本发明涉及食品技术领域,具体的涉及一种多功能富硒营养食品及其制备方法。
背景技术
随着社会经济的发展,人们的饮食结构越来越偏向精米白面等细粮,粗粮的摄入比重越来越少,然而,只吃细粮容易造成一些负面效果,细粮中含有大量可被人吸收的淀粉,而淀粉与白糖、红糖、巧克力一样,是高热量食物,容易提高心脑血管疾病、糖尿病的发病率,导致肥胖。并且细粮会大量消耗人体中的钙,因为细粮主要的成分是淀粉,而淀粉为酸性食物,它会中和体内的碱性成分,体内缺钙会影响骨骼发育以及导致骨质疏松。细粮吃多了也容易使人患上动脉粥样硬化、心肌埂塞、脑血栓等疾病,且无法为人体提供足够的营养。
平卧菊三七俗称救心菜、养心菜,是中国农科院利用传统稀有野菜费菜与景天三七杂交而成的保健特菜,每100克食用部分含蛋白质2.1克、脂肪0.7克、粗纤维1.5克、胡萝卜素2.8毫克、维生素B20.31毫克、维生素B10.05毫克、维生素C95毫克、钙315毫克、磷39毫克、铁3.2毫克,其营养是一般蔬菜无法比拟的。根据国家医药管理局编《中华本草》、《现代中药临床手册》、《中草药大辞典》等资料记载,救心菜含有多种药用成分,如:景天甘、谷甾酸齐墩果酸、丙酮、黄酮、多种氨基酸及维生素,其性平味甘、具有活血化瘀、养心平肝、安神补血、清热解毒之功效,是民间常用广谱青草药,原植物也是抗肿瘤中草药之一。
据《本草纲目》和《中华人民共和国药典》记载,葛根是药食同源的植物黄金,含12%的黄酮类化合物,如葛根素、大豆黄酮苷、花生素等营养成分,还有蛋白质、氨基酸、糖、和人体必需的铁、钙、铜、硒等矿物质,含有高达人体必须的氨基酸13种,核桃是一种很营养的果实,可以把它算作水果一类,它可以保护心脏机能,所以是很多老年人喜欢吃的。其实核桃的好处有很多,并不仅仅限于老年人吃,青年、中年人吃了一样有很多的好处。性能味甘,性温。入肺、肝、肾三经,能补肾助阳,补肺敛肺,润肠通便。参考含丰富的脂肪油、多量蛋白质、钙、磷、铁、胡萝卜素,维生素B1、B2,糖类、烟酸等成分。
因此提供一种含有平卧菊三七等多重营养物质的多营养多功能富硒食品及其制备方法是本领域技术人员亟需解决的技术问题。

