背景技术
随着科技和经济的快速发展,现代生活节奏的加快,食物种类的增多和省时快速的要求,各种各样的小吃成为人们喜爱的食物,然而这样的小吃类快餐不仅卫生上得不到保证,而且营养上也很难丰富全面。这样杂乱和不规律的饮食造成了一系列问题:如胃功能受损、营养失衡、免疫力下降、胃病频发等;这不仅不利于工作,还会给身体带来潜在的危害。
俗话说“胃贵在养”,患有胃病的人,除了药物使用外,饮食治疗也很重要。胃病“三分治七分养”,七分养应该在三分治的基础上进行,经全面检查确诊后进行系统治疗,并配合精神方面进行调养,才能达到理想的治疗效果。否则,一味依赖所谓新药良药而忽略食疗,临床很难取得好的效果。本发明经过长期的实践调配,研究出营养、口感适中的果蔬养胃米粉,将多种粗粮、果蔬、中草药成分以及养胃的植物提取物与胚芽米、小米等的营养结合,提高了米制品的营养价值且达到养胃的效果,从而满足了一般人群或者脾胃较弱者对营养且有养胃保健功效的主食的需求,具有重要意义。

为实现上述目的,本发明采取以下技术方案:一种果蔬养胃米粉,包括以下原料:胚芽米10-15份、小米15-20份、红曲米3-5份、南瓜粉6-8份、羊奶粉3-5份、蛋白粉4-7份、植物提取物10-15份、果胶0.3-0.5份、核桃1-2份、杏仁0.5-1份、鸡内金2-3份、白菜1.5-3份、蔓越莓2-3份、无花果2-4份、紫苏1-2份、茼蒿1.5-3份、党参2-3份、黑枣1.5-3份、银耳1-2份、薏仁1-2份、黄精1.5-3份、铁皮石斛2-3份、蒲公英1-2份、陈皮1-2份、芡实0.5-1.5份、百合干0.5-1份、桂花果0.5-1.5份、婆罗门参1-2份。
所述蛋白粉选自豌豆蛋白粉和乳清蛋白粉中的一种或两种。
所述植物提取物选自山药提取物、螺旋藻提取物、猴头菇提取物、红茶提取物中的一种或几种。
上述果蔬养胃米粉还包括橄榄油1.5-3份。
上述果蔬养胃米粉的制备方法,包括如下步骤:
(1)浸泡:将所述重量份的胚芽米、小米、红曲米洗净后混合均匀,用水浸泡1-2h,浸泡温度为25-35℃,过滤至沥干,待用;
(2)果蔬打成复合汁液:按照配方比例称取白菜、蔓越莓、无花果、紫苏、茼蒿,用清水洗净后,将上述所有果蔬切碎混合置于搅拌机中,加入总果蔬重量的2-3倍量水,然后打成混合汁液,过滤得复合果蔬汁液;其中,搅拌机的搅拌速度为500r/min,搅拌时间为15-20min;
(3)药液制备:按配方比例称取党参、黑枣、银耳、薏仁、黄精、铁皮石斛、蒲公英、陈皮、芡实、百合干、桂花果、婆罗门参混合后,加入上述总药材重量的12-18倍量水,水中浸泡2-4h,加热至95-105℃,大火煮沸后小火继续煎煮2-3h,用4层纱布滤过得药液,加热浓缩至总药材重量的3-5倍,用双层纱布滤过,待用;
(4)磨粉:将核桃、杏仁、鸡内金用粉碎机粉碎,控制在80-200目筛出粉;
(5)制浆:向步骤(1)所得的沥干的胚芽米混合物中加入步骤(2)所得的复合果蔬汁液、步骤(3)所得的药液和适量水磨浆,得米浆;
(6)熟化成型:将步骤(5)所得的米浆和南瓜粉、羊奶粉、蛋白粉、植物提取物、果胶以及步骤(4)所得的混合粉末混合均匀后,再加入橄榄油搅拌均匀,置于蒸粉机的面盘中,控制在110-120℃用蒸汽进行熟化成型;
(7)切条、干燥、包装:成型后按规格进行切条,切条后的米粉经烘干处理后即为果蔬养胃米粉,冷却至室温再包装。
所述步骤(1)中胚芽米混合物浸泡所采用的水量为混合物总重量的5-7倍。
所述步骤(5)中米浆的含水量为38-42%。
所述步骤(7)中烘干温度为45-55℃,烘干时间为4-6h。
胚芽米是保留米的胚芽部分,其他部分则与白米完全相同的一种米。由胚芽米机碾磨水稻生产出来,不同的胚芽米机胚芽米保留胚芽率不同,一般在60%-70%左右。胚芽米真正作到保全糙米营养,并留存新米的鲜香。其富含人体所需的蛋白质、淀粉、B族维生素、矿物质、膳食纤维,以及丰富的钙、铁、锌等微量元素,营养价值极高,具有能排泄体内的有毒物质,辅助其他营养素的吸收,培育对人体有益的细菌,合成维他命,抵制对人体有害的恶菌,解除便秘,减低大肠的内压,降低胆固醇与中性脂肪的血中浓度,预防与改善肥胖,使血糖值正常化,能适当均衡地摄取微量元素等作用。
小米是五谷中养生保健的佳品,又称粟米、粟谷等;味甘、咸,性凉,味甘色黄入脾胃经,味咸入肾经。小米乃五谷之首,既养先天之本-脾胃,又养后天之本-肾脏,成为养生保健之佳品。小米含蛋白质,比大米高。脂肪1.7克,碳水化合物76.1克,都不低于稻、麦。一般粮食中不含有的胡萝卜素,小米每100克含量达0.12毫克,维生素B1的含量位居所有粮食之首。其具有健脾和胃、补益虚损、和中益肾、除热解毒、去皱养颜等功效。
红曲米,中药名,民间称之为红米,以籼稻、粳稻、糯米等稻米为原料,用红曲霉菌发酵而成,为棕红色或紫红色米粒。其味甘,性温,具有健脾消食、活血化淤的功效,主治用于产后恶露不净,瘀滞腹痛,食积饱胀,赤白下痢,跌打损伤。
奶食品有牛奶,马奶,山羊奶等。在欧美国家羊奶被视为乳品中精品,称作“贵族奶”。国际学界誉为“奶中之王”。羊奶是营养最全面丰富的食品之一,含有较牛奶更丰富的钙,蛋白质,氨基酸,维生素,矿物质,无机盐等营养成分。《中国补品》载:“山羊奶,功效主滋阴养胃,降火解毒,补肾益精,润肠通便,治干呕反胃,神疲乏力,慢性肾炎,大便干燥秘结,可用于肺结核,急慢性胃炎,食道癌等病症,可治疗口腔炎,某些接触性皮炎等等”。
豌豆蛋白粉是从豌豆中提取出来的蛋白粉,豌豆蛋白粉里面含有优质的蛋白质和人体需要的十八种氨基酸。豌豆蛋白粉的主要作用和功效在于可以补充人体氨基酸并且能够提高人体免疫力;能促进胶原蛋白的合成,起到了美容祛皱的功效;能够调节我们的肠胃起到养生的好处。

