技术领域
本发明涉及一种减脂高蛋白营养代餐棒,特别是针对减脂人群营养代餐,属于食品领域。
背景技术
随着人们生活水平的不断提高,超重和肥胖现象在全球范围日益凸显,成为严重困扰全球健康事业发展的重要公共卫生问题。根据国家卫生计生委发布的《中国居民营养与慢性病状况报告(2015)》,不论是成人还是儿童,肥胖和超重比例均成快速上升趋势,透过人口占比来看全国约有三亿四千万人口需要体重控制,已经变成全球肥胖第二大国。我国人民看似“吃”的越来越好,但是由于居民膳食结构改变(如精米精面代替粗粮、高糖分及油脂摄入、膳食纤维不足等等)带来的营养过剩、营养不均衡、膳食摄入不合理现象日益严重。加上生活劳动模式的改变带来的体力劳动减少、运动量不足、久坐等,肥胖超重问题及以与其相伴的慢性病,如高血压、糖尿病、心脑血管疾病的确诊患病率均呈上升趋势,严重影响国民的生命质量。
据全民膳食营养干预推广工程数据显示,有57%的居民几乎没有饮食营养方面的基本常识,大部分居民对饮食营养过于盲目,与此密切相关的便是专业营养人员和培训资源的严重不足。我国注册营养师占全国人口比例远低于发达国家,饮食营养方面信息和宣导的渠道不足。只有通过营养干预及营养教育,从根源上提高营养素养、改善营养摄入结构、培养健康的生活方式,才能从根源上解决肥胖、超重这一社会性问题。
以米、面、糖为主要来源的碳水化合物在我国饮食习惯中占很大的组成部分,其摄入人体后会被快速分解进入血液,使餐后血糖快速升高,在产生能量满足人体日常活动消耗的同时,当摄入的热量超过人体所需时,便会被转化为脂肪储存在体内,日积月累便产生肥胖。生活水平的改善,人们肉类、油炸食品摄入量明显增加,带来过量非健康的油脂摄入,而脂肪的供能系数为三大营养物质之首,进一步导致了饮食摄入的热量增加。因此针对肥胖及超重人群亟需调整三大营养物质供能比例,降低碳水化合物摄入(尤其为高GI碳水化合物)、调整优质油脂的比例、增加优质蛋白质供能。
目前市场上的减脂产品,一味强调低能量、低摄入、低碳水,由于成本等原因的限制,缺乏足够科学配比的蛋白质饮食极容易导致营养不良、肌肉减少、精神萎靡等其它健康问题。在形式上,以粉状固体代餐产品为主,需要食用前冲调、不方便消费者食用;而近两年代餐棒逐步流行起来,但缺乏科学配比及与之对应的营养指导,导致产品的减脂体验不好(产品风味口感不佳、出现便秘、缺乏饱腹感、减脂效果不稳定等等),因此很难坚持,造成消费者反反复复减了又增,对身体造成不良影响,无法从根本上改变其不健康的营养问题。
发明内容
本发明针对上述问题,提供一种减脂高蛋白营养代餐棒,起到提高减脂效果、促进营养指导,帮助人们快速调整膳食结构,达到一次减脂终身健康的效果。
本发明的具体技术方案如下:
一种减脂高蛋白营养代餐棒,包括以下组分:蛋白类颗粒、蛋白粉类、小分子蛋白肽类、油脂类、膳食纤维类、低热量甜味剂、助剂;其重量份数为:(15~45)份、(2~15)份、(0.1~10)份、(0.5~15)份、(2~30)份、(10~35)份、(0.1~8)份;作为优选其重量份数为:(18~32)份、(5~8)份、(1~8)份、(2~7)份、(13~22.8)份、(13~24)份、(1~5)份。
上述代餐棒还包括以下组分:谷物水果类,其重量份数为(15~45)份;优选的,其重量份数为:(25~35)份;更优选的,所述谷物水果类组成包含谷物类、水果类、坚果类,其重量份数为:(12~22)份、(5~12)份、(0.5~8)份。
