本发明涉及普通食品、功能性食品、营养食品、保健食品领域,具体涉及一种代餐奶昔及其制备方法。
背景技术
体重问题是全球性的健康问题,2005年WHO工作报告中估计全球大约有16亿成人临床超重,4亿为肥胖,预计到2015年,全球成年人口中将有23亿人超重,7亿成人达到肥胖水平。由于生活方式的改变、不良饮食习惯和身体活动不足,肥胖在世界范围内广泛流行,特别是在经济迅速增长的发展中国家。肥胖不仅影响形体美观,而且给生活带来极大的不便,更严重的是,肥胖容易引起多种并发症,加速衰老和死亡的过程。肥胖是健康长寿的大敌;易患冠心病及高血压;影响劳动力,易遭受外伤;影响肺功能;易患内分泌及代谢性疾病。如何应付肥胖的发生,应广泛摄取各种食物,养成不偏食的习惯。不要采取禁食某一种食品的减肥方法,增加饮食中纤维素含量,口味不可太咸,以免体内水分滞留过多。
因此,采用营养代餐的产品减少集体能量的摄入,同时补充机体所需营养物质,对改善机体健康状态有非常重要的意义。中国专利申请CN 106616998 A公开了一种营养代餐的组合物,该发明营养代餐组合物具有调节肠道健康,双向调节血糖,减肥控体重同时提供人体所需丰富营养物质的作用。中国专利申请CN103947962A公开了一种减肥食品,主要由脱腥蛋白、胶原蛋白、蛋白肽、活化菌、菊粉、仙人掌粉组成。不许控制饮食,只需早晚代餐,饱腹感强,能够补充身体所需的蛋白质等营养,轻松减肥不伤身体,口感好,容易坚持,减肥效果好,纯天然没有副作用,同时可以优化肠道环境,使皮肤紧致细腻。中国专利申请CN104643103A公开了一种减肥代餐食品,其特征是由以下重量份的原料组成:决明子、苦瓜、牛蒡、膳食纤维、螺旋藻、薏米、红豆、肌醇、麦芽糖。该产品含有大量纤维类物质,能量低,容易产生饱腹感,可以代替正餐食用,长期使用在保证身体健康的基础上能够起到减肥的作用。
然而上述产品中普遍存在蛋白含量不高、碳水化合物组合较单一、营养成分不全面、利用天然原料制作的产品往往含有特殊异味和不良口感,对年轻爱美女士没有吸引力等问题。
发明内容
本发明提供一种适合控制体重健康管理女士的营养代餐奶昔,所述奶昔不仅口感好,营养价值高,而且能有效管理体重及健康,从而达到瘦身的目的。
所述代餐奶昔,按重量份计,包括以下组分:大豆分离蛋白粉15~50份、浓缩乳清蛋白粉3~10份、大米蛋白2~10份、中链甘油三酯1~8份、碳水化合物10~80份、维生素2~8份、矿物质1~5份。
所述大豆分离蛋白粉中蛋白质含量高于90%,达到(或超过)联合国卫生组织推荐的理想标准,其营养均衡,富含赖氨酸、亮氨酸、苏氨酸、色氨酸等8种人体必需的氨基酸。大豆分离蛋白中不含有脂肪和碳水化合物,却含有相当多的异黄酮,用大豆分离蛋白代替某些动物蛋白质能在短期内大大降低血液中的胆固醇水平。
所述大豆分离蛋白粉是以低温脱脂大豆粉或豆粕粉为原料制得;
采用如下方法制得:将所述原料经水溶分解,渣分离,酸沉淀,碱中和,高温改性,喷雾干燥,即得大豆分离蛋白粉;