山药提取物,气微、味淡。主要有效成分为薯蓣皂甙(Dioscin)及其甙元薯蓣皂素(Diosgenin),还含止杈素(d-AbscisinⅡ)、3,4-二羟基苯乙胺、甘露聚糖(Mannan)、植酸(Phytic acid)、多巴胺(dopamine)、山药碱(batatasine,0.025%)、槭素Ⅱ(abscisingⅡ)、胆甾醇(cholesterol)、麦角甾醇(ergosterol)、菜油甾醇(camps-terol)、β-谷甾醇、尿囊素(allantoin)、山药素Ⅰ(batatasinⅠ)等,具有健脾、补肺、固肾、益精等功效。

茼蒿:又称同蒿、蓬蒿、蒿菜、菊花菜、塘蒿、蒿子杆、蒿子、蓬花菜、桐花菜;味甘、辛,性平,无毒。在中国古代,茼蒿为宫廷佳肴,所以又叫皇帝菜。茼蒿有蒿之清气、菊之甘香。据中国古药书载:茼蒿有“安心气,养脾胃,消痰饮,利肠胃”之功效。
党参:甘,平。为中国常用的传统补益药,具有补中益气,和胃生津,健脾益肺,祛痰止咳之功效。党参有增强免疫力、扩张血管、降压、改善微循环、增强造血功能等作用。此外对化疗放疗引起的白细胞下降有提升作用。

