Abstract
本发明涉及减肥食品技术领域,提供了一种全营养减肥食品,包括以下组分:蛋白质组合物、脂肪组合物、碳水化合物及膳食纤维组合物、维生素及矿物质组合物、食品助剂及风味组合物、功能性组合物,上述六种组分比例为1:1:1:1:1:1。本发明与现有技术相比,添加了丰富且优质的动植物蛋白、健康脂肪、丰富的膳食纤维以及人体日常所需矿物质和维生素;本发明添加功能性物质,使产品具有强烈的饱腹感,并且可提升减肥人群免疫力、抗氧化能力及抗疲劳能力,实现部分代餐功能的同时,可缓解减肥人群易产生的抵抗力下降、头晕乏力、失眠焦虑等症状。

本发明涉及减肥食品技术领域,尤其涉及一种全营养减肥食品及其制备方法。
背景技术
随着现代人生活水平的不断提高,许多“富贵病”开始出现,例如高血糖、高血脂等。肥胖虽然不是一种疾病,但却是许多疾病的“推手”,影响健康的同时也影响个人形象,已经成为了许多人的困扰。因此,人们开始寻求各种减肥途径。经各种实践验证,运动加上饮食的节制是最有效,也是最健康的减肥方式。减肥是一个长期的身体与心理斗争过程,使众多想要减肥的人士最终放弃减肥的主要原因之一就是无法忍受的饥饿感。运动及较少能量的摄入都易使人产生饥饿感。
因此,许多人开始在有限的能量摄入与饱足感之间追求一个平衡。代餐粉是应运而生的其中一个产品,易携带并食用方便。但是目前市场上的代餐粉由于饱腹感不足使得减肥人群在以代餐粉为代餐食物时极易产生饥饿感,导致一部分人因无法忍受饥饿感而放弃,或者选择额外补充能量,反而产生增重效果。在提供有限能量的同时又能提供充足的饱腹感是代餐粉目前的一大难点。同时,大部分代餐粉侧重宏量营养素的供给,但无法提供如同日常食物中的全面均衡的营养,例如食物中丰富的维生素、矿物质和抗氧化因子等有益成分,导致减肥人群因微量营养素的缺失而产生失眠焦虑、头晕乏力等不良反应。这使得代餐粉成为了减肥过程中的鸡肋。
发明内容
针对上述现有技术中的不足之处,本发明提供了一种全营养减肥食品及其制备方法,以解决现有技术中在减肥过程中代餐粉饱腹感不足且营养不够全面、均衡的问题。
本发明提供了一种全营养减肥食品,包括以下组分:蛋白质组合物、脂肪组合物、碳水化合物及膳食纤维组合物、维生素及矿物质组合物、食品助剂及风味组合物、功能性组合物,上述六种组分比例为1:1:1:1:1:1。蛋白质组合物含优质且均衡的动植物蛋白,脂肪组合物富含不饱和脂肪酸及中链脂肪酸,膳食纤维组合物富含多种来源可溶性膳食纤维,维生素及矿物质组合物含人体日常所需维生素及矿物质,功能性组合物含有可有效增加饱腹感的物质、抗氧化物质、抗炎物质、抗疲劳物质、抗焦虑物质和促进脂肪分解物质。本发明是一种可用于部分代餐的特殊膳食食品。
进一步的,所述蛋白质组合物按重量份计,包括以下组分:浓缩乳清蛋白粉2-5份、大豆分离蛋白粉7-10份、大米蛋白粉0.1-1份、酪蛋白酸钙2-6份、脱脂乳粉4-8份,将上述组分充分混合均匀,即得所述蛋白质组合物。不同食物来源的蛋白质含有的氨基酸种类不同,动植物中蛋白质氨基酸组成差别较大,因此为了本发明选择牛乳来源、大豆来源和大米来源的蛋白质,提供人体日常所需氨基酸。
进一步的,所述脂肪组合物按重量份计,包括以下组分:亚麻籽油微囊粉 0.1-0.5份、葵花子油微囊粉0.1-0.5份和中链甘油三酯微囊粉0.5-2.0份,将上述组分充分混合均匀,即得所述脂肪组合物。不饱和脂肪酸具有丰富的生理功能,例如降低胆固醇、改善血液循环、提高脑细胞活性等,因此每日摄入一定量的不饱和脂肪酸可对人体产生有益效果。中链甘油三酯具有易吸收的特点,可快速提供能量。