所述谷物类组成包括红豆、薏米、紫薯、黑米、大米、藜麦、麦麸中的一种或几种组合,组合配比根据需要任意调配;水果类组成包括草莓、蔓越莓、胡萝卜、番茄、芒果中的一种或几种组合,组合配比根据需要任意调配;坚果类组成包括腰果、杏仁、葵花籽中的一种或几种组合,组合配比根据需要任意调配。
所述蛋白颗粒类及蛋白粉类选择大豆蛋白颗粒、大米蛋白颗粒、豌豆蛋白颗粒、乳蛋白颗粒、浓缩牛奶蛋白、乳清蛋白、酪蛋白酸钙中的一种或几种组合物;优选大豆蛋白颗粒、豌豆蛋白颗粒、浓缩牛奶蛋白、乳清蛋白中的组合物,其重量份比为:(18~28)份、(1~5)份、(2~8)份、(1~5)份。
所述小分子蛋白肽类组成包括大豆肽、骨胶原蛋白肽、海洋鱼胶原低聚肽、酪蛋白水解肽、玉米低聚肽中的一种或几种组合物;优选大豆肽、海洋鱼胶原低聚肽、酪蛋白水解肽的组合物,其重量份数为:(0.2~8)份、(0.5~5)份、(0.01~5)份。
所述油脂类组成包括葵花籽油、大豆油、棕榈油、椰子油、中链甘油三酯、共轭亚油酸甘油酯、紫苏籽油中的一种或几种组合物;优选椰子油、中链甘油三酯、共轭亚油酸甘油酯、紫苏籽油的组合物,其重量份数为:(1.2~5)份、(0.1~4)份、(0.1~5)份、(0.1~5)份。
所述膳食纤维类组成包括抗性糊精、菊粉、聚葡萄糖、圆苞车前子壳粉、奇亚籽中;其重量份数为:(1.2~4.6)份、(0.5~3)份、(0.2~4)份、(0.6~1.2)份、(2~12)份。
所述谷物水果类组成还包含茶提取物、薏仁提取物及有机枸杞,其重量份数为:(0.05~2)份、(0.05~1)份、(3~10)份。
所述低热量甜味剂来源包含:低聚糖、糖醇和天然甜味来源,其重量份数配比为:(10~20)份、(3~10)份、(0.001~0.1)份。
所述低聚糖包括低聚异麦芽糖、低聚果糖、低聚木糖中的一种或几种组合,组合配比根据需要任意调配;所述糖醇包括麦芽糖醇、山梨糖醇、赤藓糖醇、木糖醇中的一种或几种组合,组合配比根据需要任意调配;所述天然甜味来源包括甜菊糖苷、罗汉果中的一种或两种组合,组合配比根据需要任意调配。
所述助剂包含甘油、磷脂、水、食品用香精、色素,其重量份数配比为:(1~2.3)份、(0.01~0.5)份、(0~1)份、(0.05~0.5)份、(0~0.5)份。
本发明采用了植物来源蛋白颗粒搭配动物来源蛋白粉的组合,在满足高蛋白含量的同时,具有酥脆的咀嚼感。除了大豆蛋白和乳清蛋白,还采用了豌豆蛋白和胶束酪蛋白与之搭配。豌豆蛋白作为全价蛋白,含有人体必需的所有氨基酸,同时可以延长饱腹感,控制食欲,促进减脂;胶束酪蛋白是牛乳通过膜过滤技术,保留原生胶束状态,属于慢消化蛋白质,具有更长时间饱腹感,缓慢释放氨基酸,利于吸收、促进肌肉合成,富含支链氨基酸和胶束磷酸钙。而现有营养棒、谷物棒、蛋白棒和代餐棒类专利产品,以大豆蛋白粉和乳清蛋白粉为主要蛋白来源,口感较粘腻、不清爽,而少数产品添加谷物颗粒等虽口感有所提高,但蛋白含量有所下降,当作为代餐食品食用可能引发营养摄入不足、饱腹感不足等情况。
同时,本发明依据减脂这一特殊过程的需要,独特的采用了深海鱼胶原低聚肽、大豆肽和酪蛋白水解肽的组合。深海鱼胶原低聚肽补充人体皮肤所需胶原蛋白;大豆肽经实验证明具有快速吸收、促进脂肪燃烧的作用,尤其适合体重基数较大、盲目运动易造成损伤、不适合搭配运动减脂的人群;酪蛋白水解肽经过小鼠和人体临床实验证明具有缓解压力的作用,可以缓解由于减脂及饮食改变造成的精神紧张或有压力造成的食量增加,目前尚未有相关专利将该原料添加到营养棒类、谷物棒、蛋白棒、代餐棒类产品中。