(2)果蔬打成复合汁液:按照配方比例称取白菜、蔓越莓、无花果、紫苏、茼蒿,用清水洗净后,将上述所有果蔬切碎混合置于搅拌机中,加入总果蔬重量的2-3倍量水,然后打成混合汁液,过滤得复合果蔬汁液;其中,搅拌机的搅拌速度为500r/min,搅拌时间为15-20min;
(3)药液制备:按配方比例称取党参、黑枣、银耳、薏仁、黄精、铁皮石斛、蒲公英、陈皮、芡实、百合干、桂花果、婆罗门参混合后,加入上述总药材重量的12-18倍量水,水中浸泡2-4h,加热至95-105℃,大火煮沸后小火继续煎煮2-3h,用4层纱布滤过得药液,加热浓缩至总药材重量的3-5倍,用双层纱布滤过,待用;
(4)磨粉:将核桃、杏仁、鸡内金用粉碎机粉碎,控制在80-200目筛出粉;
(5)制浆:向步骤(1)所得的沥干的胚芽米混合物中加入步骤(2)所得的复合果蔬汁液、步骤(3)所得的药液和适量水磨浆,得米浆;
(6)熟化成型:将步骤(5)所得的米浆和南瓜粉、羊奶粉、蛋白粉、植物提取物、果胶以及步骤(4)所得的混合粉末混合均匀后,再加入橄榄油搅拌均匀,置于蒸粉机的面盘中,控制在110-120℃用蒸汽进行熟化成型;
(7)切条、干燥、包装:成型后按规格进行切条,切条后的米粉经烘干处理后即为果蔬养胃米粉,冷却至室温再包装。
效果试验:
1、受试者:筛选有胃病发作的志愿者60人,这些志愿者没有其他疾病,此次胃病发病后只用胃药没有进行其他调理,其他饮食习惯和生活习惯良好。
2、试验方法:将志愿者随机等分为三组,分别食用实施例1、2制备出的果蔬养胃米粉以及食用不添加任何养胃成分的普通米粉。
3、评价标准:以胃酸胃痛消化不良症状在1个月内受刺激性食物影响时,胃痛症状减轻为有效,其余为无效。
4、试验结果:如表所示。

由表可知,胃病志愿者在坚持食用实施例1、2所述的果蔬养胃米粉后,胃病症状得到较明显改善,有效率达75%以上。而食用普通米粉的对比组有效率为40%,与实施例所述的果蔬养胃米粉的效果相比,差异较明显。由此可知,本发明制备的果蔬养胃米粉,各原料之间互相促进、相互协同,添加中草药成分和养胃的植物提取物,扶正固本且养胃,是具营养和调理为一体的健康食品;有效提高了调理胃功能的功效。
Claims (8)
1.一种果蔬养胃米粉,其特征在于,包括以下原料:胚芽米10-15份、小米15-20份、红曲米3-5份、南瓜粉6-8份、羊奶粉3-5份、蛋白粉4-7份、植物提取物10-15份、果胶0.3-0.5份、核桃1-2份、杏仁0.5-1份、鸡内金2-3份、白菜1.5-3份、蔓越莓2-3份、无花果2-4份、紫苏1-2份、茼蒿1.5-3份、党参2-3份、黑枣1.5-3份、银耳1-2份、薏仁1-2份、黄精1.5-3份、铁皮石斛2-3份、蒲公英1-2份、陈皮1-2份、芡实0.5-1.5份、百合干0.5-1份、桂花果0.5-1.5份、婆罗门参1-2份。
2.根据权利要求1所述的一种果蔬养胃米粉,其特征在于:所述蛋白粉选自豌豆蛋白粉和乳清蛋白粉中的一种或两种。
3.根据权利要求1所述的一种果蔬养胃米粉,其特征在于:所述植物提取物选自山药提取物、螺旋藻提取物、猴头菇提取物、红茶提取物中的一种或几种。
4.根据权利要求1所述的一种果蔬养胃米粉,其特征在于:还包括橄榄油1.5-3份。
5.权利要求1所述的一种果蔬养胃米粉的制备方法,其特征在于,包括如下步骤:
(1)浸泡:将所述重量份的胚芽米、小米、红曲米洗净后混合均匀,用水浸泡1-2h,浸泡温度为25-35℃,过滤至沥干,待用;
(2)果蔬打成复合汁液:按照配方比例称取白菜、蔓越莓、无花果、紫苏、茼蒿,用清水洗净后,将上述所有果蔬切碎混合置于搅拌机中,加入总果蔬重量的2-3倍量水,然后打成混合汁液,过滤得复合果蔬汁液;其中,搅拌机的搅拌速度为500r/min,搅拌时间为15-20min;

6.根据权利要求5所述的一种果蔬养胃米粉的制备方法,其特征在于:所述步骤(1)中胚芽米混合物浸泡所采用的水量为混合物总重量的5-7倍。
7.根据权利要求5所述的一种果蔬养胃米粉的制备方法,其特征在于:所述步骤(5)中米浆的含水量为38-42%。
8.根据权利要求5所述的一种果蔬养胃米粉的制备方法,其特征在于:所述步骤(7)中烘干温度为45-55℃,烘干时间为4-6h。