有鉴于此,本发明提供了一种包含多种营养物质的多功能富硒营养食品;
为了实现上述目的,本发明采用如下技术方案:
多功能富硒营养食品包括以下重量份原料,葛根1-35份、平卧菊三七0.5-33份、玛卡1-26份、藜麦0.5-40份、荞麦1-30份、玉米1-35份、黑芝麻1-45份、核桃1-40份、食品添加剂1-5份。
优选的,上述多功能富硒营养食品,包括以下重量份原料,葛根5-25份、平卧菊三七8-23份、玛卡5-20份、藜麦10-25份、荞麦15-25份、玉米10-20份、黑芝麻10-30份、核桃15-30份、食品添加剂2-4份。
更优选的,上述多功能富硒营养食品,包括以下重量份原料,葛根15份、平卧菊三七18份、玛卡12份、藜麦20份、荞麦22份、玉米16份、黑芝麻28份、核桃18份、食品添加剂3份。
本发明的有益效果在于:本发明采用的葛根的具有以下作用:1.提高肝细胞的再生能力,恢复正常肝脏机能,促进胆汁分泌,防止脂肪在肝脏堆积。2.促进新陈代谢,加强肝脏解毒功能,防止酒精对肝脏的损伤。3.对高血脂形成的冠状动脉硬化,通过改善心肌缺血状态,防治冠心病、心绞痛、心肌梗塞等心血管疾病。4.对高血脂形成的脑动脉硬化,通过改善脑缺血状态,防治脑梗塞、偏瘫、血管性痴呆等脑血管疾病。5.强化肝胆细胞自身免疫功能,抵抗病毒入侵。6.降血糖,具有延缓衰老、调节血脂血糖、促进造血功能等方面的作用,并应用于临床。
本发明采用的玛卡是一种纯天然食品,营养成份丰富。玛卡干根中的玛卡化学组成成份为:蛋白质含量为10%以上,59%的碳水化合物;8.5%的纤维,内含丰富的锌、钙、铁、钛、铷、钾、钠、铜、锰、镁、锶、磷、碘等矿物质,并含有维生素C、B1、B2、B6、A、E、B12、B5,脂肪含量不高但其中多为不饱和脂肪酸,亚油酸和亚麻酸的含量达53%以上,天然活性成份包括生物碱、芥子油苷及其分解产物异硫氰酸苄酯、甾醇、多酚类物质等。玛卡富含高单位营养素,对人体有滋补强身的功用,食用过的人会有体力充沛、精神旺盛不会疲劳的感觉。
本发明中的黑芝麻含有的多种人体必需氨基酸,在维生素E和维生素B1的作用参与下,能加速人体的代谢功能;黑芝麻含有的铁和维生素E是预防贫血、活化脑细胞、消除血管胆固醇的重要成分;黑芝麻含有的脂肪大多为不饱和脂肪酸,有延年益寿的作用。
中医认为,黑芝麻具有补肝肾、润五脏、益气力、长肌肉、填脑髓的作用,可用于治疗肝肾精血不足所致的眩晕、须发早白、脱发、腰膝酸软、四肢乏力、步履艰难、五脏虚损、皮燥发枯、肠燥便秘等病症,在乌发养颜方面的功效,更是有口皆碑。
本发明中的核桃中86%的脂肪是不饱和脂肪酸,核桃富含铜、镁、钾、维生素B6、叶酸和维生素B1,也含有纤维、磷、烟酸、铁、维生素B2和泛酸。每50克核桃中,水分占3.6%,另含蛋白质7.2克、脂肪31克和碳水化合物9.2克。胡桃仁含粗蛋白22.18%,其中可溶性蛋白的组成以谷氨酸为主,其次为精氨酸和核桃仁天冬氨酸。粗脂类64.23%,其中中性脂类占93.05%;中性脂类中三酰甘油82.05%,甾醇脂3.86%,游离脂肪酸4.80%.总脂和中性脂类中脂肪酸组成主要为亚酸64.48%-69.95%和油酸13.89%-15.36%;三酰甘油所含脂肪酸主要为亚麻酸69.98;甾醇酯非皂化部分主要为β-谷甾醇,并有少量的菜油甾醇,豆甾醇,燕麦甾-5-烯醇,豆甾-7-稀醇;糖类13%;多种游离的必需氨基酸;异亮氨酸,亮氨酸,色氨酸,苯丙氨酸,缬氨酸,苏氨酸及赖氨酸等,其含量为总氨基酸的47.50%。果实含1,4-萘醌,胡桃叶醌,4-羟基-1-萘基-β-D-吡喃葡萄糖甙,4,8-二羟基-1-萘基-β-D-吡喃葡萄糖甙,钾、钙、铁、锰、锌、铜、锶等多种微量元素,未成熟果实富含维生素C。果皮含水杨酸,对-羟基苯甲酸,香草酸,龙胆酸,对-羟基苯基酸,没食子酸,对-香豆酸,阿魏酸,咖啡酸,芥子酸,原儿茶酸,丁香酸,和绿原酸。
上述各原料混合作用能够为人体提供多种必须营养物质,改善人体,增强免疫力。
进一步,上述藜麦为富硒藜麦,上述荞麦为富硒荞麦,上述玉米为富硒玉米。
采用上述进一步的有益效果在于:采用富硒藜麦:藜麦被称为“粮食之母”、“素食之王”、“太空食品”,是全营养、完全蛋白碱性食物,胚乳占种子的68%,且具有营养活性,蛋白质含量高达16%-22%(牛肉20%),品质与奶粉及肉类相当,富含多种氨基酸,其中有人体必需的全部9种必需氨基酸。低脂低糖低热量,丰富膳食纤维,婴幼儿、孕产妇、健身人群、三高人群、中老年人,都可食用。
采用富硒荞麦:中医认为,荞麦性味甘平。有健脾益气、开胃宽肠、消食化滞的作用。它作为一种治疗、预防糖尿病和高血压的疗效食品,愈来愈被人们重视。荞麦蛋白质中含有丰富的赖氨酸成分,铁、锰、锌等微量元素比一般谷物丰富,而且含有丰富膳食纤维,是一般精制大米的10倍。所以荞麦具有很好的营养保健作用。荞麦含有丰富的维生素E和可溶性膳食纤维,同时还含有烟酸和芦丁(芸香甙),芦丁有降低人体血脂和胆固醇、软化血管、保护势力和预防脑血管的作用。它含有烟酸成分能促进机体的新陈代谢,增强解毒能力,还具有扩张小血管和降低血液胆固醇的作用。荞麦含有丰富的镁,能促进人体纤维蛋白溶解,使血管扩张,抑制凝血块的形成,具有抗栓塞的作用,也有利于降低血清胆固醇。荞麦中的某些黄酮成分还具有抗菌、消炎、止咳平喘、祛痰的作用。因此,荞麦还有“消淡粮食”的美称。另外这些成分还具有降低血糖的功效。