进一步的,所述碳水化合物及膳食纤维组合物按重量份计,包括以下组分:魔芋粉2.0-4.0份、圆苞车前子壳粉0.1-1份、小麦纤维粉0.5-2份、燕麦纤维粉0.5-2 份、聚葡萄糖0.5-1.5份、低聚果糖粉0.1-1份和抗性糊精0.5-1.5份,将上述组分充分混合均匀,即得所述碳水化合物及膳食纤维组合物。膳食纤维具有天然的调节肠道功能,增强机体免疫力,可缓解减肥期间产生的便秘等不良反应。

食用酵母粉含有丰富的B族维生素,有增强免疫力的作用;马铃薯提取物是一种天然蛋白质,其含有的特征性成分可以使胃和大脑产生饱足感的信号,减轻减肥人群的饥饿感,从而减少进食,达到降低热量摄入的目的;石榴果汁粉含有红石榴提取物,具有良好的抗氧化效果;表没食子儿茶素没食子酸酯提取自绿茶,也具有具有优异的抗氧化效果;植物甾醇酯具有降低胆固醇、抗炎的作用;牛磺酸可以促进营养物质代谢,从而提高人体抗氧化能力,增强机体免疫力,参与神经内分泌调节,增强心肌收缩力,在维持运动能力,抗击运动疲劳的同时,能防止心肌损伤,保护肝脏;γ-氨基丁酸能促进脑的活化性,健脑益智,促进睡眠,美容润肤,延缓脑衰老机能,能补充人体抑制性神经递质,具有良好的降血压功效;左旋肉碱可加速脂肪代谢,具有减肥、降血脂等功效;肽在人体中起着重要的生理功能,活性肽具有降血脂、促进脂肪和能量代谢、增强免疫力、抗疲劳等多种功效;β-胡萝卜素是维生素A的前体物质,具有良好的抗氧化作用。
本发明还提供了一种全营养减肥食品的制备方法,包括如下步骤:a、制备各组分,备用;b、按1:1:1:1:1:1的比例称取各组分,并进行充分混合均匀,即得所述全营养减肥食品。
本发明与现有技术相比,添加了丰富且优质的动植物蛋白、健康脂肪以及人体日常所需矿物质和维生素及其他功能性营养物质,营养全面、均衡,可缓解减肥人群的不良反应,增强减肥效果。同时本发明具有强烈的饱腹感,真正实现代餐的作用。

将A、B、C、D、E、F中得到的组分以1:1:1:1:1:1的比例混合均匀,即得到一种含优质蛋白和脂肪的全营养减肥食品。
食疗例
40个BMI(身体质量指数)>25的超重志愿者(其中20位男性、20位女性),将其分为A、B两组,每组各10位男性10位女性,两组志愿者每日摄入能量控制在6300kJ左右(约1500kcal),并且每日上午进行30min中等强度(慢跑)的体能活动。其中,A组志愿者每日食用60g本发明代餐粉以替代早餐的能量摄入,B 组志愿者早餐摄入的能量、蛋白质、脂肪和碳水化合物含量控制与A组相同,但不控制蛋白质和脂肪的来源。参与本实验前,所有志愿者均接受问卷调查,记录实验前身体状态。实验周期为8周,跟进并记录期间志愿者的体重及身体情况变化。
直至本实验进行至第8周时,A组共有1位志愿者退出,B组有7位志愿者退出,共有32位志愿者最终完成本实验。如图1(纵轴为BMI指数,横轴为时间)所示结果表明,两组志愿者在减重期间期间,BMI指数(体重/身高2)均呈现下降趋势,但在实验后期,B组志愿者BMI指数下降相对变缓,证明实验期间A组志愿者的减重效果较好。调查志愿者在减重期间的身体状态变化,发现A组志愿者中有1 人出现轻微腹泻现象,有2人出现疲劳乏力现象;B组志愿者中有3人出现便秘现象,8人出现头晕乏力现象,3人出现焦虑、失眠现象,5人出现肠胃不适现象,15 人表示很容易产生饥饿感,无法专心工作,其中7人承认会在规定每日摄入能量之外额外补充能量以缓解饥饿感。
本实验证明,该发明可有效缓解减重人群在减肥控制饮食期间的许多不良反应,如便秘、头晕乏力、焦虑、失眠、肠胃不适、免疫力下降等现象,同时增加饱腹感,帮助减重人群长期坚持控制体重。

