证无明显变化。
实验例5减脂效果
本实验例在于研究本发明所述的减脂谷物代餐棒对减肥人士的减脂效果。
1.实验对象与方法
1.1实验对象
60名年龄在18-50岁肥胖患者,男性30名,女性30名,入选标准为:年龄18-50岁,BMI≥24kg/m2,且女性腰围≥80cm,男性腰围≥90cm;同时需排除严重糖尿病、痛风、肾病、精神性疾病、严重胃肠道疾病、肿瘤患者、心脏病和脑血管病患者、以及专业医生建议不适宜减肥人群。
1.2实验方法
将30名男性和30名女性分别分成两组,在研究对象尚未食用代餐棒之前,将体质的各种相关指标进行测试并且进行首次记录。然后进行减脂代餐棒食用实验,为期8周。在减脂代餐棒食用期间,除早晚餐食用实施例3所得减脂代餐棒(2支+300ml水),中餐食用由专门提供的日常食品,期间不吃任何零食,尤其杜绝快餐等高热量饮食。每天饮水量为1000ml-1500ml。在食用减脂代餐棒的第8周结束之后,分别再次测量各项实验指标并且进行记录。测量指标包括:体重、腰围、体重指数、体脂百分比、脂肪量和水分百分比。
2.实验结果与分析
采用SPSS9.0和EXCEL表格对实验数据进行统计分析,若0.01<P≤0.05,说明有显著性差异,若P≤0.01说明有高度显著性差异。

3.实验结果与分析
由表5可以看出,男性和女性肥胖患者的体重、腰围和体重指数均显著降低,其中,男性体重平均减少5.5%,女性减少6.3%。男性腰围平均减少6.9cm,女性减少5.7cm。经身体脂肪测定,患者的脂肪率和脂肪量均显著下降,其中,男性脂肪量的减少达原脂肪量的18.9%,女性达14.4%;而去脂体重和身体总水量则无显著变化。由此表明,食用减脂代餐棒能有效降低肥胖人群体重及腰围,降低体脂含量,且在减脂过程中无明显饥饿感。
虽然,上文中已经用一般性说明及具体实施方案对本发明作了详尽的描述,但在本发明基础上,可以对之作一些修改或改进,这对本领域技术人员而言是显而易见的。因此,在不偏离本发明精神的基础上所做的这些修改或改进,均属于本发明要求保护的范围。

1.一种用于减脂的谷物代餐棒,其特征在于,包括如下重量份的组分:浓缩乳清蛋白0.5~15份,酪蛋白酸钙0.5~10份,大豆分离蛋白0.5~20份,水解鱼胶原蛋白0.5~10份,魔芋粉2~10份,圆苞车前子壳粉0.1~10份,白芸豆提取物0.1~5份,马铃薯提取物0.1~5份,共轭亚油酸甘油酯粉0.5~10份,帝斯曼fabuless棕榈油粉0.05~10份,冻干水果粉0.5~5份,甜菜汁粉0.5~10份,混合谷物粉0.05~20份,混合生育酚浓缩物0.01-1份,活性益生菌粉0.2~5份,复合营养强化剂0.5~5份,冻干水果颗粒1~20份,坚果粒0.5~20份,奇亚籽0.5~15份,膨化谷物颗粒1~30份,膨化大豆蛋白粒0.5~30份,低聚异麦芽糖5~20份,低聚果糖1~10份,抗性糊精0.5~5份,甘油0.5~10份,高油酸葵花籽油0.5~10份。
2.根据权利要求1所述的谷物代餐棒,其特征在于,所述冻干水果粉包含草莓、蓝莓、蔓越莓、树莓、柑橘、甜橙、柚子、芒果等果粉中的一种或几种以上混合物;
和/或,所述活性益生菌粉包含瑞士乳杆菌、植物乳杆菌、副干酪乳杆菌、双歧杆菌、布拉迪酵母中的一种或几种以上混合物;
和/或,所述冻干水果颗粒包含草莓粒、蓝莓粒、蔓越莓粒、树莓粒、柑橘粒、甜橙粒、柚子粒、芒果粒等果粒中的一种或几种以上混合物;
和/或,所述坚果粒包含花生、芝麻、核桃、扁桃仁、杏仁、腰果、榛子、南瓜仁、夏威夷果等烘烤坚果颗粒中的一种或几种以上混合物;
和/或,所述膨化谷物颗粒包含小麦、玉米、黑米、红豆、薏米、藜麦、燕麦、紫薯等膨化谷物中的一种或几种以上混合物;
和/或,所述低聚异麦芽糖和低聚果糖为液体或固体状态,根据最终的产品型式而选择不同的状态;若为液体状态,固形物含量在75%以上。
3.根据权利要求1或2所述的谷物代餐棒,其特征在于,包括如下重量份的组分:浓缩乳清蛋白2-4份,酪蛋白酸钙0.5-1.5份,大豆分离蛋白2-3份,水解鱼胶原蛋白1-2份,魔芋粉2-3份,圆苞车前子壳粉1-2份,白芸豆提取物0.65-1份,马铃薯提取物0.5-0.7份,共轭亚油酸甘油酯粉1-1.5份,帝斯曼fabuless棕榈油粉0.5-0.6份,冻干水果粉2-3份,甜菜汁粉1-1.7份,混合谷物粉3-6份,混合生育酚浓缩物0.05-0.1份,活性益生菌粉1-2份,复合营养强化剂1-1.5份,冻干水果颗粒5.5-7份,坚果粒5-7份,奇亚籽4-7份,膨化谷物颗粒12-17份,膨化大豆蛋白粒10-13份,低聚异麦芽糖6-12份,低聚果糖8-10份,抗性糊精3-5份,甘油3-5份,高油酸葵花籽油3-5份。

8.根据权利要求1-7任一所述的谷物代餐棒,其特征在于,根据实际需要,对所述谷物代餐棒表面进行涂层或不涂层处理;所述涂层为纯巧克力涂层或代可可脂巧克力涂层。
9.权利要求1-8任一所述谷物代餐棒的制备方法,其特征在于,包括:
(1)粉料预混:将粉料浓缩乳清蛋白、酪蛋白酸钙、大豆分离蛋白、水解鱼胶原白、魔芋粉、圆苞车前子壳粉、白芸豆提取物、马铃薯提取物、共轭亚油酸甘油酯粉、帝斯曼fabuless棕榈油粉、冻干水果粉、甜菜汁粉、混合谷物粉、混合生育酚浓缩物、活性益生菌粉、复合营养强化剂按比例称量,并混合均匀备用;
(2)颗粒料预混:将颗粒料冻干水果颗粒、坚果粒、奇亚籽、膨化谷物颗粒、膨化大豆蛋白粒按比例称量,并混合均匀备用;
(3)粉料颗粒料混合:将步骤(1)和(2)获得的物料进行混合,得到粉料颗粒料混合物,备用;
(4)浆料制备:将低聚异麦芽糖、低聚果糖、抗性糊精、甘油按比例称量,倒入容器内混合均匀,预热到60-65℃,再加入高油酸葵花籽油,边搅拌边加热熬煮,熬煮至所需固形物,停止加热,保温备用;
(5)混合搅拌:按照配方比例,将步骤(4)所得浆料倒入步骤(3)所得粉料颗粒料混合物中,充分混匀后,压制成型,冷却,切割包装。
