本发明涉及食品领域,具体的说是一种低碳水化合物膳食结构的代餐粉及其制备工艺。
背景技术
随着生活节奏的加快,对人们的饮食习惯产生了一定的影响,午餐变得简单,而晚餐相对于午餐来说较为丰盛,由于晚餐过后运动量较少,同时加上饮食不规律,进一步的导致了肥胖人数越来越多。肥胖患者可造成一系列的代谢紊乱,即代谢综合征,产生相关性病症,如高血压、冠心病、高尿酸血症、脂肪肝、高脂血症等,部分病症会直接威胁肥胖患者的生命安全。近年来,人们越来越重视对体重的控制,目前减肥最有效直接的方式是节食,其次是通过运动、吃药或手术,由于生活节奏快,运动时间有限,短时间的运动无法达到减肥的效果,吃药或手术均会给患者带来痛苦体验,还会影响患者身体健康,而节食会让患者有饥饿感。因此,在不让患者有饥饿感的情况下,通过减少机体能量摄入,同时补充机体所需营养物质,来达到控制体重的方式是最让人舒适的减肥方法。
代餐粉是一种由谷类、豆类等食材加工而成的,能够替代主食的产品。不仅能够给使用者提供必须要的营养,还能减少能量的摄入,有助于减肥的目的。目前的代餐粉不能使食用者长时间保持饱腹感,且不能帮助身体脂肪的消耗,且市面上已有的代餐粉提高肠道蠕动的效果不明显,不能帮助食用者排便,减肥效果不佳。

为了解决上述问题,本发明提供了一种能够使食用者长期维持饱腹感,有利于帮助身体脂肪消耗的低碳水化合物膳食结构的代餐粉及其制备工艺。

本发明是一种低碳水化合物膳食结构的代餐粉,代餐粉的配方按百分比计算为:复合蛋白粉25%-35%、混合油脂微囊粉4%-10%、快速发酵膳食纤维3%-12%、中速发酵膳食纤维6%-10%、慢速发酵膳食纤维8%-10%、蛋白颗粒2%-5%、谷物5%-10%、水果粉2%-6%、复合维生素0.2%-0.4%、复合矿物质1%-2%、功能性调味包3%-6%、马铃薯提取物0.01%-0.1%、食用盐0.01%-0.2%。
本发明的进一步改进在于:复合蛋白粉包括大豆分离蛋白、小麦蛋白、浓缩牛奶蛋白、浓缩乳清蛋白、膜分离酪蛋白、大米蛋白。
本发明的进一步改进在于:混合油脂微囊粉成分包括亚麻籽油微囊粉、葵花籽油微囊粉、核桃油微囊粉、火麻仁油微囊粉、初榨椰子油微囊粉,其中,混合油脂微囊粉中所含有的脂肪酸亚油酸ω-6和亚麻酸ω-3比例约为5:1。
本发明的进一步改进在于:快速发酵膳食纤维包括低聚果糖、低聚木糖、低聚异麦芽糖其中的一种或多种组合,中速发酵膳食纤维包括菊粉、抗性糊精中的一种或两种组合,慢速发酵膳食纤维包括燕麦β-葡聚糖、木聚糖、圆苞车前子壳粉、魔芋粉、柑橘纤维一种或多种组合。

3)过筛、预混:将步骤2中的所有粉料分开过40目筛,并将快速发酵膳食纤维、中速发酵膳食纤维与慢速发酵膳食纤维进行初步混合,得到膳食纤维混合料;
4)总混:将复合维生素、复合矿物质与膳食纤维混合料等量递增混合后,将配方中除颗粒外的其他物料投入混合机中,设置转速10转/分钟,混合30分钟,停机卸料,即得待包装粉;
5)检验:对步骤4所得的粉料进行取样检测,检测粉体流动性,堆密度、水分,并记录,其中水分含量在5%以下为合格,超过5%则放入到干燥机内进行干燥至含水量为5%以下;
6)灌装:通过加料头分别加入颗粒、灌装、包装,得到成品。
本发明的进一步改进在于:干燥机为沸腾干燥机,包括烘干放料斗和可移动支架,在烘干放料斗的下端设置有布风腔,在布风腔上端设置有与烘干放料斗连接的密封部,在烘干放料斗的上下两端分别可移动设置有上密封件和下密封件,上密封件和下密封件分别通过固定在可移动烘干放料都外侧的数个气缸带动移动,在上密封件与烘干放料斗之间和下密封件与烘干放料斗之间分别设置有上密封机构和下密封机构,在烘干放料斗上端设置有隐形进料口,在上密封件上设置有与隐形进料口位置相对应的开口,在开口内侧设置有堵料封头,堵料封头通过设置在开口外侧的烘干放料斗上的气缸带动移动,在可移动支架上设置有上料连接机构。
本发明的有益效果是:本发明中的混合油脂微囊粉中脂肪酸亚油酸ω-6和亚麻酸ω-3比例约为5:1,同时富含中链甘油三酯,帮助于身体脂肪消耗。中慢速发酵膳食纤维和蛋白质组合可满足4小时饱腹感,即可提高胰岛素敏感性、减缓肠胃排空速度,蛋白颗粒增加咀嚼感改变进食速度,从而降低减重期间的饥饿不适感。本发明的代餐粉能够减少,减少50%能量摄入,每日800-1200kcal,适度减少碳水化合物和脂肪摄入。此外,通过本发明的干燥机能够在相对密封的情况下进行进料,在进料过程中不会产生扬尘,同时减少物料与空气接触,减少物料被污染的几率。
本发明的代餐粉能够帮助食用者减肥,且本发明的生产工艺简单,且通过本发明中的干燥机对粉料进行干燥能够有效避免在将粉料放入到干燥机内时产生扬尘。