制备大豆分离蛋白粉是利用蛋白质在等电点聚集、沉淀的原理;所制得的大豆分离蛋白粉是一种营养价值高、组分均一、功能性强的高纯度植物蛋白粉;
所述大豆分离蛋白需符合非转基因供应链标准,本发明优先采购于南通光合生物技术有限公司。
所述乳清蛋白不仅容易消化,而且有很高的代谢率,从而使蛋白质具有很高的生物利用价值。乳清蛋白含还含有多种生物活性物质,因此有很高的功能特性。浓缩乳清蛋白的氨基酸组成最接近母乳成分,是一种非常消化、高营养的对婴儿生长特别合适的蛋白质。乳清蛋白被证明具有促进免疫系统、阻碍化学致癌的发展、增加骨骼强度、减少低密度脂蛋白和胆固醇。
所述乳清蛋白是牛乳中,除了在PH等电点处沉淀的酪蛋白之外,留下来的蛋白质粉体;
所述浓缩乳清蛋白中蛋白含量需高于80%,本发明优先采购于HILMAR品牌。
所述大米蛋白中谷蛋白和球蛋白为主要成分,各自占80%和12%,醇溶蛋白占3%。大米蛋白的价值主要体现在它的低抗性原性,无色素干扰,具有柔和而不刺激的味道及其高营养价值。大米蛋白中氨基酸组成平衡合理。
所述大米蛋白是以灿米粉为原料制得;
采用如下方法制得:将所述灿米粉加碱、蛋白酶水解,液化,糖化,经过离心分离后,取沉淀,再经过脱色、脱脂、干燥,即得大米蛋白。
本发明所述大米蛋白不限于种类,本发明优先采购于陕西森弗天然制品有限公司所售的大米蛋白。
所述中链甘油三酯为6-12个碳原子的脂肪酸组成的甘油三酯。
所述中链甘油三酯作为一种独特的油脂,其研究始于20世纪50年代。一般认为CT是由6-12个碳原子的脂肪酸组成的甘油三酯,其中构成MCT的脂肪酸称为中链脂肪酸,这些中链脂肪酸可以不通过催化剂而与甘油酯化形成MCT。中链甘油三酯体内脂肪清除迅速,对肉碱依赖较小,并对肝脏能量代谢有保护作用。与标准油脂相比,中链甘油三酯每克提供的能量较少(8.3kcal/9kcal);同时,它还可以提高饱腹感;中链甘油三酯一般只作为能源物质,不会在脂肪组织中储存;它还可以减弱肌肉蛋白质的降解;由于它有独特的代谢途径,可以增加能量消耗;此外它还可以提高矿物质和一些必须脂肪酸的吸收。

优选地,所述碳水化合物中包括10~20份的膳食纤维;所述膳食纤维为水溶性膳食纤维、不溶性膳食纤维,膨化小麦膳食纤维,膨化小麦膳食纤维中一种或多种。
本发明进一提出地,所述维生素选自维生素A、维生素D、维生素E、维生素B1、维生素B2、维生素B12、维生素C、牛磺酸、烟酰胺中的一种或多种。
本发明进一提出地,所述矿物质为锌盐、钙盐、钠盐、钾盐、镁盐、铁盐中一种或多种;
优选地,所述矿物质选自碳酸钙、硫酸镁、乳酸钙、氯化钾、氯化钠、乙二胺四乙酸铁钠、柠檬酸钠、磷酸氢钙、葡萄糖酸锌、焦磷酸铁、氯化镁、葡萄糖酸锌一种或多种。
本发明进一提出地,所述代餐奶昔还包括0~12份食品添加剂;所述食品添加剂包括甜味剂、酸味剂、稳定剂、色素或食用香精中的一种或多种;
优选地,所述甜味剂选自甜菊糖苷、甘草、罗汉果苷、麦芽糖醇、木糖醇、阿斯巴甜、安赛蜜、三氯蔗糖一种或多种;所述稳定剂选自黄原胶、羧甲基纤维素钠、微晶纤维素、明胶、琼脂、瓜尔胶、海藻酸钠、卡拉胶、果胶一种或多种;所述色素选自红曲、藻蓝、栀子蓝、叶绿素、叶黄素、姜黄素、胡萝卜素、甜菜粉、柠檬黄、亮蓝一种或多种;所述食用香精选自草莓香精、香草香精、抹茶香精、巧克力香精、牛奶香精一种或多种;

