Abstract
本发明属于食品技术领域,公开一种改善肥胖体质的组合物、食品及其制备方法和应用。该组合物包括以下组分:茯苓、山药、山楂、青稞、燕麦、黑豆、鹰嘴豆、白芸豆、茶多酚、聚葡萄糖、麦麸、紫苏籽油、胶原蛋白肽和大豆分离蛋白。通过茯苓、山药、山楂、青稞、燕麦、黑豆、鹰嘴豆、白芸豆、茶多酚、聚葡萄糖、麦麸、紫苏籽油、胶原蛋白肽以及大豆分离蛋白的相互作用,使得该组合物具有减重减脂、改善血糖和肠道功能、安全无毒、适合长期食用、制备方法简单、易于产业化实现等优点。

技术领域
本发明属于食品技术领域,具体涉及一种改善肥胖体质的组合物、食品及其制备方法和 应用。
背景技术
安全健康的减肥方法和技术是全世界都十分关注的问题。细究造成很多人肥胖的原因, 主要在于生活习惯的改变,压力大增,饮食精致化、高纤维摄取比重减少、油脂增加、口味 变重等,都造成了肥胖的产生。若不注意科学减肥,除达不到减肥效果外,还会对身体健康 造成损害。
传统中医理论认为肥胖是痰湿内蕴,由于肺、脾、肾、肝胆等脏腑功能失调,以及嗜食 高粱厚味,久卧久坐、外感湿邪等内外因的相互影响所致,即以脾虚、肾虚、肝气郁滞为本, 痰、热、湿、血淤、膏脂为标,为“本虚标实”之症。因此,临床治疗应先从脾胃着手,兼 调肝、肾,遵循补其不足(补法)、泻其有余(泻法)和活血祛瘀的原则,标本兼治,以达到健脾化痰、升清降浊、疏肝理肺、活血祛瘀的效果。中医药体质理论认为,中医体质在疾病的发生、发展、转归等方面具有决定性作用,影响人体的疾病易感性。中医对肥胖的认识最早记载于《黄帝内经》,认为肥胖与体质有关,不同体质的人发生肥胖的几率不同。
因此,如何提供一种能改善肥胖体质的组合物,正成为研究者们共同关心的研究课题。
发明内容
本发明旨在至少解决上述现有技术中存在的技术问题之一。为此,本发明实施例提供一 种改善肥胖体质的组合物及其制备方法和应用,以改善以上存在的问题。
本发明实施例的第一方面提供一种组合物,所述组合物包括以下组分:茯苓、山药、山 楂、青稞、燕麦、黑豆、鹰嘴豆、白芸豆、茶多酚、聚葡萄糖、麦麸、紫苏籽油、胶原蛋白肽和大豆分离蛋白。
所述山楂、茯苓、山药,为α-葡萄糖苷酶抑制剂,能抑制碳水化合物的晓华,减少基体 对糖分的摄取。
所述青稞是一种膳食纤维补充剂,营养成分丰富,是改善人们膳食结构和发展养殖业的 重要原料。其营养价值比水稻、玉米和一般的小麦粉高,青稞的蛋白质含量较高,最高可达 到14.81%。
所述黑豆,含有较丰富的铬元素,能提高机体对胰岛素的敏感性,还含有花青素,能清 除人体内的自由基,保护胰岛细胞不受损害,维持正常的胰岛素分泌功能。
所述白芸豆,被大量应用于淀粉阻断剂、抗糖丸、阻糖片中,满足消费者吃而不胖的生 活需求。其含有的α-淀粉酶抑制剂成分,能控制淀粉转化成卡路里以及控制血糖、血脂的作 用。
所述茶多酚,CAS号:S4650-60-2,是茶叶中多酚类物质的总称;具有消炎、抑菌、抗龋护齿、降低血脂、降血压、降血糖、抗衰老、防癌抗癌等功能;其主要成分为黄烷醇类、 花色苷类、黄酮类、黄酮醇类和酚酸类。
所述聚葡萄糖,又称为水溶性膳食纤维,具有调节脂类代谢、降低胆固醇、降低糖类吸 收、预防便秘,排毒养颜等功效。
所述麦麸为小麦磨取面粉后晒下的种皮,富含膳食纤维、维生素和矿物质,摄入人体后 其可溶性纤维吸水膨胀,从而产生饱腹感,使得体内所摄入的总能量大大减少,可减轻肥胖 人群和糖尿病人群挨饿的难受心理;
所述紫苏籽油具有明确的降血脂作用;可通过增加超氧化物歧化酶(SOD)活性的方式 来增强歧化作用来消除体内自由基,从而降低过氧化脂质丙二醛(MDA)的浓度以达到抗衰 老的作用,改善气色。
所述胶原蛋白肽为胶原或明胶经蛋白酶降解处理后所制成的,分子量在3000道尔顿的胶 原蛋白肽可促进骨的形成,提高骨强度,预防骨质疏松症;可改善皮肤问题,延缓衰老有非 常好的功效;
所述大豆分离蛋白可补充蛋白质含量,保证产品的营养价值。