具体实施方式
为了加强对本发明的理解,下面将结合附图和实施例对本发明作进一步的详细描述,该实施例仅用于解释本发明,并不对本发明的保护范围构成限定。
如图1-3所示,本发明是一种低碳水化合物膳食结构的代餐粉,代餐粉的配方按百分比计算为:复合蛋白粉25%-35%、混合油脂微囊粉4%-10%、快速发酵膳食纤维3%-12%、中速发酵膳食纤维6%-10%、慢速发酵膳食纤维8%-10%、蛋白颗粒2%-5%、谷物5%-10%、水果粉2%-6%、复合维生素0.2%-0.4%、复合矿物质1%-2%、功能性调味包3%-6%、马铃薯提取物0.01%-0.1%、食用盐0.01%-0.2%。
复合蛋白粉包括大豆分离蛋白、小麦蛋白、浓缩牛奶蛋白、浓缩乳清蛋白、膜分离酪蛋白、大米蛋白。复合蛋白粉供给量一般为占供热比的20%以上,通过提高饱腹信号激素分泌、提高血浆氨基酸浓度增加饱腹感,同时通过介导糖异生、膳食诱导效应增加能量消耗。高蛋白质生物价(BV)、高氨基酸评分(PDCAAS),满足减重期间人体所需营养素,有助于提高瘦体重。混合油脂微囊粉成分包括亚麻籽油微囊粉、葵花籽油微囊粉、核桃油微囊粉、火麻仁油微囊粉、初榨椰子油微囊粉,其中,混合油脂微囊粉中所含有的脂肪酸亚油酸ω-6和亚麻酸ω-3比例约为5:1,此外,同时还富含中链甘油三酯,帮助于身体脂肪消耗。
快速发酵膳食纤维包括低聚果糖、低聚木糖、低聚异麦芽糖其中的一种或多种组合,中速发酵膳食纤维包括菊粉、抗性糊精中的一种或两种组合,慢速发酵膳食纤维包括燕麦β-葡聚糖、木聚糖、圆苞车前子壳粉、魔芋粉、柑橘纤维一种或多种组合。蛋白颗粒包括豆蛋白颗粒、乳清蛋白颗粒。中速发酵膳食纤维、慢速发酵膳食纤维和蛋白颗粒的组合可满足4小时饱腹感,即可提高胰岛素敏感性、减缓肠胃排空速度,且蛋白颗粒增加咀嚼感,改变进食速度,从而降低减重期间的饥饿不适感。
复合矿物质包括碳酸钙、碳酸镁、焦磷酸铁、葡萄糖酸锌;复合维生素包括L-抗坏血酸钠、烟酰胺、dl-α-醋酸生育酚、醋酸维生素A、盐酸吡哆醇、盐酸硫胺素、核黄素、维生素D3、氰钴胺、叶酸;能够提供人体所需的微量元素和维生素,功能性调味包包括赤藓糖醇、木糖醇、三氯蔗糖、甜菊糖苷、罗汉果甜甘,食品用香精,谷物包括藜麦、奇亚籽、燕麦粉。藜麦、奇亚籽和燕麦粉均具有热量低、高膳食纤维的特性,其中,奇亚籽富含脂肪酸α-亚麻酸、维生素和矿物质,为人体提供了必要的营养物质,还能减少热量摄入。本发明的代餐粉中还添加了马铃薯提取物,能够诱导产生胆囊收缩素CCK,即胃肠饱腹信号,调节外周系统的食欲调节系统,提高饱腹感。
一种低碳水化合物膳食结构的代餐粉的制备工艺,具体制备步骤如下:1)准备阶段:将生产所用到的设备进行清理,使其保持洁净;
2)称量:按照配比将物料称重备用;
3)过筛、预混:将步骤2中的所有粉料分开过40目筛,并将快速发酵膳食纤维、中速发酵膳食纤维与慢速发酵膳食纤维进行初步混合,得到膳食纤维混合料;
4)总混:将复合维生素、复合矿物质与膳食纤维混合料等量递增混合后,将配方中除颗粒外的其他物料投入混合机中,设置转速10转/分钟,混合30分钟,停机卸料,即得待包装粉;