本发明还对油脂的选择和比例进行了优化,使之更加符合减脂人群营养需求。经查询现有营养棒、谷物棒、蛋白棒和代餐棒类专利产品中所添加的油脂类原料为花生油、葵花籽油、油菜籽油、大豆油、奶油、椰子油、芝麻油、棕榈油、椰子油、黄油、深海鱼油。脂肪作为三大营养素,为人体所必需,在提供脂肪酸需求的同时,又需要考虑肥胖人群的特殊性。本发明中采用的油脂形式接近为2:1的油状和粉状比例,一方面满足代餐棒的口感,另一方面又可以减少油状油脂带来的粘腻的口感和外观。在油脂的来源上,椰子油为液体油脂来源,其为中链甘油三酯的天然来源,中链甘油三酯具有直接在胃和小肠中吸收的特点,可以快速供能且对脂肪合成酶亲和性低、不易在体内储存的特点,同时可以抑制脂肪合成过程,诱导产热增加能量消耗。粉状油脂的来源除了中链甘油三酯微裹粉,还有紫苏籽油微裹粉和共轭亚油酸甘油酯微裹粉。共轭亚油酸甘油酯具有促进脂肪分解代谢、提高基础代谢的作用;紫苏籽油富含高达67%的α-亚麻酸,可以降低血清中胆固醇、甘油三酯、低密度和极低密度脂蛋白的作用,促进减脂效果。
本发明适度添加谷物水果颗粒,一方面提升产品酥脆口感和视觉感受,另一方面适度给予一定碳水化合物和天然水果中维生素、矿物质等微量元素,避免一味追求低碳水、低能量。碳水化合物来源主要由藜麦为主,搭配紫薯、黑米、红豆、薏米。优质藜麦的蛋白质含量高达16%-22%,富含钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质,不饱和脂肪酸、类黄酮、维生素B族、维生素E、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖等多种有益成分含量也很高,而且具有低热量(305kcal/100g)、低升糖的特点。天然水果中精选来自天士力的有机枸杞种植基地,作为药食同源的原料,具有养肝、滋肾、润肺的作用,富含胡萝卜素、核黄素、维生素B1、维生素B2、维生素C、枸杞多糖等有益成分。
本发明还独特的添加了茶提取物和薏仁提取物。从中医体质上讲,痰湿为肥胖人群的主要体质之一,所谓“胖人多痰湿”。薏仁作为药食同源的食材之一,具有祛湿、利水、健脾的功效。茶提取物取自普洱茶,保留和富集茶多酚、粗多糖等有益成分,经过人体试食试验,具有辅助降血脂、减少体脂的作用。
本发明还提供一种减脂高蛋白营养代餐棒的制备方法,包括如下步骤:
1)原料预处理,将碎状原料进行烤香处理,将片状原料进行手工分散;如腰果碎:烤香处理;蔓越莓:手工分散,防止混料过程中粘结抱团。
2)配料:按照原料状态进行分类,包括颗粒物料、粉类物料、糖浆类物料、油脂果汁原料,并按照配方比例各自混匀;
3)混合原料:对油脂果汁原料在35-45℃下进行乳化混合,将糖浆类物料在44-53℃进行化糖处理,然后将前述两类原料在46-55℃下混合均匀;再加入预混好的粉状物料,搅拌4-10min至均匀无粉状抱团颗粒,质地粘稠;最后加入预混好的颗粒物料,搅拌5-10min至颗粒被均匀包裹;
4)压制成型、冷却切块包装:将混合好的物料送入压制成型设备,压制成型后,经过传送带冷却降温,使糖浆在产品中逐步硬化达到切割硬度;经过切割,达到净含量要求后进行包装。

按如下步骤制备代餐棒:
1)原料预处理,将碎状如坚果类原料进行烤香处理,将片状原料进行手工分散;如腰果烤香处理,蔓越莓手工分散,防止混料过程中粘结抱团。
2)配料:按照原料状态进行分类,包括颗粒物料、粉类物料、糖浆类物料、油脂果汁原料,并按照配方比例各自混匀;
