技术领域
本发明属于固体饮料食品配方技术领域,特别涉及一种益生菌植物蛋白粉固体饮料。
背景技术
蛋白质是人体不可缺少的七大重要营养素之一,是保证机体健康最重要的营养素,它是维持和修复机体以及细胞生长所必需的,它不仅影响机体组织如肌肉的生长,还参与激素的产生、免疫功能的维持、其它营养物质和氧的转运以及血红蛋白的生成、血液凝结等多方面。人体通过日常的动物性食物和植物性食物来摄取动物性蛋白以及植物性蛋白。随着人们的健康意识日益增强以及收入水平的提高,人们对蛋白质的要求逐渐提高。动物性蛋白营养价值高,但含有对人体有害的过量的饱和脂肪、胆固醇、浓缩的荷尔蒙、抗生素等,过量食用动物性蛋白质会导致人体脂肪和胆固醇升高。植物性蛋白存在氨基酸含量不足、消化和吸收要比动物性蛋白差的缺点。在复合的植物性蛋白粉中加入益生菌、膳食纤维,不仅可以解决植物性蛋白的消化、吸收差的问题,而且多种植物复合的蛋白粉既不含胆固醇又可以提供含量丰富的氨基酸,此类产品还未见报道。
发明内容
本发明目的是提供一种能够维持肠道微生态系统及增强机体免疫力的益生菌植物蛋白粉固体饮料,该固体饮料为全植物配方。
本发明另一目的是提供一种益生菌植物蛋白粉固体饮料的制备方法,采用常规的制剂方法制备成粉剂,分别准确称取各组分,经过配料、预混和总混,充分混合均匀,分装。

一种益生菌植物蛋白粉固体饮料,由下列组分按重量百分比组成:
鼠李糖乳杆菌冻干粉 1-15%

一种所述益生菌植物蛋白粉固体饮料的制备方法,具体为:将各组分采用常规的制剂方法制备成粉剂,颗粒状的原料组分要经过粉碎并通过60-80目筛网。预混合,先将维生素B6和维生素E混匀,再与豌豆蛋白、小麦低聚肽粉、木糖醇、低聚异麦芽糖、抗性糊精、乙二胺四乙酸铁钠和葡萄糖酸锌混合在一起,得预混合物,混匀时间为20-40分钟。再向预混合物中添加量大的原辅料鼠李糖乳杆菌冻干粉、植物乳杆菌冻干粉、嗜酸乳杆菌冻干粉、玉米粉、大豆分离蛋白、椰蓉、速溶玫瑰花粉(重瓣红玫瑰),进行总混,总混时间为60-120分钟。将样品分装,经检验合格后,可装盒、装箱,成品检验合格后方可入库。
与现有技术相比,本发明具有以下突出的优点:
1、本发明的益生菌植物蛋白粉固体饮料营养素齐全、比例适当、口感佳,在补充复合蛋白质、复合益生菌的同时补充膳食纤维、矿物质和维生素。
本发明以大豆分离蛋白、豌豆蛋白、小麦低聚肽粉为主要原料的植物蛋白粉。
多种植物蛋白质根据不同比例混合后,其营养价值高于原单一品种。三者科学配比,其中所含氨基酸能够取长补短,相互补充,提高蛋白质生物利用率,提供更为全面均衡的营养。
大豆分离蛋白的蛋白质含量高,含有8种氨基酸,且含量较为平衡,属于全价蛋白质,同时还含有人体必需脂肪酸、磷脂和丰富的钙、磷等矿物质。大豆分离蛋白消化利用率较高,氨基酸组成与牛奶蛋白质相近,在营养价值上可等同动物蛋白。在基因结构上也接近人体氨基酸,所以是高营养价值的植物蛋白质。
从豌豆中提取的豌豆蛋白蛋白质,属于全价蛋白质,含有人体所必需的十八种氨基酸,富含赖氨酸、精氨酸和支链氨基酸。精氨酸和支链氨基酸有助肌肉生长;赖氨酸利于提高整体蛋白的利用。
小麦低聚肽是小麦蛋白酶解产物,氨基酸含量丰富,富含谷酰胺,能够有效调节神经,抑制胆固醇上升,也可作肠功能障碍时的特殊营养物质。小麦低聚肽具有血管紧张素转化酶(ACE)抑制作用、免疫调节、抗氧化等多种生物活性,能够刺激机体淋巴细胞增殖,增强巨噬细胞吞噬功能,提高机体抵御外界病原体感染的能力,降低机体发病率等作用。
本发明所述的复合益生菌粉为鼠李糖乳杆菌冻干粉、植物乳杆菌冻干粉和嗜酸乳杆菌冻干粉。益生菌可促进蛋白粉的消化吸收,还能产生维生素、短链脂肪酸、抗氧化剂、氨基酸等等。益生菌与蛋白粉对提高机体的免疫功能均有显著作用。
鼠李糖乳杆菌的最大特点是具有极高的安全性;植物乳杆菌是乳酸菌的一种,活菌数比较高,能大量的产酸,且其产出的酸性物质能降解重金属;嗜酸乳杆菌可以存活在胃肠中,维护整个胃肠道的微生态平衡。三种菌株的搭配合作,对拮抗有害菌定植,维持肠道微生态平衡,提高免疫功能效果显著。
本发明可提供膳食纤维。膳食纤维可维持肠道微生态环境良好。玉米粉中含有大量的膳食纤维、卵磷脂、亚油酸、谷物醇、维生素E等,具有降血压、降血脂、抗动脉硬化、预防肠癌、美容养颜、延缓衰老等多种保健功效。丰富的膳食纤维,能促进肠蠕动,减少有毒物质的吸收和致癌物质对结肠的刺激。
抗性糊精属于低分子水溶性膳食纤维,并且可通过结肠发酵表现出益生元的作用。
低聚异麦芽糖属于膳食纤维,同时作为益生元,能被益生菌利用促进肠道双歧杆菌和乳酸菌的增殖,抑制大肠杆菌等的生长,稳定肠道环境,提高肠黏膜免疫功能等。
本发明还可提供机体所需部分矿物质和维生素。
乙二胺四乙酸铁钠作为一种铁营养增补剂,具有高效吸收,无胃肠刺激,不影响其他矿物质元素及微量元素的吸收等优点。铁是人体内含量最多的一种微量元素,是构成血红蛋白和肌红蛋白的成分,参与组织中氧气和二氧化碳的转运和交换过程,可提高人体免疫力。铁缺乏时,可使吞噬细胞的杀菌能力降低。葡萄糖酸锌在体内解离成锌离子和葡萄糖酸,参与核糖核酸和脱氧核糖核酸的合成,是正常生长发育所需,可提高免疫力。维生素B6又称吡哆素,是一种水溶性维生素,为人体内某些辅酶的组成成分,参与多种代谢反应,尤其是和氨基酸代谢有密切关系。同时补充多种维生素和矿物质,对增强机体免疫力效果更好。

