Abstract
本发明涉及一种有助于控制体重的组合物及其制备方法,所述组合物包括以下组分:酶解燕麦粉400‑500份、乳及其制品100‑300份、植物脂肪粉50‑150份、中链甘油三酯粉末10‑30份、大豆蛋白10‑90份、果蔬粉5‑30份、抗性糊精35‑105份、燕麦麸粉10‑100份、魔芋粉10‑100份、白芸豆提取物5‑60份、胶原蛋白肽5‑60份、纤维提取物3‑30份、竹笋纤维5‑50份、海藻糖5‑15份、大米蛋白5‑50份、维生素和矿物质2‑20份。本发明方法制备的组合物营养全面,减肥效果更好,有效地控制了体重。

技术领域
本发明属于食品领域,具体涉及一种有助于控制体重的组合物及其制备方法。
背景技术
目前,随着社会的发展,中国的肥胖人口迅速增加,肥胖已经成为中国公共健康的重要问题之一。对于国人来讲,减肥、控制体重应提高重视,同时随着生活质量的不断提高,营养与健康视为零食选购的重要考量,全天然、添加营养物质、高蛋白、低卡路里被认为是健康零食的主要特质。但是目前大部分代餐食品应用的大米蛋白提取率相对较低,并且营养不够全面,减肥效果不佳。
发明内容
本发明针对现有技术的不足,提出了一种有助于控制体重的组合物及其制备方法,本发明研究发现经过浸提、分离、超滤、干燥等工艺制备得到的大米蛋白和将经过粉碎、酶解、过滤、预磨、碾压、过筛等工艺制备得到的竹笋纤维,是两种新的对控制体重,控制碳水化合物在体内的降解和转化,控制餐后血糖水平上升,维护肠道健康等有一定效果的新原料,其与其他原料按照一定的比例混合所得到的组合物是一种新的有助于控制体重的食品,而通过本方法得到此组合物是本研究的目的所在,可以全面补充所需营养,有效控制体重。
为至少解决上述技术问题之一,本发明采取的技术方案为:
一种有助于控制体重的组合物,所述组合物包括以下组分:酶解燕麦粉400-500份、乳及其制品100-300份、植物脂肪粉50-150份、中链甘油三酯粉末10-30份、大豆蛋白10-90份、果蔬粉5-30份、抗性糊精35-105份、燕麦麸粉10-100份、魔芋粉10-100份、白芸豆提取物5-60份、胶原蛋白肽5-60份、纤维提取物3-30份、竹笋纤维5-50份、海藻糖5-15份、大米蛋白5-50份、维生素和矿物质2-20份。
进一步的,所述乳及其制品的来源包括:全脂乳粉、脱脂乳粉、乳清蛋白粉、水解乳清蛋白粉、分离乳清蛋白粉和脱盐乳清粉的一种或多种组合。
进一步的,所述果蔬粉的来源包括:苹果、香蕉、桔子、橙子、梨、菠萝、番茄、胡萝卜、猕猴桃、南瓜、树莓、杏、草莓、白葡萄、花椰菜、番石榴、芒果、甜瓜、莫利洛黑樱桃、西番莲、桃子、李子、菠菜、绿豌豆、甘蓝、蘑菇、柠檬和红甜菜的一种或多种组合。
进一步的,所述纤维提取物的来源包括:小麦纤维、苹果纤维和燕麦纤维的一种或多种组合。

在本发明的另一方面,提出了一种根据所述的组合物的制备方法,包括以下步骤:
将大米经过浸提、分离、超滤、干燥制备得到大米蛋白;
将竹笋经过粉碎、酶解、过滤、预磨、碾压、过筛制备得到竹笋纤维;
将制备得到的大米蛋白和竹笋纤维与酶解燕麦粉、乳及其制品、植物脂肪粉、中链甘油三酯粉末、大豆蛋白、果蔬粉、抗性糊精、燕麦麸粉、魔芋粉、白芸豆提取物、胶原蛋白肽、纤维提取物、海藻糖、维生素和矿物质按照一定的比例进行杀菌、预混、混合和金属检测,制得所述组合物。通过此方法制备的组合物能有效控制体重,控制碳水化合物在体内的降解和转化,控制餐后血糖水平上升,维护肠道健康。
本发明的有益效果至少包括:
(1)本发明选择大豆蛋白与乳蛋白有效结合,通过完全蛋白补充人体生长所必需的各种氨基酸;
(2)本发明选择富含亚油酸、α-亚麻酸植物脂肪粉以及富含中链甘油三酯的中链甘油三酯粉末,即满足人体对必需脂肪酸的需求,同时中链甘油三酯能够快速产生能量,而不会造成脂肪的堆积;
(3)本发明选择白芸豆提取物和抗性糊精、酶解燕麦粉,其分别含有高效的α-淀粉酶抑制剂和膳食纤维,能有效地抑制摄入的淀粉在体内的分解,降低餐后血糖水平,维持胰岛素敏感性,并可以有效控制体重;
(4)本发明选择多种膳食纤维,如:燕麦麸粉、小麦纤维、燕麦纤维、苹果纤维等,其能量远低于碳水化合物,一方面可以显著减少能量的摄入,另一方面可有效调节糖脂代谢,降低胃、肠道对脂类的吸收;
(5)本发明选择竹笋纤维,作为一种新的可用于减肥的食品原料,能够强化肠道的蠕动,防止便秘,应用于产品中尚属首例;
(6)本发明选择大米蛋白,作为一种新的低过敏、易消化,降低胆固醇等作用的食品原料,应用于产品中尚属首例;
(7)本发明的产品中含有完全蛋白质、必需脂肪酸、碳水化合物、膳食纤维、维生素以及矿物质等人体必需的物质,能够满足人体日常大部分需求,结合抑制碳水化合物的分解、不形成脂肪堆积,促进肠道蠕动等手段,能够在保证人体营养与健康的情况下,控制体重的增加,此中组合尚属首例;
(8)本发明制备的组合物应用于乳制品、谷物食品、饮料、保健食品和特殊医学用途配方食品的制备。