1、所述代餐奶昔富含矿物质和多种维生素,营养成分全面、均衡;各组分间协同作用,即最大程度的满足人体所需的各种营样成分,又大大降低了代餐奶昔的原料成本;
2、本发明所述代餐奶昔没有特殊异味,口感好,价格低;
3、本发明所述代餐奶昔易被人体吸收,很适合体重控制的女性。
5、本发明所述代餐奶昔食用方便,既可用水冲作饮料,也可作为调味剂加入其它食物中。

本实施例是一种代餐奶昔,按重量份计,由如下组分组成:
大豆分离蛋白粉30份、浓缩乳清蛋白粉6份、大米蛋白5份、中链甘油三酯3份、抗性糊精6份、聚葡萄糖6份、小麦纤维3份、圆苞车前子壳粉1份、麦芽糊精15份、结晶果糖10份、绿咖啡粉3份、草莓水果粉3份、甜菜粉0.5份、碳酸钙0.5份、黄原胶0.5份、甜菊糖苷0.5份、乙二胺四乙酸铁钠0.5份、葡萄糖酸锌0.5份、L-抗坏血酸钠0.5份、牛磺酸0.5份、烟酰胺0.5份、维生素A0.5份、维生素D 0.5份、维生素E 0.5份、维生素B1 0.5份、维生素B2 0.5份、维生素B60.5份、维生素B12 0.5份、食用香精(含瓜拉纳提取物)0.5份。
本实施例所制得的代餐奶昔经检测,蛋白质含量50g/100g、钙含量0.2g/100g、脂肪含量1g/100g。
实施例2
本实施例是一种代餐奶昔,按重量份计,由如下组分组成:大豆分离蛋白粉25份、浓缩乳清蛋白粉6份、大米蛋白5份、中链甘油三酯3份、抗性糊精6份、聚葡萄糖6份、小麦纤维3份、圆苞车前子壳粉1份、麦芽糊精16份、结晶果糖14份、绿咖啡粉3份、蓝莓水果粉3份、、甜菜粉0.5份、碳酸钙0.5份、黄原胶0.5份、甜菊糖苷0.5份、乙二胺四乙酸铁钠0.5份、葡萄糖酸锌0.5份、L-抗坏血酸钠0.5份、牛磺酸0.5份、烟酰胺0.5份、维生素A0.5份、维生素D0.5份、维生素E 0.5份、维生素B1 0.5份、维生素B2 0.5份、维生素B60.5份、维生素B12 0.5份、食用香精(含瓜拉纳提取物)0.5份。
本实施例所制得的代餐奶昔经检测,蛋白质含量35g/100g、钙含量0.18g/100g、脂肪含量0.7g/100g。
实施例3~4
本实施例为实施例1~2所述的代餐奶昔的制备方法:
1)将各组分制成干粉,过40-80目筛,分别准确称量备用;
2)将各组分混合搅拌均匀;
3)将混合均匀的物料,装入包装桶;
4)将产品封口包装即得成品;
实验例
将实施例1所制得代餐奶昔进行饱腹感、口感测评;选取30位参与者,分为三组,每组10人。
1)第一组:硬性对照处理组,给予等量的白面包;
2)第二组:实施例1所述的代餐奶昔;
3)第三组:阳性对照处理组,给予同等重量的市售其他品牌草莓口味的代餐奶昔。
对每个参与人获得的样品进行随机分组。连续三周实验,每周抽取一天将代餐奶昔作为晚餐实验,并在随后1~4小时内,每个一小时填写一份饱腹感、口感调查问卷,给予1~10的评分;