本发明还提供了上述多功能富硒营养食品的制备方法,包括以下步骤:
(1)按上述重量份数称取各原料;
(2)将平卧菊三七研磨成200目-1000目的细粉,并将葛根,玛卡,藜麦,荞麦,玉米,黑芝麻研磨成80目-200目的细粉,然后将核桃在-10℃至60℃下冷却粉碎,制成80目-200目的细粉;
(3)将减速机调至120℃,并在6600r/min的转速下将葛根粉、玛卡粉、藜麦粉、荞麦粉、玉米粉放入减速机中进行混合,然后在1500r/min的转速进行100-130℃熟化,得到熟粉;
(4)减速机调至90℃,并在1500r/min的转速下将平卧菊三七粉放入减速机中进行100-130℃熟化,得到熟粉;
(5)将熟粉、核桃粉和食品添加剂进行混合并按照搅拌均匀,装入封闭的不锈钢容器罐内,放置12-24h冷却后,既得多功能营养食品。
进一步,上述减速机的型号为ZLYZ1609-1-1,传动比例为9。
进一步,上述步骤(2)中低温条件为-10-60℃。
进一步,上述步骤(5)中搅拌速率为15-40r/min,搅拌时间为30-60min。
更进一步,上述步骤(5)中放置条件为封闭容器罐内,冷却时间为24h;
上述容器罐优选为不锈钢圆柱形容器罐。

(1)称取葛根35kg、平卧菊三七0.5kg、玛卡26kg、富硒藜麦0.5kg、富硒荞麦1kg、富硒玉米35kg、黑芝麻1kg、核桃40kg、木糖醇1kg;
(2)将平卧菊三七研磨成200目的细粉,并将葛根,玛卡,富硒藜麦,富硒荞麦,富硒玉米,黑芝麻研磨成200目的细粉,然后将核桃在低温下冷却粉碎,制成200目的细粉;
(3)将减速机调至120℃,并在6600r/min转速下将葛根粉、玛卡粉、富硒藜麦粉、富硒荞麦粉、富硒玉米粉放入减速机中进行混合,然后按照1500r/min的正常转速进行100℃℃熟化,得到熟粉;
(4)减速机调至90℃,并在1500r/min的转速下将平卧菊三七粉放入减速机中进行100℃熟化,得到熟粉;

(2)将平卧菊三七研磨成800目的细粉,并将葛根,玛卡,富硒藜麦,富硒荞麦,富硒玉米,黑芝麻研磨成100目的细粉,然后将核桃在低温下冷却粉碎,制成100目的细粉;
(3)将减速机调至120℃,并在6600r/min转速下将葛根粉、玛卡粉、富硒藜麦粉、富硒荞麦粉、富硒玉米粉放入减速机中进行混合,然后按照1500r/min的正常转速进行110℃熟化,得到熟粉;

(5)将熟粉、核桃粉和食品添加剂进行混合并按照在35r/min转速下,搅拌50min,装入封闭的不锈钢圆柱形容器罐内,放置20h冷却后,既得多功能富硒营养食品。
实施例5
多功能富硒营养食品的制备方法,包括以下步骤:
(1)称取葛根15kg、平卧菊三七18kg、玛卡12kg、富硒藜麦20kg、富硒荞麦22kg、富硒玉米16kg、黑芝麻28kg、核桃18kg、低聚果糖2kg、木糖醇1kg;
(2)将平卧菊三七研磨成300目的细粉,并将葛根,玛卡,富硒藜麦,富硒荞麦,富硒玉米,黑芝麻研磨成200目的细粉,然后将核桃在低温下冷却粉碎,制成80目的细粉;
(3)将减速机调至120℃,并在6600r/min转速下将葛根粉、玛卡粉、富硒藜麦粉、富硒荞麦粉、富硒玉米粉放入减速机中进行混合,然后按照1500r/min的正常转速进行115℃熟化,得到熟粉;
(4)减速机调至90℃,并在1500r/min的转速下将平卧菊三七粉放入减速机中进行115℃熟化,得到熟粉;
(5)将熟粉、核桃粉和食品添加剂进行混合并按照在30r/min转速下,搅拌45min,装入封闭的不锈钢圆柱形容器罐内,放置12h冷却后,既得多功能富硒营养食品。

(1)按权利要求1-5任一项所述重量份数称取各原料;
(2)将平卧菊三七研磨成200目-1000目的细粉,并将葛根,玛卡,藜麦,荞麦,玉米,黑芝麻研磨成80目-200目的细粉,然后将核桃在-10℃至60℃下冷却粉碎,制成80目-200目的细粉;
(3)将减速机调至120℃,并在6600r/min的转速下将葛根粉、玛卡粉、藜麦粉、荞麦粉、玉米粉放入减速机中进行混合,然后在1500r/min的转速进行100-130℃熟化,得到熟粉;
(4)减速机调至90℃,并在1500r/min的转速下将平卧菊三七粉放入减速机中进行100-130℃熟化,得到熟粉;
(5)将熟粉、核桃粉和食品添加剂进行混合并按照搅拌均匀,装入封闭的不锈钢容器罐内,放置冷却后,既得多功能营养食品。
7.根据权利要求6所述一种多功能富硒营养食品的制备方法,其特征在于,步骤(2)中所述低温条件为-10-60℃。
8.根据权利要求6所述一种多功能富硒营养食品的制备方法,其特征在于,步骤(5)中所述搅拌速率为15-40r/min,搅拌时间为30-60min。