相对于现有技术,本发明的有益效果如下:
(1)本发明所提供的组合物通过茯苓、山药、山楂、青稞、燕麦、黑豆、鹰嘴豆、白芸豆、茶多酚、聚葡萄糖、麦麸、紫苏籽油、胶原蛋白肽以及大豆分离蛋白的相互作用,使得 组合物具有减重减脂、改善血糖和肠道功能的功效,实现减脂减重效果的同时保持较好的精神状态;
(2)本发明所提供的组合物的组分来源安全、无毒,适合长期食用;
(3)本发明所提供的组合物的制备方法简单、易于产业化实现。

实施例1
本实施例提供一种改善肥胖体质的组合物,包括以下组分:8g的茯苓,11g的山药,0.8g 的山楂果提取物,8g的青稞粉,6g的燕麦粉,6g的黑豆粉,5g的鹰嘴豆粉,0.6g的白芸豆 提取物,0.3g的茶多酚,4g的聚葡萄糖,8g的麦麸,0.6g的鳕鱼胶原蛋白肽,8g的大豆分离蛋白,0.9g的紫苏籽油微囊粉以及适量的麦芽糖醇。
本实施例还提供了该组合物的制备方法为:将茯苓和山药粉碎成粗颗粒后与其余的原料 进行混合,搅拌均匀,得组合物。
实施例2
本实施例提供一种改善肥胖体质的组合物,包括以下组分:8g的茯苓,8g的山药,1g 的山楂果提取物,5g的青稞粉,5g的燕麦粉,5g的黑豆粉,6g的鹰嘴豆粉,1.5g的白芸豆提取物,1.2g的茶多酚,10g的聚葡萄糖,8g的麦麸,1.5g的鳕鱼胶原蛋白肽,12g的大豆 分离蛋白,0.6g的西兰花,0.6g的冻干蓝莓粒,4g的杏仁碎,3g的紫苏籽油微囊粉以及适量 的麦芽糖醇。
该组合物的制备方法包括以下步骤:
(1)将茯苓和山药粉碎成粗颗粒后与其余的原料(除西兰花粒、蓝莓粒、麦芽糖醇)进 行混合至均匀;
(2)将溶解后的麦芽糖醇与上述步骤得到的混合物进行混合,制粒,干燥,得10目的 混合颗粒;干燥温度为80℃。
(3)将西兰花粒、蓝莓粒与上述步骤得到的混合颗粒进行混合,搅拌均匀,得组合物。
实施例3
本实施例提供一种改善肥胖体质的组合物,包括以下组分:5g的茯苓,10g的山药,0.5g 的山楂果提取物,5g的青稞粉,5g的燕麦粉,3g的黑豆粉,3g的鹰嘴豆粉,1g的白芸豆提 取物,1g的鳕鱼胶原蛋白肽,0.9g的茶多酚,10g的大豆分离蛋白,5g的聚葡萄糖,3g的麦麸,0.5g的西兰花,0.5g的冻干蓝莓粒,2g的杏仁碎,2g的紫苏籽油微囊粉(50%),3g 的脱脂乳粉,适量的麦芽糖醇。
该组合物的制备方法包括以下步骤:
(1)将茯苓和山药粉碎成粗颗粒后与其余的原料(除西兰花粒、蓝莓粒、麦芽糖醇)进 行混合,搅拌均匀;
(2)将溶解后的麦芽糖醇与上述步骤所制得的混合物进行混合,制粒,干燥,得10目 的混合颗粒;其中干燥温度为80℃。
(3)将西兰花粒、蓝莓粒与上述步骤所制得的混合颗粒进行混合,搅拌均匀,得组合物。
对照例1
本对照例提供一种组合物,包括以下组分:8g的茯苓、11g的山药、8g的山楂果提取物、8g的青稞粉、6g的燕麦粉、6g的黑豆粉、5g的鹰嘴豆粉、0.6g的白芸豆提取物、0.3g 的茶多酚、4g的聚葡萄糖、8g的麦麸。
该组合物的制备方法包括以下步骤:将茯苓和山药粉碎成粗颗粒后与其余的原料进行混 合至均匀,得代餐组合物。
产品效果测试
一、减重效果测试
选取健康志愿者BMI为18.5-24.0kg/m2,年龄22-28岁的30名女性为研究对象;受试者 均无代谢性疾病和其他病史,试验期间避免剧烈运动、熬夜的不良生活行为,按时休息。
试验分为3组(分别为对照组、实验1组、实验2组),每组10人,一日三餐;对照组,正常饮食;实验1组用对照例1所提供的组合物替代正常饮食;实验2组用实施例1所提供 的组合物替代正常饮食。
试验周期:30天。试验结束后收集各组别的体重信息与受试者的自身体验感反馈信息。 各受试者的体重影响如表1所示。
依据受试者提供的自身体验,采用本实施例提供的组合物替代正常饮食,不影响受试者 的正常营养需求,还有助于提高受试者的精神,气色更佳。
依据表1,正常饮食的对照组在测试期间,体重增加了0.2kg,实验1组体重减少了4.4kg, 实验2组体重减少了5.4kg,因此,本实施例1和对照例所提供的组合物,有助于减轻测试者 的体重。