由评分结果可知,实施例1所述的代餐奶昔饱腹感、口感评分最高,优于较市售同类产品。

Claims (10)
1.一种代餐奶昔,其特征在于,按重量份计,包括以下组分:大豆分离蛋白粉15~50份、浓缩乳清蛋白粉3~10份、大米蛋白2~10份、中链甘油三酯1~8份、碳水化合物10~80份、维生素2~8份、矿物质1~5份。
2.根据权利要求1所述的代餐奶昔,其特征在于,所述大豆分离蛋白粉是以低温脱脂大豆粉或豆粕粉为原料制得;
和/或,所述大米蛋白是以灿米粉为原料制得。
3.根据权利要求1或2所述的代餐奶昔,其特征在于,所述中链甘油三酯为6-12个碳原子的脂肪酸组成的甘油三酯。
4.根据权利要求1~3任一所述的代餐奶昔,其特征在于,所述碳水化合物选自蔗糖、果糖、乳糖、半乳糖、低聚半乳糖、麦芽糊精、结晶果糖、麦芽低聚糖、葡萄糖、异麦芽酮糖、水溶性膳食纤维、圆苞车前子壳粉、抗性糊精、聚葡萄糖、菊粉、海藻糖、抗性糊精、不溶性膳食纤维,膨化小麦膳食纤维,膨化小麦膳食纤维中的两种或多种;
优选地,所述碳水化合物中包括10~20份的膳食纤维;所述膳食纤维为水溶性膳食纤维、不溶性膳食纤维,膨化小麦膳食纤维,膨化小麦膳食纤维中一种或多种。
5.根据权利要求1~4任一所述的代餐奶昔,其特征在于,所述维生素选自维生素A、维生素D、维生素E、维生素B1、维生素B2、维生素B12、维生素C、牛磺酸、烟酰胺中的一种或多种。
6.根据权利要求1~5任一所述的代餐奶昔,其特征在于,所述矿物质为锌盐、钙盐、钠盐、钾盐、镁盐、铁盐中一种或多种;
优选地,所述矿物质选自碳酸钙、硫酸镁、乳酸钙、氯化钾、氯化钠、乙二胺四乙酸铁钠、柠檬酸钠、磷酸氢钙、葡萄糖酸锌、焦磷酸铁、氯化镁、葡萄糖酸锌一种或多种。
7.根据权利要求1~6任一所述的代餐奶昔,其特征在于,还包括1~12份的食品添加剂;所述食品添加剂包括甜味剂、酸味剂、稳定剂、色素或食用香精中的一种或多种;
优选地,所述甜味剂选自甜菊糖苷、甘草、罗汉果苷、麦芽糖醇、木糖醇、阿斯巴甜、安赛蜜、三氯蔗糖一种或多种;所述稳定剂选自黄原胶、羧甲基纤维素钠、微晶纤维素、明胶、琼脂、瓜尔胶、海藻酸钠、卡拉胶、果胶一种或多种;
所述色素选自红曲、藻蓝、栀子蓝、叶绿素、叶黄素、姜黄素、胡萝卜素、甜菜粉、柠檬黄、亮蓝一种或多种;所述食用香精选自草莓香精、香草香精、抹茶香精、巧克力香精、牛奶香精一种或多种;
更优选地,所述食用香精中含瓜拉纳提取物。
8.根据权利要求1~7任一所述代餐奶昔,其特征在于,按重量份计,所述代餐奶昔还包括1~5份的水果粉和1~5份的咖啡;
优选地,所述水果粉选自蓝莓水果粉、草莓水果粉、芒果水果粉、椰子水果粉、葡萄水果粉中一种或多种。
9.根据权利要求1所述的代餐奶昔,其特征在于,按重量份计,所述代餐奶昔包括以下组分:大豆分离蛋白粉25~30份、浓缩乳清蛋白粉5~7份、大米蛋白4~6份、中链甘油三酯2~4份、碳水化合物35~40份、维生素3~4份、矿物质2~3份、食品添加剂7~10份;