以下对不同状态原料分类进行实例性举例,实际配料中还会根据配方表调配各种组分。
颗粒物料:大豆蛋白、高蛋白高纤脆谷粒、奇亚籽、蔓越莓、膨化藜麦、红豆薏米、豌豆蛋白颗粒、枸杞、膨化紫薯、膨化黑米、冻干草莓、腰果碎,上述原料按配方重量称取混合均匀。
粉类物料:浓缩牛奶蛋白、抗性糊精、菊粉、聚葡萄糖、圆苞车前子壳粉、草莓果汁粉、乳清蛋白、鱼胶原蛋白肽、大豆肽、酪蛋白水解肽、中链甘油三酯微囊粉、紫苏籽油微囊粉、共轭亚油酸甘油酯微囊粉、普洱茶提取物、速溶薏仁粉,上述原料按配方重量称取混匀。
糖浆类原料:低聚异麦芽糖液、麦芽糖醇液、胭脂虫红液、甜菊糖苷,上述原料按配方称取加热至50℃融化混合均匀后保温备用。
油脂果汁原料:椰子油、甘油、石榴汁、石榴香精,将上述原料配方称取加热至40℃乳化混合均匀后保温备用。
3)混合原料:对油脂果汁原料在40℃下进行乳化混合,将糖浆类物料在50℃进行化糖处理,然后将前述两类原料在50℃下混合均匀;在加入预混好的粉状物料,搅拌4min至均匀无粉状抱团颗粒,质地粘稠;最后加入预混好的颗粒物料,搅拌5min至颗粒被均匀包裹;
4)压制成型、冷却切块包装:将混合好的物料送入压制成型设备,压制成型后,经过传送带冷却降温,使糖浆在产品中逐步硬化达到切割硬度;经过切割,达到净含量要求后进行包装。
实施例7:代餐棒的效果实验
1.1参与人群
招募减脂志愿者,纳入本试验组。
入组要求:年龄26~50岁,男24人,女19人,经体检,全部有脂肪肝,但无严重心、脑、肝、肾疾病及功能不全;无甲状腺功能降低。
2018年3月23日~29日,举办为期7天的体脂营,所有参与试验的人员服用本发明的代餐棒做为代主食,每日3根,每餐1根,并配以健康教育和营养教育及心理辅导等减脂辅助手段,进行减脂试验。
2018年3月30日,体脂营结束后,采用微信群管理、体脂秤检测及智能管理云平台的管理办法管理受试人员,参与试验的人员依旧服用本发明的代餐棒做为代主食1个月,管理工作持续3个月。结束后,对受试者的体成份、临床相关指标做检测。
1.2结果及分析
1.2.1使用本发明代餐棒减脂7天身体成份的变化
7天体脂营结束后,体成份结果显示:体重、体脂率、脂肪、内脏脂肪、BMI平均分别下降了8.65斤、2.84%、7.78斤、1.907、1.4744,与减脂前相比具有显著性降低。减脂前后,蛋白质、水分、肌肉、骨骼肌及骨质没有显著性的变化。
1.2.2使用本发明代餐棒减脂3个月身体成份的变化
使用本发明的代餐棒减脂3个月后,对43人体成份指标进行检测,结果显示:体重、体脂率、脂肪、内脏脂肪、BMI与减脂前相比具有显著性降低,而健康指数与减脂前相比具有显著性升高。蛋白质、水分、肌肉、骨骼肌及骨质与减脂前相比没有显著性的变化。结果与7天相比类似。结果见表1

1.2.3使用本发明代餐棒减脂3个月临床相关指标的变化
使用本发明的代餐棒减脂3个月后,对43人临床相关指标进行检测,结果显示:减脂后与减脂前相比,谷丙转氨酶、谷草转氨酶、γ-谷氨酰胺转肽酶、空腹血糖、低密度脂蛋白胆固醇、总胆固醇/高密度脂蛋白胆固醇、甘油三酯测定、总胆固醇、肝衰减显著降低;减脂后,肌酐、尿酸也有所下降。

1.2.4使用本发明的代餐棒减脂3个月临床相关指标的变化,
结果显示:尿酸、血糖、糖化血红蛋白、低密度脂蛋白胆固醇、总胆固醇、甘油三酯、脂肪肝的正常率的变化值如表3所示。