干燥机为沸腾干燥机,包括烘干放料斗1和可移动支架2,在烘干放料斗1的下端设置有布风腔,在布风腔上端设置有与烘干放料斗1连接的密封部,在烘干放料斗1的上下两端分别可移动设置有上密封件3和下密封件4,上密封件3和下密封件4分别通过固定在可移动烘干放料都外侧的数个气缸带动移动,在上密封件3与烘干放料斗1之间和下密封件4与烘干放料斗1之间分别设置有上密封机构和下密封机构,在烘干放料斗1上端设置有隐形进料口5,在上密封件3上设置有与隐形进料口5位置相对应的开口,在开口内侧设置有堵料封头6,堵料封头6通过设置在开口外侧的烘干放料斗1上的气缸带动移动,在可移动支架2上设置有上料连接机构7。上料连接机构7包括透明的球形过料部71,在所述球形过料部71的上端设置有进料接管72,在所述进料接管72上可转动设置有连接管73,所述连接管73与进料接管72上端通过螺纹连接,在连接管73的上端设置有与混合机出料口配合的内螺纹,在球形过料部71的下端的下料管74外侧套设有活动出料管75,在活动出料管75与下料管74之间设置有波纹密封管76,固定在可移动支架2上的气缸的活塞与活动出料管75连接,通过气缸带动活动出料管75进行伸缩。
上密封机构包括上挡圈,在上挡圈下端面上设置有橡胶垫,上挡圈通过螺栓与烘干放料斗1外侧的凸块固定,在烘干放料斗1的上端设置有密封板,在上密封件3内侧设置有与密封板配合的台阶面,上密封件3上端插入到分离罩下端面的密封槽中。下密封机构包括下挡圈,在下挡圈的上表面设置有与下密封件4接触的橡胶垫,下密封件4下端插入到布风腔上端面的密封槽内。
上料前,上密封件3处于最下端,此时,隐形进料口5暴露在外,可移动支架2上的气缸带动出料管向隐形进料口5移动,直至插入到隐形进料口5内,旋转连接管73,使连接管73与混合机出料口连接,打开混合机出料管上的阀门,进行上料。上料结束后,出料管向后回到原位,上密封件3在气缸的带动下上升到插入到分离罩的密封槽中,堵料封头6在气缸的带动下将隐形进料口5堵住,下密封件4在气缸的带动下插入到布风腔上端面的密封槽内。由于上料时烘干放料斗1上端与分离罩之间的间隙小于5毫米产生的扬尘较少,且上料时工人可以远离干燥机,避免吸入粉料扬尘。
以上对本发明实施进行了简单说明,并不受上述工作范围限制,只要采取本发明思路和工作方法进行简单修改运用到其它设备,或在不改变本发明主要构思原理下而做出改进等行为,均在本发明的保护范围之内。
Claims (10)
1.一种低碳水化合物膳食结构的代餐粉,其特征在于:代餐粉的配方按百分比计算为:复合蛋白粉25%-35%、混合油脂微囊粉4%-10%、快速发酵膳食纤维3%-12%、中速发酵膳食纤维6%-10%、慢速发酵膳食纤维8%-10%、蛋白颗粒2%-5%、谷物5%-10%、水果粉2%-6%、复合维生素0.2%-0.4%、复合矿物质1%-2%、功能性调味包3%-6%、马铃薯提取物0.01%-0.1%、食用盐0.01%-0.2%。
2.根据权利要求1所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述复合蛋白粉包括大豆分离蛋白、小麦蛋白、浓缩牛奶蛋白、浓缩乳清蛋白、膜分离酪蛋白、大米蛋白。
3.根据权利要求2所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述混合油脂微囊粉成分包括亚麻籽油微囊粉、葵花籽油微囊粉、核桃油微囊粉、火麻仁油微囊粉、初榨椰子油微囊粉,其中,混合油脂微囊粉中所含有的脂肪酸亚油酸ω-6和亚麻酸ω-3比例约为5:1。
4.根据权利要求3所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述快速发酵膳食纤维包括低聚果糖、低聚木糖、低聚异麦芽糖其中的一种或多种组合,所述中速发酵膳食纤维包括菊粉、抗性糊精中的一种或两种组合,所述慢速发酵膳食纤维包括燕麦β-葡聚糖、木聚糖、圆苞车前子壳粉、魔芋粉、柑橘纤维一种或多种组合。
5.根据权利要求4所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述蛋白颗粒包括豆蛋白颗粒、乳清蛋白颗粒。
6.根据权利要求5所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述复合矿物质包括碳酸钙、碳酸镁、焦磷酸铁、葡萄糖酸锌。
7.根据权利要求6所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述复合维生素包括L-抗坏血酸钠、烟酰胺、dl-α-醋酸生育酚、醋酸维生素A、盐酸吡哆醇、盐酸硫胺素、核黄素、维生素D3、氰钴胺、叶酸 。
8.根据权利要求7所述一种低碳水化合物膳食结构的代餐粉,其特征在于:所述功能性调味包包括:赤藓糖醇、木糖醇、三氯蔗糖、甜菊糖苷、罗汉果甜甘,食品用香精。
9.一种低碳水化合物膳食结构的代餐粉的制备工艺,其特征在于:具体制备步骤如下:1)准备阶段:将生产所用到的设备进行清理,使其保持洁净;