二、饱腹感试验
随机选取健康受试者30人,随机分为3组(对照组、实验1组、实验2组),每组10 人,对照组:给予市售营养代餐奶昔(有乐岛);实验1组:给予对照例1提供的组合物; 实验2组:给予实施例3提供的组合物;
记录各受试者在空腹(0min)、摄食后30、60、90、120、180、240min后的饱腹感程度。饱腹感程度分为0-10分,0分为空腹状态,10分为非常饱状态。9-10分为非常饱、7-8分为 比较饱、5-6分为有一点饱、3-4分为不是很饱、0-2分为根本不饱。
收集各组的饱腹感程度数据,并进行评分统计,统计结果列于表2。

依据表2,对照组、试验1组以及实验2组在尝试对应产品后,均可维持饱腹时间4h;与对照组相比,实验1组与2组在各时间点下均表现出更强的饱腹感,实验1组与实验2组 无显著性差别。
三、冲泡试验
取相同重量的对照例1、实施例1-3所提供的组合物,分别用等量等温度的开水冲泡,采 用相同的搅拌棒顺时针10次,观察并记录冲泡3分钟后的状态和口感测试。测试结果列于表 3。

依据表3,本发明实施例1-3以及对照例1所制作的代餐组合物均能在水中快速 分散形成糊状,尤其以实施例2、3的冲泡状态更佳,表明制备工艺对冲泡效果具有 影响,经制粒工艺制备的组合物可避免出现冲泡时粉末浮于表面成团或结块,令冲泡 后的粉糊更为细腻。
上述实施例为本发明较佳的实施方式,但本发明的实施方式并不受上述实施例的限制, 其他的任何未背离本发明的实质与原理下所做的改变、修饰、替代、组合、简化,均应为等 效的置换方法,都包含在本发明的保护范围之内。

1.一种组合物,其特征在于,包括以下组分:茯苓、山药、山楂、青稞、燕麦、黑豆、鹰嘴豆、白芸豆、茶多酚、聚葡萄糖、麦麸、紫苏籽油、胶原蛋白肽和大豆分离蛋白。
2.根据权利要求1所述的组合物,其特征在于,所述紫苏籽油为紫苏籽油微囊粉;所述山楂为山楂果提取物;所述青稞为青稞粉;所述燕麦为燕麦粉;所述黑豆为黑豆粉;所述鹰嘴豆为鹰嘴豆粉;所述白芸豆为白芸豆提取物;所述胶原蛋白肽为鳕鱼胶原蛋白肽。

5.根据权利要求1所述的组合物,其特征在于,按重量份数计,包括以下组分:5-10份的茯苓、10-15份的山药、0.5-1.5份的山楂、5-10份的青稞、5-10份的燕麦、2-8份的黑豆、2-8份的鹰嘴豆、0.5-2份的白芸豆、0.3-1.5份的茶多酚、3-10份的聚葡萄糖、1-8份的麦麸、0.5-3份的紫苏籽油、0.5-2份的胶原蛋白肽和6-15份的大豆分离蛋白。
6.根据权利要求5所述的组合物,其特征在于,按重量份数计,还包括以下组分:0.2-0.8份的西兰花、0.2-0.8份的蓝莓、1-4份的杏仁或1.5-5份的脱脂乳粉中至少一种。
7.根据权利要求1所述的组合物,其特征在于,所述组合物的剂型为粉剂、固体饮料制剂、液体饮料制剂或营养棒中至少一种。
8.权利要求1-7中任一项所述的组合物的制备方法,其特征在于,包括以下步骤:
将所述组分混合,得所述组合物。
9.一种食品,其特征在于,包括如权利要求1-7中任一项所述的组合物。
10.权利要求1-7中任一项所述的组合物在制备改善肥胖体质的产品中的应用。