Claims (10)
1.一种全营养减肥食品,其特征在于,包括以下组分:蛋白质组合物、脂肪组合物、碳水化合物及膳食纤维组合物、维生素及矿物质组合物、食品助剂及风味组合物、功能性组合物,上述六种组分比例为1:1:1:1:1:1。
2.根据权利要求1所述的全营养减肥食品,其特征在于,所述蛋白质组合物按重量份计,包括以下组分:浓缩乳清蛋白粉2-5份、大豆分离蛋白粉7-10份、大米蛋白粉0.1-1份、酪蛋白酸钙2-6份、脱脂乳粉4-8份,将上述组分充分混合均匀,即得所述蛋白质组合物。
3.根据权利要求1所述的全营养减肥食品,其特征在于,所述脂肪组合物按重量份计,包括以下组分:亚麻籽油微囊粉0.1-0.5份、葵花子油微囊粉0.1-0.5份和中链甘油三酯微囊粉0.5-2.0份,将上述组分充分混合均匀,即得所述脂肪组合物。
4.根据权利要求1所述的全营养减肥食品,其特征在于,所述碳水化合物及膳食纤维组合物按重量份计,包括以下组分:魔芋粉2.0-4.0份、圆苞车前子壳粉0.1-1份、小麦纤维粉0.5-2份、燕麦纤维粉0.5-2份、聚葡萄糖0.5-1.5份、低聚果糖粉0.1-1份和抗性糊精0.5-1.5份,将上述组分充分混合均匀,即得所述碳水化合物及膳食纤维组合物。
5.根据权利要求1所述的全营养减肥食品,其特征在于,所述维生素及矿物质组合物按重量份计,包括以下组分:复合维生素0.09-0.1份、复合矿物质0.60-0.67份、碘化钾0.0023-0.0025份、氯化钾0.198-0.220份、碳酸镁0.146-0.162份、碳酸钙0.072-0.080份,将上述组分充分混合均匀,即得所述维生素及矿物质组合物。
6.根据权利要求5所述的全营养减肥食品,其特征在于,所述复合维生素包含VA800-1200μgRE/g、VD18.67-28.00μg/g、VB18.800-13.20mg/g、VB24.267-6.400mg/g、VB63.467-5.200mg/g、VB128.800-13.20μg/g、VC232.0-333mg/g、烟酰胺44.27-66.40mg/g、叶酸576.0-864.0μg/g、泛酸15.47-23.20mg/g、VE36.0-54.0mg/g。
7.根据权利要求5所述的全营养减肥食品,其特征在于,所述复合矿物质包含钙152.0-228.0mg/g、铁4.000-6.000mg/g、镁53.20-79.80mg/g、锌4.800-7.200mg/g。
8.根据权利要求1所述的全营养减肥食品,其特征在于,所述食品助剂及风味组合物按重量份计,包括以下组分:瓜尔胶0.5-1.5份、羧甲基纤维素钠0.5-1份、三氯蔗糖0.01-0.05份、食用盐0.02-0.08份、磷脂0.5-2份、速溶椰子粉0.5-2份、固体麦精0.5-2份和食用香精0.08-0.15份。
9.根据权利要求1所述的全营养减肥食品,其特征在于,所述功能性组合物按重量份计,包括以下组分:食用酵母粉0.01-0.05份、马铃薯提取物0.05-0.5份、石榴果汁粉0.02-0.15份、表没食子儿茶素没食子酸酯0.01-0.08份、植物甾醇酯0.01-0.08份、牛磺酸0.1-0.4份、γ-氨基丁酸0.01-0.1份、左旋肉碱酒石酸盐0.1-0.5份、海洋鱼皮低聚肽粉0.5-1.5份、大豆肽粉0.5-1.5份和β-胡萝卜素0.01-0.1份。
10.一种如权利要求1所述全营养减肥食品的制备方法,其特征在于,包括如下步骤:a、制备各组分,备用;b、按1:1:1:1:1:1的比例称取各组分,并进行充分混合均匀,即得所述全营养减肥食品。