上述统计学结果说明:使用本发明代餐棒能有效地减轻体重及脂肪、降低体脂率、减少内脏脂肪,并且在减脂过程中不会影响蛋白质、肌肉、水分及骨质。在使用本发明代餐棒干预3个月之后,谷丙转氨酶、谷草转氨酶、γ-谷氨酰胺转肽酶、空腹血糖、低密度脂蛋白胆固醇、总胆固醇/高密度脂蛋白胆固醇、甘油三酯测定、总胆固醇、肝衰减显著降低;减脂后,肌酐、尿酸也有所下降。有效地降低了脂肪肝、糖尿病、高脂血症等疾病的发病风险。
以上所述,仅为本发明的优选实施例,应当指出,对于本技术中的普通技术人员来说,在不脱离本发明的核心技术特征的前提下,还可以做出若干改进和润饰,这些润饰和改进也应属于本发明的专利保护范围。

3.如权利要求1所述的一种减脂高蛋白营养代餐棒,其特征在于:所述蛋白颗粒类及蛋白粉类选择大豆蛋白颗粒、大米蛋白颗粒、豌豆蛋白颗粒、乳蛋白颗粒、浓缩牛奶蛋白、乳清蛋白、酪蛋白酸钙中的一种或几种组合物;优选大豆蛋白颗粒、豌豆蛋白颗粒、浓缩牛奶蛋白、乳清蛋白中的组合物,其重量份比为:(18~28)份、(1~5)份、(2~8)份、(1~5)份。
4.如权利要求1所述的一种减脂高蛋白营养代餐棒,其特征在于:所述小分子蛋白肽类组成包括大豆肽、骨胶原蛋白肽、海洋鱼胶原低聚肽、酪蛋白水解肽、玉米低聚肽中的一种或几种组合物;优选大豆肽、海洋鱼胶原低聚肽、酪蛋白水解肽的组合物,其重量份数为:(0.2~8)份、(0.5~5)份、(0.01~5)份。
5.如权利要求1所述的一种减脂高蛋白营养代餐棒,其特征在于:所述油脂类组成包括葵花籽油、大豆油、棕榈油、椰子油、中链甘油三酯、共轭亚油酸甘油酯、紫苏籽油中的一种或几种组合物;优选椰子油、中链甘油三酯、共轭亚油酸甘油酯、紫苏籽油的组合物,其重量份数为:(1.2~5)份、(0.1~4)份、(0.1~5)份、(0.1~5)份。
6.如权利要求1所述的一种减脂高蛋白营养代餐棒,其特征在于:所述膳食纤维类组成包括抗性糊精、菊粉、聚葡萄糖、圆苞车前子壳粉、奇亚籽中;其重量份数为:(1.2~4.6)份、(0.5~3)份、(0.2~4)份、(0.6~1.2)份、(2~12)份。
7.如权利7要求所述的一种减脂高蛋白营养代餐棒,其特征在于:所述谷物水果类组成还包含茶提取物、薏仁提取物及有机枸杞,其重量份数为:(0.05~2)份、(0.05~1)份、(3~10)份。
8.如权利要求1所述的一种减脂高蛋白营养代餐棒,其特征在于:所述低热量甜味剂来源包含:低聚糖、糖醇和天然甜味来源,其重量份数配比为:(10~20)份、(3~10)份、(0.001~0.1)份。
9.如权利要求1所述的一种减脂高蛋白营养代餐棒,其特征在于:所述助剂包含甘油、磷脂、水、食品用香精、色素,其重量份数配比为:(1~2.3)份、(0.01~0.5)份、(0~1)份、(0.05~0.5)份、(0~0.5)份。
10.一种如权利要求1所述的一种减脂高蛋白营养代餐棒的制备方法,其特征在于:包括如下步骤:
1)原料预处理,将碎状原料进行烤香处理,将片状原料进行手工分散;
2)配料:按照原料状态进行分类,包括颗粒物料、粉类物料、糖浆类物料、油脂果汁原料,并按照配方比例各自混匀;
3)混合原料:对油脂果汁原料在35-45℃下进行乳化混合,将糖浆类物料在44-53℃进行化糖处理,然后将前述两类原料在46-55℃下混合均匀;再加入预混好的粉状物料,搅拌4-10min至均匀无粉状抱团颗粒,质地粘稠;最后加入预混好的颗粒物料,搅拌5-10min至颗粒被均匀包裹;
4)压制成型、冷却切块包装:将混合好的物料送入压制成型设备,压制成型后,经过传送带冷却降温,使糖浆在产品中逐步硬化达到切割硬度;经过切割,达到净含量要求后进行包装。