一、经严格筛选的符合相应的国家标准/行业标准和国家规定的合格产品,取得各原料;
分别准确称取鼠李糖乳杆菌冻干粉4kg、植物乳杆菌冻干粉4kg、嗜酸乳杆菌冻干粉4kg、玉米粉14kg、大豆分离蛋白25kg、豌豆蛋白8kg、小麦低聚肽粉4kg、木糖醇10kg、低聚异麦芽糖10kg、椰蓉5kg、速溶玫瑰花粉(重瓣红玫瑰)5.4kg、抗性糊精6.3kg、维生素B60.0015kg、维生素E 0.0485kg、乙二胺四乙酸铁钠0.15kg、葡萄糖酸锌0.1kg。
制备:
1)将上述各组分采用常规的制剂方法制备成粉剂,颗粒状组分要经过粉碎并通过60-80目筛网;
2)先将维生素B6和维生素E混匀,再与豌豆蛋白、小麦低聚肽粉、木糖醇、低聚异麦芽糖、抗性糊精、乙二胺四乙酸铁钠和葡萄糖酸锌混合在一起,得预混合物,混匀时间为20-40分钟。
3)再向预混合物中添加量大的原辅料鼠李糖乳杆菌冻干粉、植物乳杆菌冻干粉、嗜酸乳杆菌冻干粉、玉米粉、大豆分离蛋白、椰蓉、速溶玫瑰花粉(重瓣红玫瑰),进行总混,总混时间为60-120分钟。
4)将样品分装,经检验合格后,可装盒、装箱,成品检验合格后方可入库。
二、感官评定
取12克本实施例1制备的产品,加入到60m l50℃的温开水中,完全溶解。选取10位感官评定人员,观察品尝后,按照表1评定方法对本发明产品的色泽、状态、滋、气味进行全面评价,取平均分作为综合评分。

由表1得出感官评定结论:本发明产品色泽为淡玫粉色,均匀一致,粉末状、无结块、无肉眼可见外来杂质,口感清香甜美,滋味宜人,无异味。
实施例2免疫力对比实验
实验动物:4~5周龄的昆明小鼠,18~22g,雄性,共96只。
实验内容:根据体重随机对实验动物分成2大组,每组48只小鼠:第一组进行脏体比值测定,第二组进行碳廓清实验。每大组分为6小组进行比对实验,具体如下:
对照组:蒸馏水
Ⅰ组:采用实施例1的配方及用量;
Ⅱ组:玉米粉26kg、大豆分离蛋白25kg、豌豆蛋白8kg、小麦低聚肽粉4kg、木糖醇10kg、低聚异麦芽糖10kg、椰蓉5kg、速溶玫瑰花粉(重瓣红玫瑰)5.4kg、抗性糊精6.3kg、维生素B6 0.0015kg、维生素E 0.0485kg、乙二胺四乙酸铁钠0.15kg、葡萄糖酸锌0.1kg;
III组:鼠李糖乳杆菌冻干粉4kg、植物乳杆菌冻干粉4kg、嗜酸乳杆菌冻干粉4kg、玉米粉39kg、豌豆蛋白8kg、小麦低聚肽粉4kg、木糖醇10kg、低聚异麦芽糖10kg、椰蓉5kg、速溶玫瑰花粉(重瓣红玫瑰)5.4kg、抗性糊精6.3kg、维生素B6 0.0015kg、维生素E0.0485kg、乙二胺四乙酸铁钠0.15kg、葡萄糖酸锌0.1kg;

分别将Ⅰ、Ⅱ、III、Ⅳ和Ⅴ组的组合物以蒸馏水为溶剂配制成所需浓度的溶液,将6组溶液经口灌胃分别给予6组小鼠,灌注量为每天2g/kg(溶液/体重),相当于人体推荐量的10倍,按此法受试30天。
实验结果:
