Abstract
本发明公开了一种含有马铃薯提取物的固体饮料及其制备方法,涉及代餐食品领域,本发明的固体饮料包括如下重量份原料:酶解燕麦粉10~50份,大豆分离蛋白粉10~50份,结晶果糖5~30份,MCT粉5~30份,抗性糊精5~20份,可可粉5~20份,综合果蔬粉0~5份,马铃薯提取物0~5份,食用香精0~5份,复合维生素0~2份,维生素C 0~2份,复合矿物质0~2份,黄原胶0~2份和三氯蔗糖0~1份。本发明的固体饮料营养全面,具有明显的增强饱腹感的作用;蛋白质、脂肪、膳食纤维、碳水化合物、维生素、矿物质,营养全面、均衡;添加了一定量的马铃薯提取物,可以增强饱腹感。

技术领域
本发明涉及代餐食品领域,特别涉及一种含有马铃薯提取物的固体饮料及其制备方法。
背景技术
固体饮料是指以糖、乳和乳制品、蛋或蛋制品、果汁或食用植物提取物等为主要原料,添加适量的辅料或食品添加剂制成。其因具有体积小、易于保存、便于携带、食用方便、品种多样等特点备受消费者的青睐。
目前市面上的代餐型固体饮料,几乎不能同时满足营养成分全面,且能够增强饱腹感两种条件。
发明内容
本发明提供一种含有马铃薯提取物的固体饮料及其制备方法,解决现有的代餐型固体饮料,几乎不能同时满足营养成分全面,且能够增强饱腹感两种条件的问题。
为了解决上述技术问题,本发明的技术方案为:
一种含有马铃薯提取物的固体饮料,包括如下重量份原料:
酶解燕麦粉10~50份,大豆分离蛋白粉10~50份,结晶果糖5~30份,MCT粉5~30份,抗性糊精5~20份,可可粉5~20份,综合果蔬粉0~5份,马铃薯提取物0~5份,食用香精0~5份,复合维生素0~2份,维生素C0~2份,复合矿物质0~2份,黄原胶0~2份和三氯蔗糖0~1份。
优选的,所述食用香精为巧克力口味。
优选的,所述大豆分离蛋白粉为含有90%蛋白质的非转基因大豆蛋白,作为蛋白质的主要来源,是人体一切细胞、组织的重要成分。
优选的,所述MCT粉为含有70%脂肪的中链甘油三酯微囊粉,作为脂肪的主要来源,具有吸收快,代谢快,提供能量并能够提高其他营养素吸收的作用,如矿物质、必须脂肪酸。
优选的,所述综合果蔬粉为含多种果蔬粉的复合物;
所述综合果蔬粉各组份含量为:葡萄粉20~30%、蔓越莓粉15~25%、西柚粉10~20%、菠萝粉5~15%、桔子粉0~10%、胡萝卜粉0~10%、橙粉0~10%、樱桃粉0~10%、猕猴桃粉0~10%和柠檬粉0~10%,其中各组份总含量为100%。
优选的,所述马铃薯提取物的厂家是美国Kemin公司,含有蛋白酶抑制剂II(PI2)的马铃薯原料,具有增强饱腹感的作用。
优选的,所述复合维生素为GB14880食品营养强化剂使用标准中多种维生素的复合物;
所述复合维生素中各营养素含量为:维生素A 3600~5400μgRE/g、β-胡萝卜素1600~2400μg/g、维生素D 6.720~10.00μg/g、维生素E 53.77~80.67mgα-TE/g、维生素B16.400~9.600mg/g、维生素B2 5.600~8.400mg/g、维生素B6 5.600~8.400mg/g、维生素B1212.00~18.00μg/g、烟酸56.00~84.00mg/g、叶酸1200~1800μg/g和泛酸21.60~32.40mg/g;是维持身体健康所必须的一类调节物质,在物质代谢中起重要作用。
优选的,所述复合矿物质为GB14880食品营养强化剂使用标准中多种维生素的复合物;
所述复合矿物质各营养素含量为镁87.00~115.2mg/g、钙240.00~293.3mg/g、铁6.933~10.40mg/g和锌4.533~6.800mg/g;是构成机体组织的重要原料,也是维持机体酸碱平衡和正常渗透压的必要条件。
一种所述的含有马铃薯提取物的固体饮料的制备方法,包括如下步骤:
(1)按重量份称取洁净的酶解燕麦粉,大豆分离蛋白粉,结晶果糖,MCT粉,抗性糊精,可可粉,综合果蔬粉,马铃薯提取物,食用香精,复合维生素,维生素C,复合矿物质,黄原胶和三氯蔗糖;
(2)将称取好的原料过60-100目筛;
(3)将过筛后的各原料按重量份从少到多的顺序进行混合均匀;
(4)将混合后的物料进行分装,每袋30g;
(5)将封装好的每袋产品进行包装、检验,即得到所需的固体饮料。
采用上述技术方案,本发明的固体饮料营养全面,具有明显的增强饱腹感的作用;蛋白质、脂肪、膳食纤维、碳水化合物、维生素、矿物质,营养全面、均衡;添加了一定量的马铃薯提取物,可以增强饱腹感;根据理论值计算,每袋本产品所提供能量满足TCNSS002《代餐食品团体标准》中对部分代餐食品要求,在80kcal~200kcal;由于TCNSS002《代餐食品团体标准》中对代餐食品每餐总热量要求在200kcal~400kcal,所以建议本发明的固体饮料可搭配少量食物,代替三餐中的一餐或者两餐,可以达到体重管理的目的。

实施例1
一种含有马铃薯提取物的固体饮料,包括如下重量份原料:
酶解燕麦粉27.666份,大豆分离蛋白粉25.666份,结晶果糖12.333份,MCT粉11.333份,抗性糊精8.333份、可可粉8.167份、综合果蔬粉1.667份、食用香精1.833份、复合维生素0.2份,维生素C 0.4份,复合矿物质1.5份,黄原胶0.833份和三氯蔗糖0.067份。
一种所述的含有马铃薯提取物的固体饮料的制备方法,包括如下步骤:
(1)按重量份称取洁净的酶解燕麦粉,大豆分离蛋白粉,结晶果糖,MCT粉,抗性糊精,可可粉,综合果蔬粉,食用香精,复合维生素,维生素C,复合矿物质,黄原胶和三氯蔗糖;
(2)将称取好的原料过80目筛;
(3)将过筛后的各原料按重量份从少到多的顺序进行混合均匀;
(4)将混合后的物料进行分装,每袋30g;
(5)将封装好的每袋产品进行包装、检验,即得到所需的固体饮料。
实施例2
一种含有马铃薯提取物的固体饮料,包括如下重量份原料:
酶解燕麦粉27.666份,大豆分离蛋白粉25.666份,结晶果糖12.333份,MCT粉11.333份,抗性糊精8.333份、可可粉8.167份、综合果蔬粉1.667份、马铃薯提取物0.5份、食用香精1.333份、复合维生素0.2份,维生素C 0.4份,复合矿物质1.5份,黄原胶0.833份和三氯蔗糖0.067份。
一种所述的含有马铃薯提取物的固体饮料的制备方法,包括如下步骤:
(1)按重量份称取洁净的酶解燕麦粉,大豆分离蛋白粉,结晶果糖,MCT粉,抗性糊精,可可粉,综合果蔬粉,马铃薯提取物,食用香精,复合维生素,维生素C,复合矿物质,黄原胶和三氯蔗糖;
(2)将称取好的原料过80目筛;
(3)将过筛后的各原料按重量份从少到多的顺序进行混合均匀;
(4)将混合后的物料进行分装,每袋30g;
(5)将封装好的每袋产品进行包装、检验,即得到所需的固体饮料。
实施例3
一种含有马铃薯提取物的固体饮料,包括如下重量份原料:
酶解燕麦粉27.666份,大豆分离蛋白粉25.666份,结晶果糖12.333份,MCT粉11.333份,抗性糊精8.333份、可可粉8.167份、综合果蔬粉1.667份、马铃薯提取物1.0份、食用香精0.833份、复合维生素0.2份,维生素C 0.4份,复合矿物质1.5份,黄原胶0.833份和三氯蔗糖0.067份。
一种所述的含有马铃薯提取物的固体饮料的制备方法,包括如下步骤:
(1)按重量份称取洁净的酶解燕麦粉,大豆分离蛋白粉,结晶果糖,MCT粉,抗性糊精,可可粉,综合果蔬粉,马铃薯提取物,食用香精,复合维生素,维生素C,复合矿物质,黄原胶和三氯蔗糖;
(2)将称取好的原料过80目筛;
(3)将过筛后的各原料按重量份从少到多的顺序进行混合均匀;
(4)将混合后的物料进行分装,每袋30g;
(5)将封装好的每袋产品进行包装、检验,即得到所需的固体饮料。
本发明的固体饮料的原料中:大豆分离蛋白粉为一种含有90%蛋白质的非转基因大豆蛋白,作为蛋白质的主要来源,是人体一切细胞、组织的重要成分;MCT粉为含有70%脂肪的中链甘油三酯微囊粉,作为脂肪的主要来源,具有吸收快,代谢快,提供能量并能够提高其他营养素吸收的作用,如矿物质、必须脂肪酸;结晶果糖是一种单糖,能够快速给人体提供能量;抗性糊精是一种水溶性膳食纤维,可通过结肠发酵表现出益生元作用,维护肠道菌群平衡,具有促进胃肠蠕动、防止便秘的作用;马铃薯提取物是一种含有蛋白酶抑制剂II(PI2)的食品原料,具有增强饱腹感的作用;复合维生素为GB14880食品营养强化剂使用标准中所列的多种维生素的复合物,是维持身体健康所必须的一类调节物质,在物质代谢中起重要作用;维生素C是人体必须从食物中摄取的一种维生素,具有提高免疫力的作用;复合矿物质为GB14880食品营养强化剂使用标准中所列的多种维生素的复合物,是构成机体组织的重要原料,也是维持机体酸碱平衡和正常渗透压的必要条件;本发明的固体饮料中蛋白质、脂肪、碳水化合物符合《中国营养科学全书》的建议:饮食所供能量的比例以碳水化合物40~55%,蛋白质20%~30%,脂肪25~30%。
对人体增强饱腹感的实验:
随机选取健康测试者30人,随机分成3组,其中测试者BMI在18.5~23.9,其他条件没有明显差异,无严重心、肝、肾等病症。
正常饮食推荐此固体饮料需要适量搭配少量的食物使用;出于对产品的饱腹感的验证,此次建议测试者晚餐时(约下午五点)不食用除了本发明的固体饮料之外的其他食物,用温水冲调,搅拌均匀后食用。
检测结果如下表:
三组测试者的饱腹感时间
由上表所示的实验结果表明,随着固体饮料中马铃薯提取物用量的增加,测试者食用本发明中的固体饮料后,饱腹感逐渐增强,食用实施例1的测试者饱腹感时间平均能够达到1小时;食用实施例2的测试者饱腹感时间平均能够达到2.5小时,食用实施例3的测试者饱腹感平均能够达到3.5小时。食用3种固体饮料后,测试者的胃肠道均舒适,身体均状态良好,没有发现不良副作用。
本发明的固体饮料营养全面,具有明显的增强饱腹感的作用;蛋白质、脂肪、膳食纤维、碳水化合物、维生素、矿物质,营养全面、均衡;添加了一定量的马铃薯提取物,可以增强饱腹感;根据理论值计算,每袋本产品所提供能量满足TCNSS002《代餐食品团体标准》中对部分代餐食品要求,在80kcal~200kcal;由于TCNSS002《代餐食品团体标准》中对代餐食品每餐总热量要求在200kcal~400kcal,所以建议本产品可搭配少量食物,代替三餐中的一餐或者两餐,可以达到体重管理的目的。

1.一种含有马铃薯提取物的固体饮料,其特征在于:包括如下重量份原料:
酶解燕麦粉10~50份,大豆分离蛋白粉10~50份,结晶果糖5~30份,MCT粉5~30份,抗性糊精5~20份,可可粉5~20份,综合果蔬粉0~5份,马铃薯提取物0~5份,食用香精0~5份,复合维生素0~2份,维生素C 0~2份,复合矿物质0~2份,黄原胶0~2份和三氯蔗糖0~1份。
2.根据权利要求1所述的含有马铃薯提取物的固体饮料,其特征在于:所述食用香精为巧克力口味。
3.根据权利要求1所述的含有马铃薯提取物的固体饮料,其特征在于:所述大豆分离蛋白粉为含有90%蛋白质的非转基因大豆蛋白。
4.根据权利要求1所述的含有马铃薯提取物的固体饮料,其特征在于:所述MCT粉为含有70%脂肪的中链甘油三酯微囊粉。
5.根据权利要求1所述的含有马铃薯提取物的固体饮料,其特征在于:所述综合果蔬粉为含多种果蔬粉的复合物;
所述综合果蔬粉各组份含量为:葡萄粉20~30%、蔓越莓粉15~25%、西柚粉10~20%、菠萝粉5~15%、桔子粉0~10%、胡萝卜粉0~10%、橙粉0~10%、樱桃粉0~10%、猕猴桃粉0~10%和柠檬粉0~10%,其中各组份总含量为100%。
